A delicious and healthy salad with fried anchovies
Ingredients
- 2 cups mixed salad greens
- 1/2 cup cherry tomatoes halved
- 1/4 cup red onion thinly sliced
- 1/4 cup Kalamata olives
- 1/4 cup feta cheese crumbled
- 1/4 cup sun-dried tomatoes chopped
- 1/4 cup Basil leaves fresh
- 1/4 cup anchovies crispy fried
- 2 tbsp extra-virgin olive oil
- 1 tbsp red wine vinegar
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine the mixed salad greens, cherry tomatoes, red onion, Kalamata olives, feta cheese, sun-dried tomatoes, and fresh basil leaves.
- In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper.
- Drizzle the dressing over the salad and toss to combine.
- Top the salad with crispy fried anchovies.
