Artichoke Hearts Gratin

February 5, 2026

Artichoke hearts gratin is a rich and elegant dish that transforms tender artichokes into a creamy, golden baked delight. Perfect as an appetizer, side dish, or even a light main course, this gratin combines delicate flavors with a satisfyingly crispy topping that makes every bite irresistible.

The star of the dish is the artichoke hearts, either fresh, jarred, or frozen, which are tenderized and layered in a creamy sauce. A blend of butter, garlic, and cream or béchamel forms the base, while cheese, often Gruyère, Parmesan, or a mix, adds depth, richness, and a slightly nutty flavor. Herbs such as thyme, parsley, or tarragon enhance the natural sweetness of the artichokes, giving the dish a fragrant, savory note.

The gratin is topped with breadcrumbs or additional cheese, which browns in the oven to create a golden, crispy crust. This contrast between the creamy interior and the crunchy topping is what makes artichoke hearts gratin so appealing. Each spoonful offers a perfect balance of textures and flavors, making it a favorite at holiday dinners, dinner parties, or casual weeknight meals that deserve a touch of elegance.

This dish is versatile and forgiving. You can prepare it ahead of time and bake it just before serving, or customize it by adding sautéed mushrooms, spinach, or a hint of lemon zest for brightness. It pairs beautifully with roasted meats, grilled fish, or simply with a fresh green salad for a lighter option.

Artichoke hearts gratin celebrates the natural flavor of the vegetable while elevating it with creamy, cheesy indulgence. Its comforting richness, aromatic herbs, and golden crust make it a dish that feels both special and approachable. Whether served as a starter or a side, it is sure to impress and satisfy anyone lucky enough to enjoy it.

The recipe says ‘fresh bread crumbs’ but does any1 really care? I used pre-packaged, still turned out great!

Not sure if this will work with frozen artichokes; has anyone tried that?

  3. User avatar emmanuel.carroll says:

Too much cheese for my liking. Next time I will use less Parmesan.

I actually love the cheese! Makes it so creamy. But I guess everyone has their own taste!

Easy to make. My kids actually ate veggies for once, lol!

    1. User avatar elenor.sporer7 says:

      5 stars
That’s awesome! Love that the kids enjoyed it. Who knew veggies could taste so good? 😄

    2. 3 stars
Hmm, my kids usually won’t touch artichokes. Might give it a try, but not convinced it will work.

  5. 5 stars
I made this for my friends and they loved it! Definitely a crowd pleaser!

Wow, this looks delicious! Can’t wait to try it for our next family dinner! 🍽️

  7. 3 stars
I used canned artichoke hearts and drained them well—still came out watery for me. Next time I’ll pat them dry and maybe add a bit more breadcrumbs to firm it up.

  8. User avatar sue.reichert82 says:

    3 stars
I didn’t have lemon juice so I used vinegar… it was okay.

  9. 2 stars
This looked better than it tasted. Kind of bland, I think it needed more spices.

    1. User avatar allan.beer11 says:

      3 stars
Bland? Really? I thought it was just fine. Maybe you just didn’t season it enough or something.

    2. User avatar terence.quitzon says:

      4 stars
I totally agree! It needed some kick. I added cayenne pepper and it made all the difference.

  10. 5 stars
I love artichokes! This is a hit! 🍕

  11. 2 stars
I dunno… artichokes are kinda weird. Not sure if I’ll like this.

    1. User avatar kaitlin.konopelski says:

      4 stars
I totally get it! Artichokes can be a bit strange, but this recipe makes them taste amazing! Give it a shot!

    2. User avatar Akilah Doyle says:

      5 stars
Weird? Nah! Artichokes are awesome! Just try it, you’ll be surprised how good this turns out.

  12. User avatar maurice.johnson47 says:

    3 stars
I tried this and it was okay, but I think I would rather have spinach dip instead. Just my opinion.

  13. 5 stars
This dish was fantastic! The flavors really come together, and it was a hit with my family!

  14. 3 stars
Not bad, but canned/jarred artichokes can be watery. I didn’t drain mine long enough and the bottom was slightly soggy. Still tasted fine though.

    1. User avatar evangelina.schoen9 says:

      5 stars
Yeah, that makes sense—jarred artichokes can hold a ton of moisture. I always drain and then pat them dry a bit (or even let them sit in a colander a few extra minutes) so the bottom doesn’t get soggy. Glad it still tasted good though!

    2. User avatar mathilde.kuhlman29 says:

      3 stars
Maybe. But mine were never watery, so I think it’s more about the oven time. 25-30 mins is kinda short? I’d crank it to like 35 and broil at the end for color. Also, did you salt them before baking? That draws water out. 🤷‍♂️

  15. User avatar Grandma Ulrira says:

    5 stars
YUM! My new favorite. I added extra cheese ’cause you can never have too much cheese, am I right?

