Baked spiced stuffed bell peppers are a comforting and flavorful dish that combines bold spices, hearty fillings, and tender roasted peppers into one beautiful, wholesome meal. They’re colorful, delicious, and endlessly adaptable, making them a go-to for weeknight dinners, meal prep, or entertaining guests with something vibrant and satisfying.
The foundation of this dish is the bell pepper, naturally sweet, juicy, and the perfect size to hold a generous scoop of filling. Baking softens the peppers while adding a subtle roasted flavor that pairs perfectly with a well-seasoned stuffing. Whether you prefer red, yellow, green, or orange peppers, each one adds its own touch of color and flavor to the dish.
Inside, the possibilities are endless. A classic filling often includes a mix of cooked rice or grains, ground meat (like beef, turkey, or lamb), onions, garlic, and a medley of warm spices. Think cumin, smoked paprika, coriander, or even a hint of cinnamon for a Middle Eastern twist. Vegetarian versions shine just as brightly with ingredients like lentils, chickpeas, black beans, or crumbled tofu.
Once stuffed, the peppers are placed in a baking dish, sometimes with a splash of tomato sauce or broth to keep everything moist and flavorful as it bakes. Topped with cheese or fresh herbs, they come out of the oven bubbling, golden, and full of comforting aromas.
What makes stuffed peppers such a winner is their balance. They offer protein, vegetables, and grains in one dish, and they look impressive while doing it. You can make them spicy or mild, meaty or plant-based, and they reheat beautifully for leftovers.
Perfect for feeding a crowd or planning meals ahead of time, baked spiced stuffed bell peppers are a flavorful and satisfying way to get creative in the kitchen without complicating dinner.

- parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.

These stuffed peppers are the bomb! I added some hot sauce and it turned out fire! 🔥
Yum! Just made these and they came out sooo good. I added some jalapeños for extra kick!
Love the idea but my kids wouldn’t eat them, anyone else had problems with kids not liking peppers?
Meh. It was okay. Don’t think I’ll make again.
Honestly, I don’t get what the fuss is about. It looks good but tastes kinda bland. 🤷♂️
I really liked it! The spices were on point. Maybe you just didn’t season it enough?
Why add the rice? Feels unnecessary. Just meat and spices are better.
I think the rice adds a nice texture and makes the dish more filling! Otherwise, it’s just meat in a pepper. But to each their own!
I don’t know, they just didn’t taste right. Maybe too many spices? I prefer them simpler.
I get what you mean! Not everyone likes a lot of spices. Maybe try it without the chili powder next time? I think it could help!
Simpler is better sometimes, I totally agree! But I love the spices in these. Guess we all have different tastes!
I don’t like bell peppers, but I made this with zucchini instead and it was still yummy!
Zucchini? Wow! That’s a great idea! I might try it too. 🍽️
What kind of rice do you use? I only have basmati and I’m not sure it will work.
I don’t think basmati is right for this. It cooks different, might end up mushy. Maybe try something else if you can.
Basmati rice should work fine! It might give a nice flavor actually. Just make sure it’s cooked before adding to the mix.
Uh, how do you put the rice in the peppers? I just put them on a plate lol.
Idk, isn’t it just putting things in? Seems simple but maybe I’m wrong, lol. 🤷♂️
You just cut the tops off and stuff the rice mixture in! It’s super easy. Just make sure they fit in the pepper nice and snug! 🍽️
Wow, this is a keeper! My kids devoured them. Will be making these again!
Baked spiced stuffed bell peppurs r awesome! I love makeing them for my family. Perfect for dinner!
I dunno… I tried making them once and it didn’t taste great. Maybe I messed up the spices? 🤔
I totally agree! These stuffed peppers are a hit at my house too. They make such a colorful and tasty dinner! 🍽️
I substituted the beef for tofu. It was alright but not what I expected. Next time I might stick to beef.
My kids gobbled these up! I didn’t have parmesan so I used cheddar. Still delish!
Glad your kids loved it! Cheddar sounds like a nice twist on this recipe. Gonna try that next time!
These stuffed peppers were amazing! My family loved them and I will definitely make them again.
I tried this recipe but I used chicken instead of beef. Wasn’t too great. Probably should have followed it.
Not bad, but mine were a bit too spicy. Maybe lessen the chili?
These were a hit at the dinner table! My kids loved them! Definitely doing this again.
These stuffed peppers are a family hit! Super easy to make and tasty. Thanks for sharing!
These turned out amazing! My kids loved them!
Seems too complicated for me. I just stick to microwave dinners. 😐
I forgot to buy bell peppers, so I used zucchinis. Not the same but still yummy.
Zucchini sounds like a good twist! I think it would still taste nice with all that flavor. Can’t wait to try it your way!
Kinda overcooked the peppers. They turned mushy. 😩 Next time I’ll watch them more closely.
I thought the spices were too much. Next time I’ll lessen the chili powder.
Didn’t like the taste of the peppers. Maybe next time I’ll skip the bell ones. 🤷♂️
These were awesome! My kids loved them and they’re super easy to make.
