
A healthy and refreshing Greek style zoodle recipe with tomatoes and feta cheese.
Ingredients
- 4 zucchini large, spiralized
- 1 tbsp olive oil
- 2 cloves garlic minced
- 1 pint cherry tomatoes halved
- 1/4 cup Kalamata olives sliced, pitted
- 1/4 cup feta cheese crumbled
- 2 tbsp parsley chopped fresh
- Salt and pepper black pepper, to taste
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Add the cherry tomatoes to the skillet and cook until they start to soften, about 5 minutes.
- Add the spiralized zucchini to the skillet and cook for another 3-4 minutes until the zoodles are tender.
- Remove the skillet from the heat and stir in the olives, feta cheese, and fresh parsley. Season with salt and black pepper to taste.
- Serve the Greek style zoodles with tomatoes hot or cold, as a side dish or a main course.