  16. User avatar tissues_with_issues says:

    3 stars
Is this even healthy? I feel like it’s just cheese and carbs. I dunno, sounds tasty but I’m skeptical.

  17. 2 stars
Just had it for dinner. It was too salty for my taste. Maybe less salt next time?

  18. 2 stars
Not sure about the texture… it was kinda mushy and the breading didn’t really stick. But I might have messed it up.

    1. 4 stars
I’ve had that problem too! Sometimes the artichoke hearts release too much moisture. Maybe try pressing them between paper towels next time?

  19. User avatar Flame Atronach says:

    2 stars
too many steps for me 😩 just wanted something quick and this took forever. But it did smell good!

  20. 5 stars
This was surprisingly good for something so simple. The breadcrumb-Parmesan combo browns up nicely, and the lemon makes it taste fresh instead of heavy. I’ll definitely make it again.

  21. User avatar kendall.boyle says:

    4 stars
Pretty good, but mine turned out a little dry after 30 minutes. Next time I’ll probably add a touch more olive oil or bake closer to 25 minutes.

  22. 2 stars
2 tbsp olive oil feels low to me for the amount of breadcrumbs. I’m sure it’s fine, but I prefer a richer topping. Would be better with more fat and more cheese.

  23. User avatar ike.hodkiewicz says:

    5 stars
This was a hit at the potluck! Everyone loved it, thank you!

  24. User avatar Margarete Gerhold says:

Took this to a potluck and it was gone in minutes! People loved it!

  25. User avatar danny.bashirian28 says:

    3 stars
I followed the recipe but it turned out too salty. Maybe less salt next time?

    1. User avatar miquel.hermiston1956 says:

      4 stars
Yeah, I think it’s a good idea to reduce the salt. Different brands of ingredients can be saltier than others!

  26. User avatar cesar.lubowitz says:

    4 stars
Pretty easy and my whole family ate it (which is rare). I used panko instead of fresh breadcrumbs and it still worked great.

  27. User avatar justa.sawayn97 says:

    3 stars
Honestly… 2 tablespoons olive oil doesn’t seem like enough. My crumbs wouldn’t stick unless I pressed them down hard. Tasted good, just messy.

  28. User avatar Sand-Dial says:

    3 stars
Lol I made it and then forgot to add salt until halfway through and it was kinda weird. Still, everyone ate it anyway.

  29. User avatar mickey.harris68 says:

    4 stars
I didn’t have fresh breadcrumbs so I used dry and it still turned out decent. Kinda salty though—maybe because my Parmesan is salty. Would reduce the salt next time.

    1. User avatar heriberto.nader42 says:

      5 stars
Good call on adjusting! Parmesan can be *super* salty—next time try cutting the added salt in half, or use less Parmesan. Dry breadcrumbs usually work fine for gratins too.

  30. 5 stars
Yum! I added some chili flakes for a kick. Definitely making this again!

  31. User avatar ignacio.robel19 says:

    5 stars
This is one of those “kinda fancy for being easy” side dishes. The lemon gives it a fresh brightness. My picky eater even went back for more.

    1. User avatar anonymous_hacker says:

      5 stars
Love this! The lemon really does make it feel brighter than a typical gratin. Also picky eaters surprisingly go for anything cheesy 😂

  32. User avatar tissues_with_issues says:

    4 stars
My oven runs hot, so I checked early. Still, I loved the browned top. Kinda tastes like the fancy version of something you’d get at a deli.

  33. User avatar joaquin.kunze3 says:

    5 stars
Tried this tonight—super easy and the top actually got that nice golden crunch. I squeezed a little extra lemon and it brightened everything up.

  34. User avatar season.thompson55 says:

    5 stars
I used canned artichokes and squeezed them a bit more dry like the recipe implies, and that helped. The texture was great—crispy top, tender inside. Family approved.

  35. User avatar lavone.altenwerth says:

    3 stars
Not bad, but I’m not sure garlic + lemon is “gratín” flavor. It was good, just different from what I expected. Could use more seasoning maybe.

    1. User avatar wellRespected says:

      4 stars
Fair point—“gratin” usually leans more toward richness and browning than lemony brightness. I think the lemon/garlic is more of a fresh twist than a classic gratin vibe. If you want it closer to what you expected, you could add a bit more salt/pepper or even a pinch of paprika/extra Parmesan for more savory depth.

  36. 5 stars
Super quick and tasty! Love how the lemon cuts the richness. 10/10, would eat again 😄

  37. User avatar lowell.schamberger86 says:

    1 star
I think u forgot to mention how to clean the artichokes. I don’t like canned stuff.

