Black Bean Huevos Rancheros
A delicious and hearty breakfast dish featuring eggs and black beans over a crispy tortilla, topped with fresh salsa and avocado.

Ingredients
  

  • 1 corn tortilla fresh or store-bought
  • 1/2 cup black beans cooked or canned, rinsed and drained
  • 1 egg large
  • 1/4 cup salsa fresh or store-bought
  • 1/4 avocado sliced
  • 1 tablespoon cilantro chopped
  • 1 lime cut into wedges
  • to taste salt and pepper

Instructions
 

  • Heat a skillet over medium heat and lightly toast the corn tortilla until crispy. Remove and set aside.
  • In the same skillet, add the black beans and cook until heated through. Set aside.
  • In a separate pan, fry the egg to your desired doneness.
  • Place the crispy tortilla on a plate, layer with black beans, and top with the fried egg.
  • Add salsa and sliced avocado on top, and garnish with cilantro.
  • Serve with lime wedges and season with salt and pepper to taste.
