  • 4 chicken pieces such as legs or thighs
  • 2 cups buttermilk for marinade
  • 2 cups all-purpose flour for coating
  • 1 tbsp paprika for seasoning
  • 1 tsp garlic powder for seasoning
  • 1 tsp black pepper freshly ground, for seasoning
  • 1 tsp salt for seasoning
  • 1 quart vegetable oil for frying

Instructions
 

  • In a bowl, marinate the chicken pieces in buttermilk. Cover and refrigerate for at least 8 hours or overnight.
  • In a separate bowl, mix together the flour, paprika, garlic powder, black pepper, and salt.
  • Remove the chicken from the buttermilk and coat it in the flour mixture. Ensure each piece is thoroughly coated.
  • Heat the vegetable oil in a deep pan over medium-high heat until it reaches 350°F (175°C).
  • Fry the chicken pieces in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 15 minutes per side.
  • Once cooked, remove the chicken from the oil and drain on paper towels.

      Yeah 350°F is a big deal. If the oil wasn’t actually holding temp, the flour can sort of “fall off” instead of crisping and setting. I’d use a thermometer and let it fully come back to temp between batches.

      This happened to me when I tried to rush it too 😅. Also make sure you shake off any extra buttermilk and press the flour on a bit. Don’t leave it sitting—fry right after coating.

      That makes sense—if the chicken is still wet after the buttermilk, the flour won’t really grip. Next time pat it dry a bit or let it sit on a rack for a few minutes before coating.

      Coating sliding off usually means it was too wet or the oil temp wasn’t quite right. Did you keep it around 350°F the whole time? If it drops, the crust won’t set fast.

    Pretty good, but mine came out a little too salty. Next time I’ll cut the salt in the flour mix and maybe add a touch less paprika. Still ate it all though 😅

      Totally get it—salt can sneak up fast with frying batches. I’ve started using a slightly heaping vs level salt and noticed the same “too salty” outcome. Your plan to cut the salt in the flour mix is spot on. Maybe also check how salty your paprika is (some brands are more intense).

    Mine came out a little bland even though I used all the salt/pepper. Maybe I should’ve let it marinate longer than 8 hours. Also, my crust was kinda thick—could be my coating technique.