  38. User avatar renee.graham81 says:

    5 stars
Made this tonight—so easy and the topping actually got nice and crispy. I used jarred artichokes and squeezed them a bit more dry, and it was perfect.

    1. User avatar Prostetnic Vogon Jeltz says:

      5 stars
That’s awesome! Crispy topping is the whole point 😄 I’m glad jarred worked out—drying them more definitely helps.

    2. User avatar arturo.adams3 says:

      3 stars
Huh, I tried something like this but mine came out kinda soggy. Maybe I didn’t drain enough… but 25-30 min at 400°F seems too short? Either way congrats!

  39. User avatar leola.walsh93 says:

    5 stars
Made this tonight and it was gone way too fast. The lemon + garlic combo really wakes up the artichokes. Next time I’ll add a little extra Parmesan for extra crunch.

  40. User avatar Draugr Deathlord says:

    5 stars
I added chopped parsley and it made it feel way more “restaurant-y.” Would definitely make again for a quick side.

    1. User avatar Dremora Lord says:

      5 stars
Love that idea! Parsley really does brighten it up—adds a fresh, herby vibe that makes it feel fancier than it is. I’m totally stealing this for my next batch.

  41. User avatar lester.batz38 says:

    5 stars
This is the best!!! Delicious and so cheesy. Can’t get enough of it 🙂

    1. User avatar rosann.conn says:

      5 stars
I totally agree! This recipe is amazing, I make it all the time. So creamy and rich!

  42. User avatar dexter.bahringer5 says:

    2 stars
I accidentally used regular (stale) breadcrumbs and it was kinda dry. Still edible though. Fresh breadcrumbs or adding a splash of olive oil might fix it.

  43. User avatar gail.bogisich says:

    5 stars
This is going in my “quick side dish” rotation. I sprinkled extra Parmesan on top right before baking—highly recommend.

  44. User avatar eliseo.kuhlman21 says:

    1 star
Where do you even buy artichoke hearts? I couldn’t find them anywhere! Not even at Walmart.

    1. 4 stars
You should try specialty grocery stores or look online! I’ve seen them at Trader Joe’s before.

    2. User avatar smartestRedditor says:

      3 stars
Just go to a local farmer’s market! Walmart ain’t got everything, you know?

  45. User avatar juliane.cartwright says:

    5 stars
This feels fancy for how easy it is. I added a sprinkle of extra Parmesan on top at the end and it turned out great. No notes!

  46. User avatar halflife4 says:

    2 stars
Looks good but I’m confused: does the oven really need to be at 400F? That seems too hot for baking artichokes—won’t they dry out? I might try 350F next time.

    1. User avatar emmanuel.runolfsson47 says:

      5 stars
I get your concern, but 400°F helps the breadcrumb topping brown without overcooking the artichokes. They’re already cooked (jarred/canned), so you’re mostly heating them through and crisping the top. If you go 350°F, just expect it may take longer to get golden—like closer to 35-40 minutes. 😊

  47. User avatar jaime.crona says:

    5 stars
Super quick and crowd-pleasing. I brought it to a potluck and someone asked for the recipe. Honestly, I think it’ll work even with frozen artichokes if you thaw and drain well.

  48. User avatar khalilah.metz54 says:

    3 stars
I’m not convinced about the breadcrumbs amount—mine felt dry and the mixture didn’t really cling to the hearts. Next time I’ll add a touch more oil.

  49. User avatar hipolito.schmeler says:

    4 stars
Pretty good, but I think 25 minutes was a bit short for my oven. Also, I used dried garlic by accident and it still worked, just not as punchy.

  50. 5 stars
This is comfort food for me. I used jarred artichokes and followed the steps exactly; golden crust with minimal effort is a win.

    1. User avatar angel.wilderman80 says:

      4 stars
I tried something similar but mine didn’t get that golden crust—maybe my breadcrumbs were too old? Still tasted good though. Any tip to prevent it from browning too slow?

    2. User avatar dawne.mohr says:

      5 stars
Yes! This looks like the exact kind of “set it and forget it” comfort food I crave. Golden crust with almost no work is the best combo. 🍽️

  51. User avatar denisha.ullrich says:

    4 stars
Easy peasy! I used frozen artichokes and it worked just fine. Will make again!

  52. User avatar Android 18 says:

    5 stars
So good. 25 minutes was perfect in my oven. My family asked for seconds.

    1. 5 stars
Love hearing that—mine is usually right around the same time too. Glad your family went back for seconds!

  53. User avatar vivien.stehr67 says:

    3 stars
Not bad, but 1 cup breadcrumbs felt like a lot compared to the amount of artichokes I had. I might reduce the crumbs next time or add another spoon of olive oil.

