I made this but mine got watery, I think my spinach was too wet. Still tasted good though—next time I’ll squeeze it a bit first. Also is whole wheat toast necessary? Kinda broke the directions, lol.

I’m confused: are we cooking the spinach before the eggs or after? The steps say remove it first, but I stirred mine in while the eggs were still raw and it turned out fine. Maybe I got lucky?

I liked the idea but my eggs turned out a bit dry. Maybe I overcooked after adding the spinach. Still tasted good, just not as soft as I wanted.
Dry eggs… yeah I’ve had that. I think the medium heat was too much for you. Try low/low-medium and keep stirring more often. Also, 4 eggs for 2 cups spinach feels like a lot of spinach—should be okay though. Salt and pepper can dry them out if you go heavy early (maybe).
Ahh that sounds like an overcook situation—eggs keep cooking fast once they start setting. Next time try cooking the spinach just to wilt (maybe 1 min) and then add it in right near the end of the scramble. I also take the eggs off the heat when they’re still a little soft; they finish in the pan/while serving.
Why toast the bread separately? I tried to do it in the skillet at the same time and it got messy. But the egg-spinach combo tastes great—just keep it organized.

Totally get that—spinach can get watery if you don’t cook it down enough. I usually press mine with a spoon after wilting, but cooking a bit longer like you did makes sense too.

Wow, “pat of butter” is vague 😅 but I improvised and it worked. Texture was fluffy, spinach was not soggy. Would recommend.
Why does it say spread butter on the toast AND cook eggs with butter/oil? Too much butter. I used olive oil and skipped extra butter—still good!
This was one of those ‘I can’t believe how easy this is’ recipes. Salt/pepper at the end made a huge difference. 10/10 for weekday breakfast.
Love that it’s quick—2-3 minutes for the spinach is realistic. I also like that you don’t overcomplicate it. Toasting the bread at the end is the move.
