Ingredients
  

  • 1 corn tortilla fresh or store-bought
  • 1/2 cup black beans cooked or canned, rinsed and drained
  • 1 egg large
  • 1/4 cup salsa fresh or store-bought
  • 1/4 avocado sliced
  • 1 tablespoon cilantro chopped
  • 1 lime cut into wedges
  • to taste salt and pepper

Instructions
 

  • Heat a skillet over medium heat and lightly toast the corn tortilla until crispy. Remove and set aside.
  • In the same skillet, add the black beans and cook until heated through. Set aside.
  • In a separate pan, fry the egg to your desired doneness.
  • Place the crispy tortilla on a plate, layer with black beans, and top with the fried egg.
  • Add salsa and sliced avocado on top, and garnish with cilantro.
  • Serve with lime wedges and season with salt and pepper to taste.

      Totally makes sense—medium heat is the move. If the yolk got too firm, I’d try lowering the temperature a notch and covering the pan for a quick set so it doesn’t overcook.

    I used canned black beans and didn’t drain well enough, so it was watery in the skillet. Other than that, pretty decent.

      I mean… canned beans be like that sometimes. If it was watery, just cook them longer so they reduce. Also, are you sure you fried the egg in a separate pan? I usually just toss everything together and it works 😅

      That makes sense—watery beans would definitely thin everything out in the skillet. Next time maybe drain/rinse a bit longer or simmer the beans a minute to cook off extra liquid. Glad it was still decent though!
