Place popped popcorn in a large bowl.
In a saucepan, combine sugar, corn syrup, butter, and salt. Cook over medium heat until mixture comes to a boil. Continue to boil for 2 minutes, stirring constantly.
Remove from heat. Stir in vanilla extract and food coloring until evenly mixed.
Pour the hot syrup over the popcorn, stirring until the popcorn is coated evenly.
Let the mixture cool slightly. Using buttered hands, form the coated popcorn into ball shapes.
Press a green candy melt or piece of green licorice into the top of each ball for the stem.
Allow popcorn balls to cool completely before serving.
