Chicken pot pie is a timeless comfort food that warms the soul with every bite. It brings together tender chunks of chicken, a medley of vegetables, and a rich, creamy sauce, all encased in a flaky, golden pastry crust. Whether you’re making it from scratch or using leftovers, this dish always feels like home.
The beauty of chicken pot pie lies in its simplicity and heartiness. The filling typically features diced chicken breast or thighs, cooked until juicy and tender. Classic vegetables like carrots, peas, celery, and potatoes add color, texture, and that nostalgic flavor profile that makes this dish so beloved. All of it is held together by a smooth, savory sauce made from butter, flour, and broth, often enriched with a splash of cream or milk for added richness.
Once the filling is prepared, it’s spooned into a baking dish or individual ramekins and topped with pastry. The crust is what gives pot pie its signature appeal – buttery, crisp, and golden. A classic pie crust offers a tender, flaky texture, while puff pastry creates a light, airy lid that puffs up dramatically in the oven. Either way, the contrast between the warm, creamy filling and the crisp, golden topping is irresistible.
As it bakes, the aroma of buttery pastry and savory chicken fills the kitchen, drawing everyone to the table. When it comes out of the oven, bubbling at the edges and golden on top, it’s hard to resist diving in immediately – though letting it sit for a few minutes allows the filling to settle.
Chicken pot pie is more than just a meal; it’s a reminder of cozy nights, family dinners, and the kind of food that nourishes both body and spirit. It’s versatile, too – you can customize it with seasonal vegetables, leftover turkey, or even a vegetarian version with mushrooms and cream sauce. However you make it, chicken pot pie remains a classic for good reason. It’s satisfying, familiar, and endlessly comforting.

Ingredients
- 2 cups cooked chicken shredded or diced
- 1 cup frozen peas and carrots thawed
- 1 cup chicken broth
- 1/2 cup milk
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 pcs pie crusts store-bought or homemade
Instructions
- Preheat your oven to 425°F (220°C).
- In a saucepan over medium heat, melt the butter and stir in flour. Cook for one minute while stirring constantly.
- Gradually whisk in the chicken broth and milk, and then add salt and pepper. Cook and stir until the mixture thickens and begins to bubble.
- Mix in the cooked chicken and thawed peas and carrots. Remove from heat.
- Place one crust in a pie pan, fill with the chicken mixture, and cover with the second crust. Seal and flute the edges, and cut several slits in the top to allow steam to escape.
- Bake in the preheated oven for 30 to 35 minutes, or until the crust is golden brown. Let it cool for 10 minutes before serving.
This chicken pot pie was amazing! My family loved it. Definitely a keeper!
So glad your family enjoyed it! It’s such a comforting dish. Can’t wait to try it myself!
Too salty for my taste. I followed the directions exactly and it was overwhelming. I won’t be making this again.
I found it pretty tasty! Maybe you could try using less salt next time? Cooking’s all about adjusting to your own flavor preferences!
Sounds weird, cause it shouldnt be that salty with just 1/2 tsp. Did you use low-sodium broth or something? That could make a difference!
Honestly, I was skeptical about using store-bought crusts. The pie turned out okay, but I think homemade crust would make it even better.
chikin pot pie iz my fave, but i used leftover turkey instead. delish!
Turkey pot pie sounds great! I never thought of that. Might try it next time.
I didn’t have peas, so I swapped in corn and it still tasted great! Love how adaptable this recipe is.
Okay, but corn instead of peas? Isn’t that a little weird? Not sure I’d do that…
I love that you swapped in corn! It’s awesome to make a recipe your own. 😍
What is chicken broth? Can I use beef broth instead?
Chicken broth is made from simmering chicken bones, meat, and vegetables in water. You can use beef broth if you want, but it might change the flavor a bit. Just be careful with the seasoning!
Yummy! Just like my grandma’s! 😊
Perfect for dinner! So comforting and easy to make. I used leftover turkey instead of chicken.
Leftover turkey? Isn’t that just a whole different dish? I don’t know if that counts as pot pie.
Great idea using turkey! I would’ve never thought of that. Bet it added a nice flavor.
Quick and easy! I used leftover turkey instead of chicken. Yum!
This was super easy and sooo tasty! My kids loved it!
I might try this but my kids usually won’t eat peas… any tips?
I totally agree! It’s a family favorite over here too! So easy to make!
I don’t get why you can’t just use can soup in this. Way easier.
The kids gobbled it up! Will be making again for sure!
Pie crusts from the store r cheap and quick!! Easy, yummy pie!!!
So good! But a bit time consuming. Took me longer than 35 minutes.
You sure it took that long? It seemed pretty easy to me. Maybe you’re just not fast in the kitchen? 😂
I totally agree! It tastes amazing, but I spent over an hour in the kitchen. Worth it though!
I messed up and forgot to add the milk. It was dry. Oops.
Oops! That’s a common mistake, don’t worry! Just add more milk next time!
Isn’t this basically just chicken soup in a pie? Not really impressed.
I’ve never made a pie before but this really helped! Thank ya!
Why do you need butter AND milk? Isn’t that too much fat?
I found it a bit bland, didn’t really taste the chicken. Maybe add more spices?
Didn’t turn out like the picture. My crust burnt on the edges. 🤦♂️
This was a hit at our family dinner! Everyone loved it.
This was amazing!! My family loved it. Will definitely make again!
Mmmm, pie! Can’t wait to eat this!
Meh. It was fine, but I expected more flavor. Next time, I’m adding some garlic and herbs.
This is the best chicken pot pie I’ve ever made! So easy and delicious! My whole family loved it.
Best chicken pot pie recipe ever! The crust was so flaky.
Flaky? Mine turned out hard as a rock. What am I doing wrong? 🤔
I totally agree! The crust turned out perfect for me too! Definitely a keeper! 🍗🥧
Followed the recipe exactly, but it turned out way too salty. Next time I’ll cut down on the salt.
Salt??? I don’t think I even add salt usually. How can it be too salty? Are you sure you measured right?
Maybe try using low-sodium broth next time? That might help with the saltiness.
I don’t think I got the right ingredients? What’s chicken broth? Can I just use water?
It was okay, but the crust didn’t cook right. I think my oven is off.
