  • 1/2 cup light corn syrup
  • 1/4 cup butter unsalted
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon orange food coloring gel
  • 12 pieces green candy melts or green licorice for pumpkin stems

Instructions
 

  • Place popped popcorn in a large bowl.
  • In a saucepan, combine sugar, corn syrup, butter, and salt. Cook over medium heat until mixture comes to a boil. Continue to boil for 2 minutes, stirring constantly.
  • Remove from heat. Stir in vanilla extract and food coloring until evenly mixed.
  • Pour the hot syrup over the popcorn, stirring until the popcorn is coated evenly.
  • Let the mixture cool slightly. Using buttered hands, form the coated popcorn into ball shapes.
  • Press a green candy melt or piece of green licorice into the top of each ball for the stem.
  • Allow popcorn balls to cool completely before serving.

    I don’t get why it says to let it cool slightly—mine cooled too much and the syrup started to harden while I was shaping. Lesson learned: move fast!

      Maybe don’t let it cool at all? I’d just pour it right away and start forming like immediately. I tried that once and it worked better—though mine was kinda sticky, lol. Also 2 minutes boil feels a bit long? Not sure.

      I made these once but my syrup never got thick enough… I think I only boiled like 1 minute? The color gel also weirdly turned darker for me. Still, the idea of pumpkin stems is cute though. Maybe next time I’ll do the full 2 minutes.
