Vanilla Ice Cream

April 25, 2025

There’s something incredibly comforting about a scoop of classic vanilla ice cream. With its rich, creamy texture and delicate, sweet flavor, vanilla ice cream is the ultimate dessert staple- perfect on its own, or as the finishing touch to pies, cakes, and just about anything warm from the oven.

What makes a great vanilla ice cream isn’t just the flavor- it’s the quality of ingredients. Real vanilla bean or pure vanilla extract gives it that signature floral aroma and warm depth that artificial flavorings just can’t match. Whether you’re making it at home or choosing a store-bought version, look for brands or recipes that use whole milk, heavy cream, egg yolks, and real vanilla. These simple components create a custard base that churns into the soft, luscious texture everyone loves.

One of the best things about this ice cream is its versatility. It’s the ideal partner for warm desserts like brownies, fruit crisps, and molten chocolate cakes. It turns a basic cup of coffee into an affogato, adds richness to milkshakes, and becomes the perfect foundation for sundaes, floats, or banana splits.

Homemade ice cream can also be customized easily. Add a swirl of peanut butter, crushed cookies, caramel ribbons, or even a splash of bourbon for a more grown-up twist. And for those who like texture, toss in toasted nuts or chocolate chips right at the end of churning.

Even with all the exotic and trendy flavors available today, vanilla ice cream remains a timeless classic—a flavor that speaks to nostalgia, simplicity, and pure indulgence. It’s not boring—it’s beautifully basic, allowing every other element on your plate to shine.

So whether you enjoy it in a cone on a summer day, sandwiched between cookies, or as the star of your favorite sundae, vanilla ice cream is proof that sometimes the simplest things really are the best.

Yum! Perfect for hot days. I added chocolate chips to mine, and it was AMAZING!

Why do you need salt in ice cream? Seems weird to me. Didn’t really taste the difference. I’ll stick to store bought!

  3. 4 stars
I made this with my grandma and it was fun! We didn’t have an ice cream maker, so we just froze it without churning. Still tasted good 🙂

  4. User avatar deon.schinner68 says:

    3 stars
Not bad, but I prefer the store-bought version. It just works better for the lazy people like me.

    1. User avatar tory.schmeler47 says:

      5 stars
Homemade is so much better! You just gotta put in a little effort. Store-bought is just full of chemicals!

  5. User avatar Lumberjack says:

I messed up and used unsweetened almond milk. It was an interesting experiment, let’s just say that…

    1. 2 stars
Unsweetened? That sounds… odd. I wouldn’t risk it, maybe just stick to what the recipe says next time.

    2. User avatar cheryl.watsica1990 says:

      4 stars
I did that once, too! Almond milk just isn’t creamy enough for ice cream. But hey, at least you tried something new! 😄

  6. 5 stars
This is the best vanilla ice cream recipe I’ve ever tried! It came out super creamy and delicious. My kids loved it!

  7. User avatar Lumberjack says:

I get it! Making ice cream seems daunting, but it’s super fun! You should give it a try sometime. 😄

seriously? just milk and cream with sugar? ice cream is not that easy.

  11. User avatar darron.kling19 says:

    2 stars
Just made it. It’s too soft! Did I do something wrong?

    1. User avatar Grady Lehner says:

      2 stars
Soft? More like liquid! Did you even churn it? Ice cream should be solid.

    2. User avatar odis.gutmann1956 says:

      4 stars
Maybe you didn’t freeze it long enough? I typically leave mine for a day just to be safe.

  14. User avatar lon.klein says:

Too much cream, not enough flavor. Needs chocolate or something.

  15. User avatar archie.larson16 says:

vanilla ice cream sux. Who cares about a plain flavor? I like fancier stuff like cookie dough or mint chocolate 🙄.

This ice cream is sooo good! I never knew making it could be this easy. My family loved it!

  17. User avatar drew.bailey says:

So good!!! Tastes just like my mom’s ice cream! Going to make this every week!

  21. User avatar rey.wisoky98 says:

    4 stars
Is it really that simple? I thought making ice cream was more complicated.

    1. 5 stars
Yep, it’s super easy! I was surprised too, but wow, homemade ice cream is the best!

  22. User avatar victor.dare says:

    4 stars
Delish! I made it without an ice cream maker and just whipped it by hand. Still turned out great!

  23. User avatar alissa.walker99 says:

    3 stars
I don’t really get why it needs so much sugar. Can’t you just use less?

