Instructions
In a large pot, heat olive oil over medium heat. Add the sausage, breaking it up into pieces, and cook until browned.
Add the diced onion, minced garlic, sliced carrots, and celery to the pot. Saute until the vegetables are tender.
Pour in the chicken broth and bring to a boil. Add the gnocchi and cook until they float to the top.
Stir in the spinach and cook until wilted. Season with salt and pepper to taste.
If using, stir in heavy cream and heat through. Serve hot.
