Ingredients
  

  • 2 cups mixed salad greens
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup feta cheese crumbled
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup Basil leaves fresh
  • 1/4 cup anchovies crispy fried
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, combine the mixed salad greens, cherry tomatoes, red onion, Kalamata olives, feta cheese, sun-dried tomatoes, and fresh basil leaves.
  • In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper.
  • Drizzle the dressing over the salad and toss to combine.
  • Top the salad with crispy fried anchovies.
  • Serve immediately and enjoy!