    1. User avatar valentine.fritsch says:

      4 stars
Totally agree—my artichokes were pretty chunky and 1 cup crumbs covered them like a full-on crust. Next time I’ll start with 1/2 cup and save the rest for sprinkling if it needs more browning.

  54. User avatar basementDweller says:

    3 stars
Mine burned a little on top because I forgot to rotate the dish. Still tasted good though—just a little too toasty.

  55. User avatar Anna Conda says:

    5 stars
Made this tonight and it’s seriously tasty—crispy top, cheesy garlic flavor, and the lemon really brightens it up. 30 minutes was perfect for me.

  56. User avatar buster.west says:

    2 stars
I thought this would be better, but it was kinda bland. Not my fave. 🙁

    1. 3 stars
I totally get what you mean! I had high hopes too. Maybe a little more seasoning next time could help? 🤷‍♀️

    2. User avatar grayce.rowe96 says:

      4 stars
I actually thought it was delicious! Maybe you just didn’t mix it enough? 🤔

  57. User avatar Spider Worker says:

Super easy and quick! 10/10 recommend for a party!

  58. User avatar cornelius.mayer17 says:

    4 stars
Only gave 3 stars cuz i burned the top lol. But when i remade it and watched it, it was way better. Simple recipe, forgiving too.

  59. User avatar MAGA2024.Trumpster says:

    3 stars
Not gonna lie, I expected more flavor from all that Parmesan but it’s kinda basic. Like good, but not wow. Maybe add a pinch of chili flakes or more garlic?

    1. User avatar Hillman Hunter says:

      4 stars
Totally get what you mean—this one’s more “toasty and savory” than super punchy. A pinch of chili flakes or a little extra garlic would definitely wake it up.

  60. 5 stars
Made this tonight—so simple and the breadcrumb topping actually gets that nice golden crunch. I used fresh garlic and it smelled amazing while baking. Definitely adding it to my repeat list.

  61. User avatar Loonquawl and Phouchg says:

    3 stars
I tried it exactly as written. The topping didn’t crisp much—more like a soft crumble. I wonder if jarred artichokes were too wet. Still tasted fine though.

  62. 5 stars
This was sooo good! I didn’t even like artichokes before this!

  63. User avatar brad.hermiston2013 says:

    5 stars
I’m skeptical about breadcrumbs without any liquid, but wow—golden and flavorful. The lemon + garlic combo really pops.

    1. 3 stars
Hmm I tried something similar and mine got kinda dry… next time I might add a splash more oil or a little butter. Still taste was good tho. 😅

    2. User avatar carman.gutkowski29 says:

      5 stars
I’m also skeptical, but the oil + lemon juice definitely helps everything stick and brown. I’ve made it with jarred artichokes and it comes out great.

  64. User avatar lucille.runolfsson96 says:

    4 stars
The instructions are clear, but I feel like 25 minutes is short for thicker layers. Next time I’ll go closer to 35 so the top gets properly crunchy.

    1. User avatar NAFO.SUPREMACY says:

      5 stars
I agree—if you’ve got a thicker layer, 25 minutes can be a little too optimistic. I usually bump it to around 35 and it browns way better.

  65. User avatar lenita.klocko says:

    3 stars
I dunno about this…Artichokes are kinda gross. But my friend said it tasted good.

  66. User avatar tissues_with_issues says:

    5 stars
Made this tonight—super easy and the topping gets nicely golden. I added a little extra lemon zest and it really brightened it up.

  67. User avatar tissues_with_issues says:

    4 stars
Tasty, but I think it needs a little more garlic (or maybe I just love it). Also mine browned a bit too fast around minute 23, so I’d watch it closely.

  68. User avatar Frost Atronach says:

    5 stars
This tastes kinda fancy for how simple it is. I used jarred artichoke hearts and drained them extra well so it didn’t get watery.

    1. 3 stars
Sounds good but 400°F for 30 minutes feels like too long? I tried something similar once and the breadcrumbs dried out. Also I didn’t have Parmesan so I used shredded mozzarella… wasn’t the same. Still, nice idea though.

    2. User avatar nicolas.cruickshank says:

      5 stars
Totally agree—this gives “I spent all day on it” vibes. I did the same thing with the jarred artichokes and it came out not watery at all. That lemon + garlic combo really pops.

  69. User avatar salena.walker45 says:

    4 stars
Pretty tasty, but mine came out a bit dry after 30 minutes. Next time I’ll try broiling for the last 2-3 minutes instead of baking longer.

  70. User avatar michal.lind says:

    3 stars
Not bad, but I think 1 cup breadcrumbs is too much for only 14 oz artichokes. I had lots of topping and not as much artichoke coverage.
