Tabbouleh is a vibrant and refreshing salad that hails from the Middle East, renowned for its light, herbaceous flavors and nutritious ingredients. This dish is a wonderful balance of finely chopped vegetables, fresh herbs, and bulgur wheat, all dressed in a tangy lemon-olive oil vinaigrette. Tabbouleh is often enjoyed as a side dish, but it can also be served as a main for lighter meals, especially during warm weather.
The base of tabbouleh consists of bulgur wheat, which is soaked in water or broth until it softens, giving the salad a pleasant chewy texture. The bulgur is complemented by an abundance of fresh herbs, parsley being the star ingredient, along with mint, which adds an aromatic layer of freshness. Finely diced tomatoes and cucumbers provide a crisp and juicy contrast, while onions (often green onions) contribute a mild, savory flavor.
What sets tabbouleh apart is the use of lemon juice and olive oil to dress the ingredients, providing a zesty and slightly tangy finish that ties the flavors together. A pinch of salt and a dash of pepper are added to enhance the freshness of the salad, but the lemon and herbs are the dominant flavors. Tabbouleh can also be customized to taste with additional ingredients like garlic or pomegranate seeds for a touch of sweetness.
This salad is not only flavorful but also packed with nutritional benefits. Bulgur wheat is high in fiber, which aids digestion, while the fresh herbs provide a good dose of vitamins and antioxidants. Tabbouleh is naturally vegan, gluten-free (if made with gluten-free bulgur), and low in calories, making it an excellent option for anyone seeking a healthy and refreshing dish.
Tabbouleh can be served as part of a mezze platter, as a side dish with grilled meats or fish, or enjoyed on its own as a light lunch or dinner. Its fresh, bright flavors make it a versatile and crowd-pleasing addition to any meal.

I think there’s too much parsley. I’m not a fan of herbs in general.
I think the parsley gives it a fresh taste! Maybe you could try using less next time?
What’s wrong with parsley? It’s like, the main thing in tabbouleh! You gotta embrace the herbs!
I didn’t have mint, so I used basil instead. Still turned out great!
Are you supposed to cook the bulgur? I just poured hot water and it was weird consistency. Help!
I accidentally used dried mint instead of fresh. Kinda ruined it but still edible.
Ew. The mint ruins everything. No thanks.
More like ‘taboo-lee’ for me, I didn’t like it. 😒
Easy recipe! I added some cucumber for crunch. Yum!
Cucumber sounds like a great idea! I never thought of adding it. Will try next time!
Absolutely loved it! Fresh and flavorful, perfect for summer. Will make again!
Not much flavor. I added some garlic next time, but it still wasn’t great.
Nice blend of flavors! I added some feta cheese because I love it. Will make again for sure!
Sounds good but isn’t tabbouleh supposed to be without cheese? I don’t know…
I also added feta once, it really takes it to another level! Good idea!
This recipe was so refreshing! I used more mint than suggested and it turned out perfect. 5 stars!
I’m glad to hear you enjoyed it! Mint really does make a difference. I usually add extra too, it gives a nice kick! 🌱
I don’t get the hype around tabbouleh. It just seems like salad to me. But if you liked it, that’s cool I guess.
Made this for lunch today—so fresh and bright. The lemon + herbs combo is spot on. I let it chill a couple hours and it tasted even better.
Yes!! Chilling really makes the lemon taste pop and the herbs get mellow. I do the same—so good for lunch.
This tabbouleh recipe is fantastic! The fresh herbs make all the difference. I will definitely make it again.
I totally agree! The fresh herbs really take this dish to the next level. Can’t wait to make it again too!
I made this and my kids loved it! They’ll eat anything green now!
I was skeptical about bulgur, but this was surprisingly good!
I’m glad you tried it! Bulgur really is great once you get past the skepticism. It’s super healthy too!
1 cup of bulgur? Is that even enough? I would need 3 cups for my family!
1 cup is just right for a side dish, but you could always double the recipe if you need more for your family!
Pretty solid. I used fine bulgur and it absorbed the water fast, but the flavor was still great. Next time I’ll chop everything a bit smaller for a better texture.
Bulgur? I thought it was rice. Why all the fuss about this?
Bulgur and rice are different. Bulgur is better for salads like tabbouleh! It’s super healthy.
I dunno, man. Rice is rice, right? What’s so special about this bulgur stuff?
Why not use lemon zest? It adds flavor!!!
Is this supposed to be served warm or cold? 🤔
Good, I guess.
Tabbouleh? Isn’t that some sort of soup?
Why do people put mint in tabbouleh? It doesn’t belong!
I don’t get the hype about tabbouleh… Seems overrated to me. Was just ok. 3 stars.
LOVE IT!!! This is exactly like what my grandma used to make. So nostalgic!
Good recipe but I used quinoa instead of bulgur… close enough?
I thought bulgur was couscous!? Kind of confusing. Anyway, easy recipe, but I prefer rice salad. 2 stars.
Why is there so much parsley? It overpowers everything. Less is more.
Yumm! My grandma used to make this all the time when I was a kid. Brings back memories! 🙂
That sounds amazing! I love recipes that remind us of family. Tabbouleh is so fresh! 🌿
I’ve tried making it, but it never tastes right. What am I doing wrong? 😕
I don’t like bulgur, is there a substitute? My friend said quinoa could work?
