    400°F for 40 minutes felt a little short for my potatoes. After 40 they were still slightly underdone in the middle, so I roasted 10 more minutes and they finally crisped.

      Dry?? Hmm. I think 40 min at 400 is kinda long for my oven, and I’d start checking at 30. Also make sure you use fresh rosemary and not too much salt, that can draw moisture out. Mine usually comes out crisp though.

      I’ve had that happen too if the pieces are too big. Cutting closer to 3/4-inch and roasting on a preheated sheet helped make them crispier for me. Also, don’t overcrowd the pan—space matters.
