Creamy Mushroom Polenta is the kind of dish that feels both comforting and elegant, perfect for slow evenings and cozy meals. With its smooth, velvety texture and rich, earthy flavors, it brings warmth to the table while remaining simple and deeply satisfying. This is comfort food with a refined touch.
Polenta forms the heart of the dish. When cooked slowly and stirred gently, it transforms into a creamy base that is soft, rich, and inviting. Butter and cheese add depth and silkiness, turning humble cornmeal into something luxurious. The key is patience, allowing the polenta to fully absorb the liquid and develop its signature smooth texture.
The mushrooms are where the dish truly shines. Sautéed until golden and fragrant, they bring a savory, umami rich contrast to the mild polenta. A mix of mushrooms adds layers of flavor, from earthy to slightly sweet. Garlic, herbs, and a splash of cream or stock enhance their richness without overpowering their natural character.
Together, the creamy polenta and savory mushrooms create a beautifully balanced plate. Each spoonful offers comfort and depth, making it ideal as a main course or a hearty side. It pairs wonderfully with roasted vegetables, a crisp green salad, or even a glass of wine for a relaxed yet special meal. Creamy Mushroom Polenta pairs perfectly with a fresh green salad with lemon, adding lightness and crunch that balance its rich, earthy flavors.
Creamy Mushroom Polenta is also highly adaptable. It can easily be made vegetarian or vegan, depending on the fats and liquids you choose. Leftovers reheat well, and the flavors often deepen after resting, making it a practical choice for meal planning.
Whether served for a quiet dinner at home or as part of a larger spread, Creamy Mushroom Polenta delivers warmth, richness, and timeless appeal. It is a reminder that simple ingredients, treated with care, can create something truly memorable.

Ingredients
- 1 cup polenta coarse
- 4 cups water or vegetable broth for extra flavor
- 1 cup parmesan cheese grated
- 2 tablespoons butter
- 1 pound mushrooms sliced, such as cremini or button mushrooms
- 2 tablespoons olive oil
- 3 cloves garlic minced
- to taste salt
- to taste black pepper
- 1 teaspoon fresh thyme leaves optional

- In a large saucepan, bring the water or vegetable broth to a boil. Gradually whisk in the polenta. Reduce heat to low and cook, stirring frequently, until the polenta is thick and creamy, about 25 minutes.
- Stir in the parmesan cheese and butter into the polenta until melted and well combined. Season with salt and pepper to taste.
- Meanwhile, in a skillet, heat the olive oil over medium heat. Add the mushrooms and cook until they are browned and tender, about 5-7 minutes.

- Serve the creamy polenta topped with sautéed mushrooms. Enjoy!

