Ingredients
  

  • 1 pound beef chuck cut into cubes
  • 3 cups beef broth low sodium
  • 2 tablespoons olive oil extra virgin
  • 1 cup carrots sliced
  • 1 cup potatoes diced
  • 1 cup onions chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme dried
  • 2 cloves garlic minced

Instructions
 

  • Heat olive oil in a large pot over medium-high heat. Add the beef cubes and cook until browned on all sides.
  • Remove the beef and set aside. Add onions, carrots, and garlic to the pot and sauté until the onions are translucent.
  • Add tomato paste, beef broth, and thyme. Return the beef to the pot and bring to a boil.
  • Reduce heat to low, cover, and let simmer for about 1.5 hours.
  • Add potatoes and continue simmering for another 30 minutes or until all ingredients are tender.
  • Season with salt and pepper to taste before serving hot.

      Mine was watery too. I think the problem is the tomato paste? Like 2 tbsp is not enough? Also 1.5 hours might not be long enough for the beef to give body. I just added a slurry (cornstarch + water) at the end and it fixed it. Works every time lol.

Next time try dicing the potatoes smaller and simmer uncovered for the last 10–15 minutes, or mash a few chunks in the pot to help it thicken.

      Love this! Cozy is the perfect word for a Christmas Eve stew. I also brown the beef first—totally makes it richer. Thyme doing the heavy lifting, for sure. I’d be tempted to try Worcestershire next time too.

    I’m skeptical about the low sodium broth—like why not just use regular? Anyway, I tried it and it was still tasty, just needed extra seasoning at the end. The garlic smell while sautéing the onions was amazing.

      Honestly I always just dump regular broth in lol. If it tastes good for you though, I guess low sodium ain’t the end of the world. But like… did you add salt while simmering or only at the end?

      I get the skepticism, but low sodium broth is great if you can control the salt at the end. Extra seasoning is exactly the move 👌 And those sautéed onions + garlic really do smell next-level.

    Made this for Christmas Eve and it was seriously cozy. The thyme + tomato paste combo is perfect, and the beef got super tender after the full simmer. I added a splash of Worcestershire too—didn’t change the vibe, just made it deeper.

    Not gonna lie, I forgot to brown the beef first and it still tasted okay, but the stew looked kinda greyish. Browning probably helps a lot with flavor. Will do it right next time.