  24. 3 stars
I had to change a few things, like using almond milk. It was okay but not as creamy. 🤷‍♀️

    1. User avatar marketta.thompson29 says:

      2 stars
Almond milk?? That ain’t gonna be creamy! You really should’ve stuck to whole milk for the real deal. 🙁

  25. User avatar cleotilde.heaney says:

    4 stars
Hmm, I wonder if you could use coconut milk instead? Anyone tried it?

  26. User avatar vicente.hill1963 says:

    1 star
I tried this without an ice cream maker and it didn’t work. 😩

  27. User avatar darryl.brekke says:

    3 stars
I tried it but it wasn’t sweet enough for my taste. I think it needs more sugar. 🤔

    1. User avatar Cammar Pilru says:

      4 stars
I think you’re right! A bit more sugar could make it perfect. I usually add a bit more when I make it! 😊

  28. User avatar dagny.lebsack says:

    5 stars
All the ingredients are perfect! Vanilla ice cream forever!!!

  29. User avatar judy.daugherty says:

    1 star
You don’t need an ice cream maker, just freeze any mix and it’s ice cream, right?

  30. User avatar jena.ondricka50 says:

    2 stars
I’m not a cook but this seems too easy to be true. Does it really work? 🤔

  31. User avatar dave.mueller89 says:

    3 stars
I dunno, it was OK but too sweet for my taste. Maybe cut down the sugar?

  32. 4 stars
Honestly super easy. The only thing is I had to dissolve the sugar a bit longer than the recipe said, but otherwise it was great.

  33. User avatar terminatorXYZ says:

    2 stars
I don’t have an ice cream maker. Can I just freeze it in a bowl?

    1. User avatar taisha.wisoky13 says:

      5 stars
Yeah, you can freeze it in a bowl! Just stir it every 30 minutes or so to keep it creamy. Works for me!

  34. User avatar stewart.huel56 says:

    5 stars
OMG I can’t believe how easy it was! I’m never buying ice cream again! 🍦

  35. 5 stars
Made this last night and it turned out super creamy! I chilled everything well and the vanilla flavor is exactly what I wanted.

    1. 3 stars
I tried it once but mine was kinda icy? I didn’t think the chilling mattered that much. How long did you chill the cream/milk—like, overnight or just a bit?

    2. 5 stars
Yes!! Chilling really makes a difference—I’m glad it came out super creamy for you. Vanilla ice cream is so worth the effort.

  36. User avatar steve_maga says:

    1 star
Ugh, I forgot to chill my bowl! Now I have to wait longer! 😒 How do I fix it?

    1. User avatar garland.walsh says:

      2 stars
Why do you need a cold bowl anyway? Just mix it! 😜

    2. 4 stars
You can try putting the bowl in the freezer for a little while! Should help it chill faster. Good luck! 😊

  37. User avatar latisha.lindgren51 says:

    2 stars
Doesn’t taste like real ice cream! I’ve had better from the store. 🤷‍♂️

    1. User avatar liberal.hero says:

      2 stars
Honestly, I prefer the store stuff too. But maybe you’re just not a fan of vanilla? 🤷‍♀️

    2. 4 stars
I think it depends on how you make it! I love homemade ice cream and it’s way better than store-bought, maybe give it another try?

  38. User avatar edith.keeling60 says:

    4 stars
Pretty good base recipe. I’d just add a little extra vanilla next time (like another 1/2 tsp) because mine tasted a bit mild.

  39. User avatar nicki.schamberger1 says:

    3 stars
It was okay, but kinda sweet for my taste. I think less sugar would be better.

    1. 4 stars
I totally agree! I found it a bit too sweet too. Maybe I’ll try reducing the sugar next time.

  40. User avatar mel.konopelski55 says:

    5 stars
I made this with my kids and we had a blast! They’re now ice cream chefs!

  41. User avatar Pit Wolf says:

    5 stars
I’m not usually an ice cream person but this tasted like the classic stuff from an old diner. Perfectly sweet and not icy.

  42. User avatar leisha.waters1978 says:

    5 stars
5 stars!!! My kids kept sneaking bites 😂 The only change I made was adding a splash of extra vanilla at the end.

    1. User avatar Leto Atreides says:

      5 stars
Love this! 😂 Glad the vanilla tweak worked out—mine never tastes “vanilla-y” enough unless I’m a little heavy-handed too.

  43. 4 stars
Easy to make, but I think it could use more vanilla flavor. Maybe I’ll add more next time!

    1. User avatar agustin.lowe93 says:

      5 stars
More vanilla for sure! I think I might add some vanilla beans next time too.

  44. User avatar emmanuel.kutch20 says:

    5 stars
Made this with my kids and they loved it! Fun project and yummy dessert!

  45. User avatar Random Dent says:

    2 stars
I don’t have fancy measuring spoons and I might’ve used too much salt (oops). Still tasty, but I could taste it. Otherwise good base recipe.

