Spring spinach and egg skillet is a light yet satisfying dish that’s perfect for breakfast, brunch, or even a quick weeknight dinner. With fresh, tender spinach, rich eggs, and a burst of seasonal flavors, this skillet meal is packed with nutrients and quick to make. It’s a great way to get your greens in and enjoy a delicious, wholesome meal in under 30 minutes.
To begin, heat a tablespoon of olive oil or butter in a large skillet over medium heat. Once the oil is hot, add fresh spinach leaves. A generous handful of spinach will quickly wilt down, so don’t be afraid to pack it into the pan. Stir the spinach occasionally, allowing it to cook for 2-3 minutes until it’s fully wilted and tender.
Once the spinach is cooked, season it with salt, pepper, and a pinch of garlic powder or fresh minced garlic for added flavor. Garlic brings a savory note that enhances the freshness of the spinach without overpowering it. For extra brightness, you can also squeeze in a bit of lemon juice or zest to bring out the vibrant flavors of the spring vegetables.
Now, create little wells in the spinach with the back of a spoon. Crack an egg into each well, making sure not to break the yolks. Depending on how you like your eggs, cover the skillet with a lid and let the eggs cook for about 3-5 minutes, or until the whites are set but the yolks remain runny. For firmer yolks, leave the skillet on the heat for a few extra minutes until the eggs are cooked to your liking.
Once the eggs are cooked, sprinkle a handful of grated Parmesan or crumbled feta cheese over the top for a bit of richness and flavor. If you prefer a more robust flavor, you could add a few slices of avocado or a handful of cherry tomatoes to the skillet. A drizzle of olive oil or a sprinkle of fresh herbs like parsley or basil will also elevate the dish and give it an even fresher, more vibrant finish.
Serve the spring spinach and egg skillet directly from the pan for a rustic and comforting meal. This dish pairs wonderfully with a slice of whole-grain toast or a side of roasted potatoes to round out the meal.

Whats the point, this is just scrambled eggs with some green stuff lol.
Spinach is good but I think it smells funny when cooked. Not for me, I guess. 3 stars.
Yummy!!!
Looks good, but what if someone doesn’t like spinach? Can I sub for something else?
I tried this recipe and it was fantastic! The eggs are just perfect. Thanks for sharing!
This was super easy to make and tasted amazing! I added some feta cheese on top, and it was perfect. 5 stars!
I dunno, the eggs didn’t cook right for me. Stuck to the pan like crazy. I think my skillet is cursed or something. 2 stars.
Skipped the onions, added garlic instead. Better, trust me!
I made this last night, and my kids loved it! Finally a meal they didn’t complain about!
I don’t really trust recipes that use so many eggs. Seems unhealthy to me. How many eggs can you eat?
I get where you’re coming from! But eggs are a good source of protein and vitamins. Moderation is key! 😊
Can I use frozen spinach? Because fresh it’s too expensive right now…
Absolutely, frozen spinach works great! Just make sure to thaw and drain it well before using. It’s actually more convenient for recipes like this!
I don’t know. Fresh spinach is always better, right? But yeah, if frozen’s all you got, I guess it could work. Just be careful with the water.
I tried this but my eggs scrambled. Not sure what I did wrong.
This is such a fresh and quick recipe! Loved the spinach and eggs combo. Will make again!
Seriously? 4 eggs? Too much cholesterol! I’ll stick to just one egg next time.
I get your concern about cholesterol, but eggs can be a good source of protein! Just balance it out with veggies. 👍
It was okay, but I think I should hav’e added more spices. Felt a bit bland.
Skipped the tomatoes and added bell peppers, turned out great! 🤗
Delicious! Felt like I was eating in a fancy restaurant. So colorful!
I’m so glad to hear that! It really does look fancy! I can’t wait to try it myself.
Looks easy, but can it really be that good? I doubt my family will like it.
This skillet was so easy to make and tasted amazing! I added some feta cheese for extra flavor.
