Vegan meatloaf is a hearty, flavorful dish that proves comfort food doesn’t need to rely on animal products. It captures the essence of a traditional meatloaf while embracing plant-based ingredients, resulting in a satisfying meal that is both nourishing and familiar. Perfect for family dinners, holiday gatherings, or meal prep throughout the week, this dish brings together a wholesome blend of vegetables, legumes, and grains to create a texture and flavor profile that stands proudly on its own.
The foundation of a good vegan meatloaf often begins with lentils, beans, or chickpeas. These legumes provide the protein and substance that give the loaf its hearty feel. Combined with grains such as oats, rice, or quinoa, they form a base that holds together beautifully while still maintaining a tender bite. To enhance flavor, sautéed onions, garlic, carrots, celery, and mushrooms are frequently added, offering depth and a touch of sweetness. Herbs like thyme, sage, and rosemary bring a savory note that recalls the flavors of traditional meatloaf, while soy sauce, tomato paste, or nutritional yeast can be used to enrich the umami factor.
Texture is key, and this is where thoughtful preparation shines. Mashed beans provide binding power, oats or breadcrumbs add structure, and vegetables bring moisture. The balance of these components ensures the loaf holds its shape yet remains pleasantly tender when sliced. Topped with a tangy glaze, often a mix of ketchup, balsamic vinegar, and a hint of maple syrup, the loaf develops a glossy finish and a sweet-savory punch that ties everything together.
One of the best things about vegan meatloaf is its versatility. It can be enjoyed hot out of the oven as the centerpiece of a meal, paired with mashed potatoes and gravy, or roasted vegetables. Leftovers make excellent sandwiches the next day, especially when served on crusty bread with fresh greens and extra glaze. It’s also a forgiving recipe, easily adapted to suit personal preferences or whatever ingredients are on hand.
More than just a plant-based alternative, vegan meatloaf is a dish that embodies comfort and creativity. It celebrates the depth and variety of plant-based cooking, offering a meal that is satisfying, flavorful, and welcoming to all eaters, vegan or not.

Quick and easy recipe! Just what I needed for a weeknight dinner. Will make again!
This sounds delish! I love how simple it is. Can’t wait to try it myself!
This is the best vegan meatloaf I’ve ever tried! So flavorful and filling.
I was skeptical at first, but this turned out pretty good! My non-vegan friends even liked it.
Doesn’t look like meatloaf to me. More like a veggie brick. LOL.
I think it looks great! Meatloaf can be healthy and delicious without meat. 😋
Not a fan. It tasted weird and the texture was off. I guess lentils aren’t for everyone.
Why would you replace meat with lentils? Disgusting.
Sooo good! I loved how it actually held together. Definitely a keeper!
Too many veggies! Just want meat, why bother with lentils? 🤷♂️
But you can add more meat if you want! Just don’t think its vegan then 😅
I actually added some chili powder for a kick. It made it so much better! Highly recommend tweaking it!
Chili powder sounds awesome! I’ll definitely try that next time!
Not gonna lie, I was skeptical about lentils + breadcrumbs, but the thyme and oregano combo is solid. Next time I’ll grate the carrot finer for more even texture.
Tried it once and won’t make it again. The lentils just didn’t sit right with me. Maybe I’m just not a vegan person.
I’m not vegan but I like trying meat-free meals. This one is good, and my family didn’t complain. That’s rare 😂
This is surprisingly comforting. The lentils make it feel “meaty” enough, and the ketchup top is a nice classic touch. I did add a splash more soy sauce because I like it saltier.
Delicious! Even my meat-loving husband ate it all! 10/10 would recommend.
Glad to hear that! Meat lovers can be picky. I might try this recipe myself!
Not gonna lie, I was skeptical about lentils + breadcrumbs, but it works. I served it with mashed potatoes and gravy and everyone went back for seconds.
YAWN… where’s the flavor? This was dry and boring. Sorry, but not worth the time. 🙁
I made this and it actually tastes like comfort food. The lentils + breadcrumbs give a really nice texture, and the ketchup top is a must.