So glad to hear that! They really are a hit with kids. What age are yours?
I dunno, they look a bit complicated for me! But my wife might like it. 🤷♂️
These stuffed peppers were amazing! So flavorful and easy to make. Will definitely add this to my rotation!
I’m so glad you liked them! They’re a family favorite here too. Perfect for meal prep! 😋
Honestly, I found them kinda bland. Maybe I should’ve added more spices or something? 🤔
Easy recipe! I love how colorful the peppers look. Great for a dinner party! 🌈
Very easy recipe. I used quinoa instead of rice. Still turned out great!
But isn’t quinoa kinda different than rice? I’m not sure how that would work…
Quinoa sounds like a great swap! I might try that next time.
I tried this recipe but I didn’t have ground beef, so I used chicken instead. It turned out ok, but I think beef would be better.
I love this recipe! I swapped the beef for turkey and it worked great! Highly recommend!
Why would you put tomatoes in this? They make it too soggy. Next time, I will skip that part. 2/5
This was a fail for me. The rice was hard, and my peppers were burnt. Maybe I cooked it too long? Idk.
What’s the point of adding parsley? It’s just for looks. Some might call it a waste.
Parsley might seem just for looks, but it actually adds a hint of freshness and flavor! Trust me, it’s worth it.
I tried making these but my peppers were too crunchy. Maybe I didn’t bake long enough??
So yum! I added some black beans for extra protein and they were delish! 🌶️
That sounds awesome! Black beans are a great addition. I might try that next time. 🌟
I dunno, adding beans could change the whole flavor. Aren’t those stuffed peppers supposed to be meat based? 🤔
Why you gotta use so much cheese? I don’t want my heart to stop. 😬
Peppers were a little hard to eat. Should have cooked longer. Didn’t stop me tho! LOL
I agree! I always feel like the peppers need more time too. But hey, they still taste great, right? LOL
Shoulda boiled them first or maybe just roasted longer? Who knows, but I love stuffed peppers anyway!
Low effort, high taste! Perfect for weeknight dinners. Try it!
Best recipe ever! Easy and delicious. Can’t wait for dinner!
This recipe is a scam! No way it takes that long to bake. My oven must be broken! Never again.
So good, but I added some mushrooms and it was even better. Yum!
WOW! So good. The flavors were really nice and my kids ate it without complaining!
Is it normal for the peppers to be kinda bitter? I think I left the seeds in by mistake. Still tasted ok though.
Bitter?! Nah, it’s all good! Peppers can taste a little different, but seeds or not, they are fine! 😊
Yeah, leaving seeds in can make them taste a bit bitter. But if you liked it, that’s what matters! 🤷♂️
Are bell peppers even healthy? Heard they can be bad for digestive system. Not sure bout this recipe.
I dunno, I’ve heard some people say they make your tummy hurt. Maybe just skip the peppers? Would still be good with something else.
Bell peppers are actually really good for you! They’re packed with vitamins like A and C. Don’t worry too much about your digestion unless you have a specific intolerance.
I thought this would be healthy but it has beef and cheese. Not that great for my diet.
Yummy!!! Made it twice already. Bestest!
So glad you loved it! It’s one of my favs too! 😊
Bestest? Really? I mean, it was ok but I think I’ve had better stuffed peppers. 🤔
Stuff peppers are a lie. Why not just make a casserole? Less work and better taste.
I mean, who wants to clean all those dishes? Casserole seems easier but not as unique!
But stuffed peppers are fun! They look so nice on a plate. Casserole is just… a pile of food. 😅
Baked Spiced Stuffed what? Sounds odd, but I gave it a go anyway. Not bad.
Baked peppers? Sounds weird. I don’t know if I would like that… not my thing.
Glad you gave it a try! I think they turned out pretty good too. The spices really bring it all together!
Easy recipe! I added some corn and black beans. Surprised my partner liked it!
I don’t get why people like peppers so much. The mix was good but the peppers were too crunchy for my taste. Needs more cooking time or somethin.
Made these for dinner yesterday, my kids devoured them! So easy to make too. Thanks for sharing! 😊
Absolutely delicious! My kids loved it. Will make again!
I’m so glad your kids loved it! This recipe is a family favorite for sure.
Umm… Why would anyone stuff a bell pepper? Seems kinda weird to me. 1 star.
Stuffed peppers? Isn’t that a thing from Italy? I don’t think they eat beef there.
These stuffed peppers were amazing! The flavors were on point. Will definitely be making this again!
I dunno, I thought they were too much work for bell peppers. Could just eat the stuff without them!
Good flavors! But I forgot the cheese! 😤 Next time I’ll make it right!
Don’t worry! Cheese or no cheese, those peppers still sound good. I usually forget the spices! 😂
They tasted okay, but I think the recipe needed more spices. It was a bit bland for my taste.
I totally agree! I doubled the spices and it turned out so much better. Definitely try adding more next time!
Bland? I thought they were tasty, maybe your tastebuds are broken? Haha!
I tried this but it didn’t taste as good as I thought. The spices were too much for me.
Quick to prepare! I added some hot sauce for a kick. Yum!