Sounds delicious! Feta is a great addition. I’m definitely trying this out!
I dunno, seems kinda plain. Where’s the flavor? Just spinach and eggs?
Pretty easy to make, just a little oily for my taste.
Oily? Nah, just right! But what do I know, I ain’t much of a cook. 😅
I totally get that! Maybe try using less oil next time? Or you could drain some off after cooking. Still, love the flavors!
Honestly, I thought this would be better. The eggs ended up overcooked and the spinach was soggy.
I don’t like spinach. Can I use kale instead? 🤔
I added some feta cheese and it was AMAZING! So good! Best breakfast ever.
Adding feta sounds like a great idea! I bet it adds a nice tangy flavor. I will try that next time!
Gotta say, I’m not a fan of spinach. Why not use kale instead? Wonder if that would work.
I used frozen spinach because that’s what I had—still okay, but I had to squeeze out extra water or it got a little soggy. Flavor was good though.
Honestly I feel like frozen spinach always turns everything gross and watery 😅 Like why not just use fresh? But glad yours tasted good at least.
Good to know frozen works! I always forget it can get watery. Do you squeeze it after thawing, or cook it first a little to dry it out?
This didn’t work for me. The eggs got overcooked. Maybe a cooking time issue?
This took too long to make and the kids didn’t like it. Never making it again! 😡
I’m sorry to hear that! My kids loved it, but maybe they just didn’t like the spinach? 🤷♂️
Not too shabby. Thought it was a bit salty tho.
I had leftover kale, so I used that instead. Still turned out great!
Huh? Cook spinach? I’ve alway just eaten it raw. What’s next? Cooking lettuce? Weird!
Wait, is cooking spinach really a thing? Seems kinda silly to me. I always just toss it in salads.
Cooking spinach brings out a whole new flavor! You should try it! Can’t believe you only eat it raw.
I followed it pretty closely, but my eggs took longer than 5 minutes to set (maybe my pan was hotter?). Still tasted solid and looked nice.
That sounds exactly like a pan-temp issue—eggs are super sensitive. If your skillet was running hotter (or the eggs were colder), 5 minutes can definitely turn into 7-9. Glad it still came out solid though!
Not bad, but I think 2 cups spinach feels like a lot and it’ll cook down—ended up a bit watery in my skillet. Next time I’ll squeeze the spinach dry.
Easy to make, but my eggs ended up overcooked! I guess I left ’em too long.
Overcooked eggs happen! Just gotta watch them next time. Maybe try cooking them on lower heat?
I dunno, maybe you need to time it better or use a timer! Eggs kinda tricky sometimes, right?
I tried this recipe but used kale instead of spinach. Didnt turn out the same. Hmm. 🤔
This is such a simple recipe, I made it in like 10 min! So quick!
Wow, 10 minutes? That sounds amazing! I can’t wait to try it myself!
Best eggs I’ve made in a while! I added cheese like a pro.
Spinach is mom’s favorite vegetable! She made something similar but with bacon, I prefer it that way. More flavor.
Bacon would definitely add more flavor! But this spinach dish sounds healthier. Maybe try both? 🤔
Sounds good, I think I’ll try it, but can I substitute avocado for eggs? 🤔
This recipe is so simple and delicious! I added some feta cheese, and it was perfect!
Looks good! But I ain’t got spinach. Can I use kale instead? Or maybe lettuce?
Super easy and the timing worked for me. I did 3 minutes for onion and 3 for spinach, then covered and it came out just right (yolks runny).
Nice! I love when the timing actually matches up. I usually overcook spinach, so your 3+3 approach sounds like a lifesaver—runny yolks are the goal 😄
Hmm I tried something like this once and mine came out watery… maybe I didn’t cover long enough or the heat was too low. How hot was your pan (medium vs medium-high)?
Quick and yummy! I will try it with different veggies next time.
Wow, this was so delicious! Perfect for breakfast! 🍳