Yes!! I tried it last week and it totally scratched that comfort-food itch. The lentils + breadcrumbs combo is the key—didn’t expect it to hold together so well. I also kept the ketchup topping thicker and it got nice and tangy. 😄
Hmmm I liked the idea but mine came out kinda dry. I’m guessing I used too many breadcrumbs or undercooked the lentils? Also I forgot the ketchup top at first (oops) and then added it halfway—still tasted okay though. Might try adding a bit more onion or celery next time.
So easy to make, but kinda bland. I think it needs more seasoning. Might try adding some hot sauce next time.
I followed it exactly, but I think my oven runs hot—top got dark before it was “heated through.” Still ate it though, not gonna lie.
Oof, that’s exactly the “runs hot” problem. Next time I’d tent it with foil after the top darkens, and maybe start checking at ~45 min. Still sounds tasty though!
350 and 1 hour but if it gets dark fast… maybe the breadcrumbs are thicker? I’d lower the temp like 325. Also ketchup on top could burn quicker, so put it halfway? Idk but good you still ate it 😅
Not bad, but I think I prefer my regular meatloaf. This is too healthy.
I totally get that! I miss the juicy meat in a traditional meatloaf too. But have you tried adding some spices? Might help! 😄
This vegan meatloaf is not meatloaf! It ain’t the same without the meat! Just stick to the good old recipe.
This is good but I’d change the ratio—1 cup breadcrumbs felt like too much, it made it more like a slice than a loaf. Could use more ketchup inside or less breadcrumbs.
This is the best meatloaf I’ve ever had! Even my non-vegan friends loved it. Definitely making it again!
I’m so glad you liked it! It’s nice to hear it was a hit with non-vegan friends too!
I was skeptical about using lentils, but this recipe rocked! I added some chili flakes for extra kick. Yum!
Why would you ruin a classic meatloaf like this???
I don’t understand why anyone would want to make a meatloaf without meat. This doesn’t taste good at all.
Just okay. I added some veggie broth and it helped a bit, but I think it just ain’t for me.
This vegan meatloaf is amazing! I didn’t think it would taste so good but it was a hit with the whole family. Thanks for the recipe!
Looks easy, gonna do it. 1 hour tho seems a bit long—hope it doesn’t dry out.
Yummy 😋
Just did it without garlic. It was ok, not really special but filling.
Tried this tonight—turned out really flavorful and the texture was spot on. I didn’t even miss meat. Definitely making it again!
I tried something like this before and it came out bland. If the soy sauce is strong enough, though, maybe it’ll be better. Any idea on salt? (Also, ketchup topping is a must 😂)
This came out kinda dense for me. I think I overpacked the loaf pan? Also my oven runs hot, so I probably should’ve checked earlier than 1 hour.
Okay but why is it always lentils lol. Still, the smell while baking was amazing. I’ll try adding mushrooms next time to boost umami.
The ketchup topping is a nice touch. I added a little extra thyme because I’m that person, but overall it followed the recipe well and came out great.
Can’t believe this is vegan! My husband didn’t even notice, nice. 👍
I love this recipe! Thank you for sharing! 😍
I’m so glad you love it! It’s one of my favorites too! 😊
Oh wow. I made it for my carnivore dad and he asked for seconds. I’m calling it a success even if he won’t admit it’s vegan 😅
This is the best vegan meatloaf I’ve ever made! So tasty and easy to follow, thank you!
Very easy to make! I added some mushrooms and it was delicious. Next time I might throw in some spices for extra flavor.
Eh. Tastes kinda bland. Like I could’ve just made lentils with bread crumbs. Maybe my oven runs hot or I under-salted? Idk. Won’t be my go-to.
I dunno, it’s just not the same as my grandma’s meatloaf. Sorry.
I get that! Nothing beats grandma’s cooking. But have you tried adding more spices? Sometimes that’s all it needs!
I’m not vegan, but this smelled amazing. The thyme and oregano combo tastes “meaty” in a weirdly good way. Will make again.
I forgot to let it cool and cut into it immediately… and it basically fell apart like soup. Lesson learned: patience matters. Tastes amazing once cooked properly!
Mine came out a bit dry even though I baked the full hour. I wonder if my lentils were too dry after draining. Maybe I’ll add a little extra ketchup or some mushroom sauce next time.
Disagree: ketchup on top is weird. Like why not a glaze? I still ate it tho…
Mmm… what can I say, I enjoyed it! But I might throw in some spices next time.