  46. User avatar ivan.mills says:

    4 stars
Wow 4 hours and done? I don’t know, seems too simple—still, it tastes legit.

  47. 5 stars
Made this last night, and it’s gone already! Even my picky kid loved it!

  48. User avatar Ivory Cremin says:

    1 star
Vanilla? Boring! Where’s the chocolate? Ice cream needs chocolate!

  49. User avatar han.padberg says:

    4 stars
Yum yum! Can’t believe I made my own ice cream! Can’t wait to try different flavors!

    1. User avatar marion.schulist says:

      5 stars
That’s awesome! Homemade ice cream is the best! What flavor are you thinking of trying next?

  50. User avatar ALTplusF4 says:

    4 stars
I was skeptical about using no eggs, but it still tastes rich. Next time I’ll reduce sugar slightly because it’s a touch sweet for me.

    1. User avatar jimmie.vonrueden72 says:

      5 stars
That’s awesome! I’m with you on the no-eggs part—sounds wrong at first, but the texture from the cream really carries it. Reducing the sugar is such a good tweak; even 2–3 tbsp less can make a big difference for sweetness.

  51. User avatar Frost Atronach says:

    3 stars
I dunno. Can this really be called ice cream without eggs? Seems off.

    1. 5 stars
Actually, you don’t need eggs for ice cream! Many recipes are egg-free and still delicious. This one sounds great.

    2. User avatar Danika Jaskolski MD says:

      3 stars
I thought ice cream had to have eggs too. Guess I’m out of touch! But I might try this if it’s good.

  52. User avatar Falmer Gloomlurker says:

    5 stars
This is the best recipe I’ve ever tried! My family loved it!

    1. 5 stars
I’m so glad to hear that! Ice cream really is a family favorite. Did you add any toppings?

    2. User avatar wm.leuschke1985 says:

      2 stars
Best? Really? Seems kinda basic to me… I mean, just cream and sugar right? But whatever floats your boat.

  53. 5 stars
This was the best ice cream I’ve ever made! So creamy and rich. Absolutely loved it!

  54. User avatar Wispmother says:

    5 stars
This is the best vanilla ice cream I’ve ever made! So creamy and delicious! 😋

  55. 2 stars
Ehh. Mine came out kind of icy. I blame the ice cream maker (it’s old), not the recipe… I think.

    1. User avatar basementDweller says:

      4 stars
That’s frustrating 😕 But if your maker’s old, yeah—could totally cause the texture to turn icy. Next time, maybe churn a bit longer and make sure the bowl is *fully* chilled.

  56. User avatar bennett.prohaska says:

    4 stars
So easy! I added some chocolate chips to it and it turned out amazing!

  57. User avatar georgann.reichert7 says:

    4 stars
I used coconut milk instead, turned out great! Just a bit different flavor. 🌴

  58. 3 stars
It was ok, but kinda too sweet for my taste. Next time I’ll reduce the sugar.

  59. User avatar archie.renner40 says:

    5 stars
This is the best vanilla ice cream recipe I’ve ever tried! So creamy and delicious! 🍦

    1. 2 stars
Not sure about this… Doesn’t seem like there are enough flavors for vanilla ice cream. 🤔

    2. 5 stars
I tried this and it turned out great! But I added some chocolate chips, and it was even better! 😋

  60. User avatar Margot Fenring says:

    3 stars
Vanilla is fine, but I wish it had more vanilla. Maybe I got a weak extract? Still tasty though.

  61. User avatar argelia.kuhn30 says:

    2 stars
Mine turned grainy 😕 I followed it but maybe I didn’t whisk long enough for the sugar to dissolve. Will try again.

  62. User avatar Ford Prefect says:

    5 stars
    vanilla is life

  63. User avatar noel.shields93 says:

    4 stars
I accidentally used almond extract instead of vanilla. Still tasted great!

  64. User avatar wesley.kub19 says:

    5 stars
Wow, this tastes way better than store-bought. Also, so easy—my kids couldn’t stop eating it.

  65. User avatar chester.gerlach25 says:

    5 stars
    Yummy! 🍦

    1. User avatar roxanna.beier94 says:

      5 stars
Absolutely love it, can’t wait to try! 😍

  66. User avatar Ms. Clyde Homenick says:

    4 stars
Not bad for homemade. The texture was good, but mine was a bit too sweet—could reduce sugar to 2/3 cup? Just my preference.

  67. User avatar Barrett Schowalter says:

    2 stars
Whisked according to steps, churned for like 20 minutes, then froze overnight. Still, it turned out more like gelato than classic ice cream. Is that normal?

