350°F for 45 min feels a little short for my oven. I had to go closer to 55 to hit 160°F. Otherwise pretty tasty.

Really solid keto meatloaf. 80% lean is key—when I used 90% it was a bit too crumbly. Resting 5 min helped a lot.