Yum! This is my new favorite dish! Just a hint: try it with some crispy bacon bits on top!
Not really for me. The texture was weird and the mushrooms taste funny, I think I prefer spaghetti.
I get that! Mushrooms can be a hit or miss for people. Maybe try adding different veggies next time? 🤔
It was okay, but I think the polenta could’ve used more flavor. I didn’t have thyme, though.
I didn’t get it to thicken. My polenta turned out like soup! What’s the secret??
Maybe you added the polenta too fast? It needs time to absorb the liquid, or else it’s just a mess!
I struggled with that too! Make sure to whisk continuously when adding the polenta. It helps a lot!
This meal was absolutely delightful! So creamy! I loved the mushrooms on top.
Why do people say polenta is like pasta? It’s not even close! But the recipe was easy to follow.
Polenta is actually not that far off from pasta in terms of being a staple dish in many cultures. But yeah, this recipe does make it seem delicious!
I totally agree! Polenta is way creamier and different from pasta, but your recipe looks amazing! Thanks for sharing!
Delicious! I added some hot sauce and it was a game changer! 🔥
Hot sauce?! That’s a neat idea! I’m trying that next time! 🌶️
I dunno about hot sauce in polenta. It’s supposed to be creamy, right? 🤔
Never had polenta before but I’m hooked now! Mushroom flavor is to die for!
Never tried polenta, but mushrooms are kinda gross. Is it really that good?
I’m glad you love it! Polenta is so versatile, you can add so many toppings!
I dunno about this one. Polenta? Mushrooms? Just seems kinda weird if ya ask me.
Polenta is actually really good! It’s super creamy when cooked right. Maybe give it a chance? 🍽️
Really easy and tasty! The kids ate it all up. Will definitely make again. 🙂
First time making polenta and I was pleasantly surprised! Super creamy. Added some spinach too.
YUMMMM! I forgot to put in the thyme, but it turned out great anyway, maybe better lol!
I’ve done that before too! Sometimes mistakes make the dish better. I love this recipe!
This dish was amazing! So creamy and delicious. Will definitely make again.
I tried this recipe too, and I loved it! The mushrooms were so rich over the creamy polenta. It’s a keeper for sure!
Sounds good but can I skip the mushroom? I ain’t too into fungi, prefer meat. Hope it still tastes good!
Super easy to make! I used different mushrooms and it still was good.
This recipe is fantastic! The polenta is so creamy and the mushrooms add so much flavor. My family loved it.
I tried this recipe too and it was a huge hit! But I used butter instead of oil and added a bit of cream. Yummy!
Really didn’t like the texture. I prefer mashed potatoes. 😕
Idk, I find polenta delicious! But if you like mashed potatoes, then stick with that. Everyone has their own taste, ya know? 😊
I totally get it! Mashed potatoes have that comforting texture that can’t be beat. Polenta can be a bit strange if you’re not used to it. Maybe add some cream next time? 🤔
It’s just mushy corn, I don’t get the hype. Not my thing.
I don’t get it either! Polenta just feels like baby food to me. 😂
Mushy? Pfft, it’s supposed to be creamy! Maybe you just don’t know how to appreciate it! 🤷♀️
I made this but it turned out too thick. What did I do wrong?
Maybe you added too much polenta or not enough liquid? It can get thick fast, you have to whisk well!
So easy to make! I didn’t have Parmesan, so I used cheddar and it turned out alright. Will try with Parmesan next time!
This is the best recipe ever! I can’t believe how creamy the polenta turned out. My family loved it!
This is sooo good! The polenta is like a hug in a bowl. Will definitely make again!
OMG this was so rich and filling. Way better than I expected. I might turn into a polenta person now!
Delicious! Used vegetable broth instead of water, made a huge difference! Highly recommend!
I added a splash more broth at the end because mine got too thick (my fault, maybe my polenta was finer). Still tasted amazing with the parmesan + butter.
My kids actually ate the mushrooms (win). I think the thyme is optional but it really does help a lot.
Not bad at all. I’m usually skeptical of polenta because it can get lumpy, but whisking while adding the polenta worked for me.
Yes! The whisking step is the key for me too—polenta can absolutely go lumpy if you dump it in too fast. Love the mushroom + thyme combo.
Why are mushrooms so slimy tho? I might skip them next time.
I was skeptical about polenta but wow! This was so simple and tasty! Thanks for sharing.
I dunno, polenta always seemed boring to me. How can it be tasty? Like, what’s the hype? 🤨
I totally agree! Polenta is like magic, especially with mushrooms! I’m glad you tried it.
So easy. 10/10 would make again. 👍
Not a fan of polenta, but this recipe made me reconsider! The mushrooms were the star of the dish.
The garlic step is key. I accidentally burned mine for like 30 seconds (oops) so I had to start over, but when I did it right the whole thing smelled incredible.
This was okay, but I think it’s missing something. I added some chili flakes for a kick. My family liked it tho.
So good.
Pretty good, but I had to add a splash more water/broth because my polenta got thick way before 25 minutes. Also, I’m not sure 1 lb mushrooms is “enough” unless you’re serving smaller portions. Still tasty though!
Why do you have to stir for 25 minutes? That’s way too long! I got bored and just left it. Was kinda chunky.
Why would anyone put cheese in polenta? This is nutrioshunally wrong! Steamed veggies would have been better.
Made this tonight and it turned out super creamy—didn’t even need to adjust much. The mushrooms were nicely browned and the thyme (optional) really made it taste “fancy.”
Did you know polenta is just cornmeal? A bit expensive for such a simple food. Not sure I’ll make it again.
I get what you mean about the price! But the creaminess with mushrooms is totally worth it in my opinion. Just got to find a good deal on polenta!
This is such a cozy weeknight meal. The polenta came out really creamy even though I was stirring “a lot” like the recipe says. Parmesan + butter is the move.
Yes!! Parmesan + butter makes it so luxurious. I did the same and it turned out creamy without any weird clumps. Mushroom topping is perfect for weeknights.
Mine came out kinda thick and not super creamy, even though I stirred a lot too 😕 I might’ve used quick-cooking polenta by accident. Still tasty with the mushrooms though!
i dont get why people like polenta. its like eating grits… but creamy? anyway mushrooms were fire