  68. User avatar huey.kemmer says:

    5 stars
Tastes great but I added chocolate chips and it was even better! Just a tip!

  69. User avatar Andria Stroman says:

    1 star
Isn’t this just glorified whipped cream? I don’t get the hype.

  70. 2 stars
Why freeze 4 hours though? Mine should be ready faster 😅 Vanilla is good but texture meh.

  71. User avatar mario.pacocha says:

    5 stars
Made this last night and it’s insanely creamy. The vanilla flavor is spot on—definitely going into my regular rotation. I chilled the base a bit longer and it turned out even better.

  72. 3 stars
I dunno, seems kinda basic. Where’s the fun in plain vanilla? 😕

    1. User avatar Grìma Wormtongue says:

      3 stars
But basic is good, ya know? Some people just love the pure taste of vanilla!

    2. User avatar Tricia McMillan says:

      4 stars
Vanilla is classic! You can always add toppings or mix-ins to jazz it up. 🍦

  73. User avatar Bowerick Wowbagger says:

    4 stars
Easy peasy! I just added some crushed cookies in the mix and it was yum! 🍪

  74. User avatar milagros.carroll89 says:

    5 stars
OMG, this is the best ice cream I ever had!! Way better than store-bought!

  75. 4 stars
This is basically just dairy + sugar, so I didn’t expect much, but wow it actually turned out better than store-bought.

  76. User avatar jewell.kreiger2000 says:

    3 stars
Mine came out a little icy even after 4 hours. I think my freezer runs warmer—next time I’ll freeze longer and chill the bowl/mixture more.

  77. 4 stars
Great recipe, but I think 4 hours is too long to wait! Who wants to wait that long?!

  78. User avatar alaine.turcotte says:

    5 stars
This turned out super creamy and smooth! The vanilla flavor is really nice—not too sweet either. I let it freeze a full 6 hours and it was perfect.

    1. 5 stars
Yes! “Creamy and smooth” is exactly what I was hoping for. I also like it after a longer freeze—6 hours really makes it scoopable.

    2. User avatar cassy.hermiston71 says:

      3 stars
I tried it but I think I let mine freeze 2 hours only and it was kinda icy. Maybe next time I’ll be patient like you—also I used vanila extract (oops). Still tasty tho!

  79. User avatar athena.lesch says:

    3 stars
2 cups cream is too much for me. Can you use skim milk instead?

  80. User avatar kina.dickens says:

    5 stars
My kid kept saying “ice cream soup” lol because it was soft at first. But after the 4+ hours it firmed up and everyone loved it.

  81. 5 stars
Easy recipe, and it actually worked in my ice cream maker on the first try. I used vanilla bean paste instead of extract and it was amazing.

  82. User avatar Oolon Colluphid says:

    2 stars
Vanilla? Boring. There are so many better flavors. Why not chocolate or strawberry?

  83. User avatar Draugr Death Overlord says:

    3 stars
Pretty good, but mine came out a little icier than I expected. Next time I’ll chill the base longer before churning.

    1. User avatar Mountain Minish says:

      4 stars
Oh nice! I’ve had that “icier” problem too—usually it’s the churn time or not enough fat once it freezes. Chilling the base longer sounds like a solid fix.

    2. 3 stars
Wait—chill longer before churning? I always chill like 10 min and it’s fine. Maybe your milk wasn’t full fat? Or you over-freezed it after? I dunno, but good tip!

  84. User avatar malik.johnson says:

    4 stars
Easy instructions, and my sugar dissolved pretty quickly. I did add an extra splash of vanilla just because I like it strong, but overall great.

    1. User avatar lola.hahn says:

      5 stars
Totally agree—when the sugar dissolves quickly it usually means the base is smooth from the start. Glad your vanilla flavor held up too!

    2. User avatar emelia.oconnell46 says:

      4 stars
Nice! I always worry about grainy ice cream though 😅 Did you whisk by hand or use a mixer? I might need to do that “extra splash” thing next time.

  85. User avatar quiana.cartwright54 says:

    3 stars
Not bad, but it felt a little bland to me. I think adding a tiny bit more vanilla or even a pinch of nutmeg would fix it. Also, my ice cream maker took way longer than the instructions I’m used to.

    1. User avatar garfield.kertzmann says:

      5 stars
Totally agree—mine needs a little extra vanilla too. I usually go 1 1/2 tsp vanilla instead of 1 tbsp and it makes a huge difference.

  86. 4 stars
Super simple, but I think 4 hours is too short. I froze it overnight and it was way firmer and smoother.

