Ingredients
  

  • 1 cup lentils rinsed
  • 4 cups vegetable broth low sodium
  • 3 large carrots peeled and sliced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin ground
  • 1 teaspoon paprika smoked
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion becomes translucent.
  • Add the carrots, cumin, and paprika to the pot, stirring to combine. Cook for about 5 minutes.
  • Stir in the rinsed lentils and pour in the vegetable broth. Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, or until the lentils are tender.
  • Season with salt and pepper to taste. Serve hot.
