Ingredients
  

  • 4 zucchini large, spiralized
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 pint cherry tomatoes halved
  • 1/4 cup Kalamata olives sliced, pitted
  • 1/4 cup feta cheese crumbled
  • 2 tbsp parsley chopped fresh
  • Salt and pepper black pepper, to taste

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  • Add the cherry tomatoes to the skillet and cook until they start to soften, about 5 minutes.
  • Add the spiralized zucchini to the skillet and cook for another 3-4 minutes until the zoodles are tender.
  • Remove the skillet from the heat and stir in the olives, feta cheese, and fresh parsley. Season with salt and black pepper to taste.
  • Serve the Greek style zoodles with tomatoes hot or cold, as a side dish or a main course.