Spices sound like a great idea! I love a kick in my meatloaf. What else do you think you’ll add?
I dunno, I’m not really into lentils. Can you taste them? Is it mushy or what?
Why is there no flax egg or binder? It’s lentils + breadcrumbs so it’s fine, but I expected it to be more sliceable without messing with it.
Good question—lentils + breadcrumbs actually act as the binder here. Pressing it firmly in the loaf pan helps a lot too. If you want it more sliceable, chilling it after baking (even 15–30 min) usually does wonders.
Tastes healthy, but give me real meat any day.
I made it last night, but it didn’t hold together very well. Maybe too many veggies?
Followed the recipe pretty much exactly and it held together well. Next time I might chop the celery smaller so it cooks through more evenly, but flavor is great.
Can I use chickpeas instead of lentils? Asking for my friend.
Tried this tonight—my loaf actually held together! The ketchup topping is a nice classic touch. I used extra garlic because… well, garlic.
Love hearing it held together! 😄 The ketchup topping really makes it feel like classic meatloaf. Extra garlic is always the right choice—more flavor, no regrets.
Made this tonight and it actually tastes like “meatloaf” to me—comfort food win. The lentils hold together great after baking.
This looks amazing! Can’t wait to try it out. I love lentils!
Solid recipe, but 1 cup breadcrumbs felt a little dry to me. Next time I’ll add a splash more soy sauce or maybe some veggie broth to bind better. Otherwise, super tasty!
Totally agree—1 cup breadcrumbs can make it feel a bit dry, especially since lentils don’t always hold moisture the same way. A splash of soy sauce or a spoon of broth in the mix would likely fix it. Glad you still liked it!
Followed it pretty much exactly, but mine was a little dry. Next time I’ll add a splash more soy sauce or maybe extra ketchup in the mix.
This was surprisingly good! Definitely didn’t expect it to taste this nice.
I agree! I was shocked too. Didn’t think lentils could taste this good in a loaf.
Hmm, really? I tried it but thought it was a bit bland. Maybe I messed up the spices?
Good but too much celery for my taste. I’ll use less next time.
Meh, too mushy for my taste. I prefer my meatloaf to have more texture. 🙁
I get what you mean! It’s hard to replicate that classic meatloaf texture with lentils. Maybe try adding some nuts or seeds next time for crunch?
Not gonna lie, I was skeptical about lentils as a meatloaf base, but the loaf held together and sliced nicely. Ketchup topping is a classic for a reason.
I cooked the lentils, drained them, and it still came out kinda mushy for me. Maybe I packed the loaf too lightly?
Thyme + oregano combo works! Smells amazing while baking. I used fresh garlic and it tasted brighter.
Yummy! Even my non-vegan friends thought it was decent! I might try it with BBQ sauce next time instead of ketchup.
Meh, I don’t get why people like lentils so much. It just tastes like mush.
I think I did it wrong… I used uncooked lentils (oops). It was not the move. Still, the ingredient list seems solid if followed correctly.
It was too mushy for my taste. I might add more breadcrumbs next time.
Yeah, I found it mushy too! I added some extra veggies, maybe that was my mistake.
Adding breadcrumbs sounds like a good idea! It was actually pretty good for me. 🤷♀️
This sounds super cozy—love that it uses lentils instead of fake meat. I’d probably add a little smoked paprika for depth, but the base is already solid.
Mine was a bit dry after an hour, but I think I packed the lentils too tightly and didn’t drain well. Added a splash of water and it improved. Flavor is good though.
I followed it exactly. The loaf held together fine, but the seasoning felt a little flat. Next time I’ll add black pepper and maybe smoked paprika.
Not gonna lie, I burned the top a little because my oven runs hot. But even with that, it smelled amazing. Cooling before slicing helps a lot.
Meh. My loaf didn’t slice neatly—more like it crumbled. I’m sure I did something wrong, but I won’t lie, I won’t make it again soon.
I made this last night and it actually came out really “meaty” in texture. The thyme + oregano combo is perfect. I only swapped in smoked paprika because I had it—still great.
So good! ❤️ Quick and easy vegan meal, I’m making it again!