    1. User avatar herman.kirlin37 says:

      5 stars
Totally get it—mine is never truly scoopable at only 4 hours either. Overnight freezing definitely gives that firmer, smoother texture. Great tip!

  87. User avatar Steve Yundt says:

    4 stars
My sugar took forever to dissolve in step 1, so I whisked longer and warmed the bowl slightly. Still delicious though!

  88. 2 stars
Couldn’t I just put it in the freezer without the machine? seems like extra steps

    1. User avatar lawrence.wisoky60 says:

      4 stars
You *can* freeze it, but it won’t turn into the same creamy texture. The machine helps churn in air and slows down ice crystal formation—without it you’ll get more like icy, semi-frozen custard.

  89. User avatar zenia.luettgen42 says:

    1 star
This recipe is a fraud. Ice cream needs eggs to be real ice cream!

  90. 5 stars
This recipe is so simple and delicious! I can’t believe I made ice cream at home. Thank you!

  91. 3 stars
I followed the recipe exactly but my ice cream came out too hard! What did I do wrong?

  92. User avatar CTRLplusW says:

    5 stars
OMG this is so good! Pure vanilla bliss! Will make again for sure!

  93. User avatar Oolon Colluphid says:

    3 stars
Followed the recipe exactly. Turned out okay I guess.

Plain vanilla done right. Tastes like the real deal from an ice cream shop. I’ll definitely make this again.

I followed everything exactly and it tasted great, but the texture was kind of soft after freezing. Maybe my freezer is too cold or my churn time was short.

Not gonna lie, I’m skeptical about needing only salt and vanilla for “homemade” vanilla ice cream. But wow—simple does the job.

I get your skepticism 😄 but vanilla + cream is basically the whole point. The churn/freezing does most of the “magic.”

Tbh I was like “no eggs? no custard?” but we tried it anyway—pretty good. Only thing I add is a pinch more vanilla cuz the recipe vanilla feels light.

I don’t have an ice cream maker, so I tried freezing and stirring. Still tasty, but not the same texture—more like frozen custard-ish bits.

Mine turned a little icy after freezing. I followed the churn time though, so not sure if it was my freezer or I should chill the base longer before churning.

Weird, mine turns icy only if I rush it. If the base isn’t super cold, it won’t aerate right. I’d chill the base overnight, and make sure your container in the freezer is really cold.

That sounds like it could be the freezer temp or how fast it froze. I’d also try chilling the base longer—sometimes 4+ hours in the fridge helps a lot before you churn.

Isn’t vanilla just too plain? What’s wrong with chocolate?

I tried it but mine turned out really icy. What did I do wrong?

I followed it exactly and it worked! The texture was nice—like, not too hard, not too soft. Would make again.

Nice! Glad it turned out perfectly—mine usually swings between rock-hard and too soft, so your texture description is reassuring. 😄

I don’t have an ice cream maker… can I just freeze it and stir every hour? Or is that not really the same?

I used vanilla extract “pure” like it says. Not gonna lie, I thought it would be bland but it’s actually really flavorful.

Tried this tonight and it came out super creamy. The vanilla flavor is spot-on and not artificial at all. Definitely making it again!

Nice! I tried a vanilla once and it turned icy, so 4 hours in the freezer isn’t enough for me… do you let it churn longer or freeze it longer? Also, I only had “vanilla flavoring,” not extract 😅

    2. 5 stars
That’s awesome to hear! I love when the vanilla tastes real—makes such a difference. Did you use pure vanilla extract (not imitation)?

My ice cream maker bowl was frozen but I think I didn’t churn long enough. It was softer than expected. Still ate it, no regrets.

Soft ice cream is still ice cream 😄 But I’d add that sometimes 4 hours in the freezer isn’t enough to get “real firm.” I usually do overnight so it’s scoopable.

    2. 5 stars
That happens! If it didn’t firm up, it’s usually either the churn time or the temperature not staying cold enough. Next time, make sure the bowl is *fully* frozen and don’t stop the machine early.

The salt amount feels tiny, but it actually balances the sweetness. I was skeptical, not gonna lie. Good call.

I tried this and it came out icy… like basically milk ice. I swear I followed it, but I only froze it like 2 hours. Guess that’s on me. Still, disappointing.

  108. 4 stars
Pretty good, but mine wasn’t as sweet as I expected. I used “pure vanilla” and followed the steps exactly. Maybe my sugar wasn’t dissolving fully—took longer than usual.

Made this last weekend—so creamy and smooth. I used real vanilla and let it churn a full 25 minutes. Totally hits the spot.

I whisked everything and it tasted great before churning, but after it froze it lost some flavor. Next time I’ll taste the base after cooling and adjust vanilla.
