Mozzarella Arancini are delicious Italian rice balls stuffed with mozzarella cheese, breaded, and fried to golden perfection. These make a delightful appetizer or snack, perfect for any occasion.

Ingredients
  

  • 200 grams risotto rice such as Arborio or Carnaroli
  • 100 grams mozzarella cheese cut into small cubes
  • 2 tablespoons grated parmesan cheese freshly grated
  • 1 large egg lightly beaten
  • 100 grams breadcrumbs for coating
  • 500 ml vegetable oil for frying
  • 1 dash salt to taste
  • 1 dash black pepper to taste

Instructions
 

  • Cook the risotto rice according to package instructions until al dente, then allow it to cool slightly.
  • Stir in the grated parmesan cheese, salt, and pepper to the rice, then form small balls with a cube of mozzarella in the center of each.
  • Roll each rice ball in the beaten egg, then coat with breadcrumbs.
  • Heat the vegetable oil in a deep fryer or large saucepan to 180°C (350°F).
  • Fry the rice balls in batches until golden brown and crispy on the outside, about 4-5 minutes.
  • Remove and drain on paper towels. Serve warm.