Glad you liked it! It’s my go-to for a quick dinner. 👍
Oven at 350°F? Seems a bit high, don’tcha think? What if it burns? 🤔
Who knew you could make meatloaf without meat? This is witchcraft! LOL
It’s not witchcraft, it’s just creative cooking! Can’t wait to try this vegan version! 🌱
Pretty solid, but I think the bake time might vary a lot by pan size. Mine needed like 10 more minutes to get golden all the way through.
So easy to make and really healthy! I added some peppers too! 🌶️
Easy to make, but my loaf cracked when I sliced it. I pressed it “firmly” though… not sure if I undercooked it or if the breadcrumbs were too coarse.
I’m very skeptical about vegan versions of meatloaf. How does lentils even compare to meat? 🤔
Lentils? Seriously? Not sure how that can even compare. Meat is meat! No way this can taste good. 🤷♂️
I used to think that too, but lentils actually have a nice texture when cooked right! Give it a try, you might be surprised! 🍽️
This is the best vegan meatloaf I’ve had! I served it with mashed potatoes and the whole family went back for seconds (including the picky one).
Vegan? I thought this was a meatloaf… lol who knew?
Haha, right? Vegan meatloaf sounds like a contradiction, but it’s really tasty!
I followed the recipe but it came out too dry… Maybe add more ketchup or something?
I had the same issue! I think more ketchup or even some vegetable broth could help add moisture. Definitely gonna try that next time!
Simple and delicious! My kids even liked it, and they hate veggies usually!
That’s awesome! I always struggle to get my kids to eat veggies. Gonna try this recipe soon!
Really? My kids would never eat lentils, they only like meat. Not sure this will work for us!
I don’t know about this… meatloaf and vegan shouldn’t be in the same sentence. 🤔
I was skeptical too at first, but vegan meatloaf can actually taste really good! The lentils give it a nice texture. 🌱
I don’t like lentils. Can I use beans instead? Anyone tried it? 🤷♂️
I made this but swapped the lentils for black beans because that’s what I had. Still yummy!
I added some mushrooms and it turned out great! Flavor is on point.
Mushrooms? That’s interesting! I’ve never thought to add them to meatloaf before. I might give it a shot next time.
Tried this tonight—pretty solid comfort food. I used 1 tbsp extra ketchup and it came out nice and hearty. Will make again!
So easy to make! My kids loved it, thank you!
Looks good, but my family doesn’t like lentils… I think I’ll pass on this one.
I’m so glad to hear your kids enjoyed it! It’s a great way to sneak in some veggies. 😊
Mine was a bit dry after an hour. Maybe my lentils were too dry or I packed the loaf too hard. Still tasty though, and the flavor held up.
I was skeptical at first, but this turned out pretty good! I think next time I’ll add some mushrooms for extra flavor.
Yikes, who eats meatloaf without meat? Not for me.
I don’t know about this one, I prefer my meatloaf real 🙄.
Simple and healthy! My kids even liked it, which is saying something.
That’s awesome! It’s always a win when kids eat healthy food. What else do you usually make for them?
Really? My kids refuse to eat lentils, but maybe I’ll give this a shot. Did they actually like it tho?
The ingredient list is simple, but the flavor is kinda flat unless you salt/taste. Maybe my soy sauce was low-sodium. I’d adjust next time.
Yeah, I agree—lentils + breadcrumbs can be a little bland if the seasoning isn’t quite there. I usually add more soy sauce (or a pinch of salt) after tasting the mix before baking.
This turned out delicious! Even my meat-loving husband liked it. ❤️
Really? A meatloaf with no meat? Sounds weird. How could it possibly taste good? 🤔
That’s awesome! I’m glad your husband liked it! It’s hard to please meat eaters sometimes. ❤️
Why is ketchup on top? Shouldn’t it be mixed in? 🤔
I think it’s just for the look? But mixing it in could be yummier!
Mine came out kinda dry and crumbly even though I pressed it down. Maybe my lentils were too dry? Next time I’ll add a splash of water or more ketchup.
I’m skeptical about lentils + breadcrumbs being “meatloaf” but wow… it actually works. Next time I’ll try adding mushrooms for more umami.
Vegan? No way I’m eating that, gimme the real deal! 😒
