Mushroom Stew

October 23, 2025

Mushroom stew is the kind of dish that feels like a warm hug in a bowl, earthy, rich, and deeply comforting. It’s the perfect meal for chilly days when you crave something hearty but simple, something that fills your kitchen with savory aromas and your table with cozy satisfaction. Packed with tender mushrooms, fragrant herbs, and a flavorful broth, this stew proves that you don’t need meat to create depth and comfort.

At the heart of any good mushroom stew is, of course, the mushrooms. Using a mix of varieties – cremini, shiitake, oyster, or porcini, brings a wonderful range of textures and flavors. They’re sautéed until golden and slightly caramelized, which concentrates their umami essence and forms the base of the stew’s rich flavor. The addition of onions, garlic, and a splash of wine (red or white, depending on your mood) enhances that earthy depth and gives the dish a touch of elegance.

As the stew simmers, vegetable or beef broth melds with the mushrooms, herbs, and spices to create a deeply savory sauce. Fresh thyme, bay leaves, and a bit of black pepper add warmth and fragrance, while carrots or potatoes can be added for extra heartiness. A spoonful of tomato paste or soy sauce enriches the flavor, giving it that satisfying, slow-cooked taste even if you’re short on time.

The result is a stew that’s both rustic and refined – thick, aromatic, and bursting with layers of flavor. A final sprinkle of fresh parsley or a swirl of cream adds brightness and contrast, making every bowl visually inviting.

Serve it with a side of crusty homemade bread, creamy mashed potatoes, or a fluffy scoop of rice to soak up all that rich sauce. Mushroom stew works beautifully as a main course or as a side to roasted meats, but it easily stands on its own as a vegetarian delight.

Deeply savory, comforting, and full of texture, mushroom stew is the kind of dish that reminds you how simple ingredients can transform into something extraordinary, the perfect way to warm both body and soul.

It was okay, but I think it needs more spices. Maybe a little cumin or paprika would help.

30 mins? Really? I dunno… Seems like it would take longer than that, especially with all the chopping. 🤔

Don’t worry, kids can be picky! You might try adding some more colorful veggies next time or serve it with bread. They’ll love that!

  12. 2 stars
I dunno…it tasted kinda bland. I expected more from the mushrooms.

    1. 5 stars

This turned out cozy and flavorful—browning the mushrooms made a huge difference. I used a little extra thyme and it was perfect.

    1. User avatar Michael83 says:

      5 stars
Totally agree—browning the mushrooms is the whole secret. I’ve tried it without that step and it just tastes flatter. Extra thyme sounds like a great call!

Not gonna lie, I was skeptical about using flour like that, but it actually works. The texture ended up smooth and hearty. Great weeknight meal.

    1. User avatar trista.breitenberg13 says:

      5 stars
Totally felt the same way—flour can sound weird in stew—but browning/sautéing it for a bit really helps. I used it last time and it thickened nicely without tasting like paste. Great pick for busy nights!

    2. User avatar savanna.labadie50 says:

      3 stars
I tried this before and my stew turned a little lumpy even though I stirred. I think the trick is to whisk the flour with the broth first or add it more slowly. Still, mushrooms + thyme is always a win.

  23. 5 stars
I made this for a potluck and it disappeared quickly, lol. So good!

    1. 5 stars
Glad to hear it was a hit! I’m making it for my family this weekend. Any tips?

  24. User avatar ShanksOnePiece says:

Mushrooms? Yuck! I hate them, but my boyfriend loves it. I guess it’s okay for him, but I won’t be joining him.

  25. User avatar julius.jenkins45 says:

    3 stars
I followed it pretty closely but my stew got a bit too salty. Maybe I should’ve measured the salt instead of “to taste,” whoops.

  26. User avatar Don Rogahn Sr. says:

    3 stars
This is 4 stars, but I’m gonna give it 3 just to be fair. I made it for my family, but they didn’t like mushrooms. What a waste!

Stew is too heavy for summer. I’ll save this for winter. ☃️

    1. User avatar Arthur Dent says:

      4 stars
I totally get that! Stew feels more cozy in the winter. 🌨️ But you could try a lighter version in summer with less broth!

    2. User avatar Michael83 says:

      3 stars
Nah, stew ain’t just for winter! It’s good anytime if ya ask me. Just add some herbs for freshness!

  28. User avatar brant.walter97 says:

    5 stars
This recipe is amazing! I added some spinach as well, it turned out great! Definitely a keeper!
