Ingredients
  

  • 1 pound Italian sausage casings removed
  • 1 tablespoon olive oil extra virgin
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 4 cups chicken broth low sodium
  • 1 package gnocchi 16 oz
  • 1 cup spinach fresh
  • 1/2 cup heavy cream optional

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add the sausage, breaking it up into pieces, and cook until browned.
  • Add the diced onion, minced garlic, sliced carrots, and celery to the pot. Saute until the vegetables are tender.
  • Pour in the chicken broth and bring to a boil. Add the gnocchi and cook until they float to the top.
  • Stir in the spinach and cook until wilted. Season with salt and pepper to taste.
