Baked Spiced Stuffed Bell Peppers

July 5, 2024

Baked spiced stuffed bell peppers are a comforting and flavorful dish that combines bold spices, hearty fillings, and tender roasted peppers into one beautiful, wholesome meal. They’re colorful, delicious, and endlessly adaptable, making them a go-to for weeknight dinners, meal prep, or entertaining guests with something vibrant and satisfying.

The foundation of this dish is the bell pepper,  naturally sweet, juicy, and the perfect size to hold a generous scoop of filling. Baking softens the peppers while adding a subtle roasted flavor that pairs perfectly with a well-seasoned stuffing. Whether you prefer red, yellow, green, or orange peppers, each one adds its own touch of color and flavor to the dish.

Inside, the possibilities are endless. A classic filling often includes a mix of cooked rice or grains, ground meat (like beef, turkey, or lamb), onions, garlic, and a medley of warm spices. Think cumin, smoked paprika, coriander, or even a hint of cinnamon for a Middle Eastern twist. Vegetarian versions shine just as brightly with ingredients like lentils, chickpeas, black beans, or crumbled tofu.

Once stuffed, the peppers are placed in a baking dish, sometimes with a splash of tomato sauce or broth to keep everything moist and flavorful as it bakes. Topped with cheese or fresh herbs, they come out of the oven bubbling, golden, and full of comforting aromas.

What makes stuffed peppers such a winner is their balance. They offer protein, vegetables, and grains in one dish, and they look impressive while doing it. You can make them spicy or mild, meaty or plant-based, and they reheat beautifully for leftovers.

Perfect for feeding a crowd or planning meals ahead of time, baked spiced stuffed bell peppers are a flavorful and satisfying way to get creative in the kitchen without complicating dinner.

Love the idea but my kids wouldn’t eat them, anyone else had problems with kids not liking peppers?

I really liked it! The spices were on point. Maybe you just didn’t season it enough?

  5. User avatar jarrod.lynch says:

Why add the rice? Feels unnecessary. Just meat and spices are better.

    1. 4 stars
I think the rice adds a nice texture and makes the dish more filling! Otherwise, it’s just meat in a pepper. But to each their own!

I don’t know, they just didn’t taste right. Maybe too many spices? I prefer them simpler.

    1. User avatar darrick.koss87 says:

      4 stars
I get what you mean! Not everyone likes a lot of spices. Maybe try it without the chili powder next time? I think it could help!

Simpler is better sometimes, I totally agree! But I love the spices in these. Guess we all have different tastes!

I don’t like bell peppers, but I made this with zucchini instead and it was still yummy!

    1. 5 stars
Zucchini? Wow! That’s a great idea! I might try it too. 🍽️

What kind of rice do you use? I only have basmati and I’m not sure it will work.

    1. 2 stars
I don’t think basmati is right for this. It cooks different, might end up mushy. Maybe try something else if you can.

    2. User avatar vito.runte25 says:

      4 stars
Basmati rice should work fine! It might give a nice flavor actually. Just make sure it’s cooked before adding to the mix.

  9. 1 star
Uh, how do you put the rice in the peppers? I just put them on a plate lol.

    1. User avatar kaycee.schuppe27 says:

Idk, isn’t it just putting things in? Seems simple but maybe I’m wrong, lol. 🤷‍♂️

Very easy recipe. I used quinoa instead of rice. Still turned out great!

    1. User avatar aundrea.denesik says:

      3 stars
But isn’t quinoa kinda different than rice? I’m not sure how that would work…

    2. User avatar vinnie.rippin3 says:

      5 stars
Quinoa sounds like a great swap! I might try that next time.

  29. 3 stars
I tried this recipe but I didn’t have ground beef, so I used chicken instead. It turned out ok, but I think beef would be better.

  30. User avatar demetrius.goodwin44 says:

    4 stars
I love this recipe! I swapped the beef for turkey and it worked great! Highly recommend!

  31. 2 stars
Why would you put tomatoes in this? They make it too soggy. Next time, I will skip that part. 2/5

  32. User avatar brandee.macgyver says:

This was a fail for me. The rice was hard, and my peppers were burnt. Maybe I cooked it too long? Idk.

  33. User avatar Frank N. Stein says:

What’s the point of adding parsley? It’s just for looks. Some might call it a waste.

    1. User avatar rosy.ohara2 says:

      5 stars
Parsley might seem just for looks, but it actually adds a hint of freshness and flavor! Trust me, it’s worth it.

  34. User avatar rickiestmorty says:

    3 stars
I tried making these but my peppers were too crunchy. Maybe I didn’t bake long enough??

    2. User avatar lamar.rosenbaum2003 says:

      2 stars
I dunno, adding beans could change the whole flavor. Aren’t those stuffed peppers supposed to be meat based? 🤔

  36. User avatar Peter Hansen IV says:

    1 star
Why you gotta use so much cheese? I don’t want my heart to stop. 😬

  37. User avatar lucien.okuneva59 says:

Peppers were a little hard to eat. Should have cooked longer. Didn’t stop me tho! LOL

I agree! I always feel like the peppers need more time too. But hey, they still taste great, right? LOL

    2. User avatar mathWizard says:

    5 stars
WOW! So good. The flavors were really nice and my kids ate it without complaining!

  43. User avatar Manny Kinn says:

    4 stars
Is it normal for the peppers to be kinda bitter? I think I left the seeds in by mistake. Still tasted ok though.

    1. User avatar marcelle.shanahan1998 says:

      5 stars
Bitter?! Nah, it’s all good! Peppers can taste a little different, but seeds or not, they are fine! 😊

    2. 4 stars
Yeah, leaving seeds in can make them taste a bit bitter. But if you liked it, that’s what matters! 🤷‍♂️

  44. User avatar dan.lakin says:

Are bell peppers even healthy? Heard they can be bad for digestive system. Not sure bout this recipe.

    1. User avatar samual.ziemann1984 says:

      2 stars
I dunno, I’ve heard some people say they make your tummy hurt. Maybe just skip the peppers? Would still be good with something else.

    2. User avatar roberta.mayert says:

    2. User avatar ArabianNights says:
