Mexican meatloaf is a flavorful twist on the classic comfort food, blending traditional meatloaf ingredients with bold Mexican spices and ingredients for a dish that’s both familiar and exciting. It’s hearty, satisfying, and ideal for weeknight dinners, family meals, or gatherings where you want to serve something comforting with a bit of a kick.
Instead of relying solely on breadcrumbs and ketchup like in the traditional version, Mexican meatloaf introduces elements like cumin, chili powder, and smoked paprika to infuse the meat with warm, spicy depth. Chopped onions, garlic, and green chilies add texture and a punch of flavor, while corn, black beans, or diced tomatoes can be mixed in for a bit of moisture and variety.
Cheese is another welcome addition. Shredded cheddar or Monterey Jack folded into the meat mixture creates gooey pockets of richness, while a thin layer of cheese melted on top during the final minutes of baking gives the loaf a golden, bubbly finish. Some recipes even feature a spicy salsa glaze in place of traditional ketchup, which caramelizes beautifully in the oven and adds tang and heat.
Ground beef is the most common choice, but turkey or a blend of beef and pork works well, too. Eggs and breadcrumbs (or crushed tortilla chips for extra flavor) help bind everything together and give the loaf structure.
One of the best things about Mexican meatloaf is how versatile it is. Serve it with a side of Mexican rice, a fresh green salad, or roasted vegetables. Leftovers are excellent sliced into sandwiches, tucked into tortillas for quick tacos, or crumbled into scrambled eggs.
Whether you’re trying to liven up a weekday dinner or want something cozy but different, Mexican meatloaf delivers. It’s everything you love about the original, with an irresistible twist that adds color, spice, and personality to your plate.

Good stuff, but it takes too long to cook. Where’s instant meatloaf?!
Why is there ketchup on meatloaf? Just use BBQ sauce. Smh.
Yuck! Not what I expected. Meatloaf should not have salsa in it. I wouldn’t serve this to guests.
Nah, I like my meatloaf plain. Salsa in meatloaf just don’t make sense, not for me. Stick to the classics!
I actually think the salsa adds a unique flavor! It’s not traditional, but it’s different. Give it a try before writing it off!
I wasn’t sure about the salsa in meatloaf, but it turned out pretty good. I might try adding some corn next time.
Salsa in meatloaf? Really? That don’t sound right. I doubt it would be good. 🙄
Adding corn sounds interesting! I usually just stick to the classical flavor but I might just give that a try too.
This recipe is super easy and quick to make! I added a little extra cheese and it was a hit with my fam. 4 stars!
Just made this for dinner, and my whole family loved it! Definitely a keeper!
Can I just say, mixing cheese and meat is a crime against food. 👎
Come on, cheese and meat go together like peanut butter and jelly! This meatloaf sounds delicious! 😋
It was ok, but I think I put too much cumin in. My kids didn’t like it. Next time, I’ll hold back on the spices.
I dont know, but my kids love spices. Maybe they just prefer bland food? 🤷♂️
Totally understand! Cumin can be really strong. I usually start with less and add more if needed. Hope it works out better for you next time!
This meatloaf is amazing! The salsa adds such a nice flavor. I’ll definitely make it again!
Too much cheese for my taste, but my kids loved it. They gonna make me do this again.
Meh, don’t get the hype. It’s just meat with some stuff on it.
I totally disagree! This meatloaf looks so flavorful with all those spices. It’s not just meat, it’s a fiesta on a plate! 🌮
Followed it exactly and it turned out juicy. The spice level was just right for us. Next time I might sneak in some jalapeños for more kick.
This meatloaf is just okay, taste kinda different from what I’m used to.
Meatloaf?! More like meatloaf of my dreams! Yummy, spicy, and satisfying. Coming back for more! 5 stars.
Yum! I love spicy and this hit the spot! Will share the recipe!
Meatloaf? In Mexico? LOL. This is like a Tex-Mex thing, right? Still, it was pretty tasty.
Haha, I never thought of meatloaf as a Mexican dish, but this sounds good! I’m definitely giving it a try.
Meatloaf? Why not just make tacos? It’s not that complicated. But I guess some people like this fusion stuff.
I don’t know about using salsa in meatloaf… kinda weird. My grandma would not approve.
Just another meatloaf. Nothing special here. Sorry but I expected more flavor.
Easy and tasty. Five stars!
Can you use turkey instead of beef? My wife loves turkey and I’m just curious. Thanks! 3 stars for now.
I don’t know… I like traditional meatloaf better. This just feels wrong to me.
Meatloaf? Mexican? Confused but willing to try. Got 2 stars for creativity.
I think it’s a fun twist! Meatloaf can be boring, but adding salsa and cheese sounds great! Can’t wait to try it.
Fantastic recipe! I added some jalapenos for a kick. Super delicious! 🌶️
This looks like a fun twist on classic meatloaf—salsa + cheese is definitely the move. Gonna try it with extra cilantro and maybe some jalapeños for heat.
I dont have red onion, can i use white? Also does it really need cilantro?
Yes, white onion will work just fine! And cilantro adds a fresh kick but if you don’t like it, just leave it out. It’s still gonna be tasty!
Simple and delicious! I added some jalapeños for a kick, turned out great!
Ok but how come the ketchup don’t look flashy in the picture? Just throwing it out there. 🤔 3 stars.
Yum! The best meatloaf I’ve ever tasted! Gonna make this every week! 🥳
Great twist! I used ground turkey instead, and it still turned out good. Thanks!
Mine took a little longer than 1 hour to hit 160°F. Could be my loaf pan is deeper? Either way the flavor was worth waiting—cilantro and onion really show up.
I followed it pretty much exactly and it came out juicy. I used Monterey Jack because that’s what I had and it still worked. Next time I might add jalapeños for more heat.
I didn’t have salsa, so I used tomato sauce instead. It was a total disaster!
Pretty good but I think it needs more salt overall. Also 1 cup bread crumbs feels like a lot—mine was a bit tight and firm, not super tender. Still ate it all though.
Meatloaf? I thought this was a taco recipe. 🤷♂️
Mine came out a little dry. I think my breadcrumbs were too dry or the pan was too small. Still ate it though—ketchup-brown sugar sauce saved the day.
If your pan was smaller, it’ll cook faster on the outside and dry out inside. Did you check temp with a thermometer? 160°F is key.
Mine too! I think it was the breadcrumbs as well—next time I’ll toast them less or add a splash more salsa/egg. That sauce sounds amazing though.
Easy to make but I think I added too much chili powder. 🔥 Next time I’ll tone it down.
This was delicious! The flavors are amazing. My family loved it! 😍
I’m so glad to hear you loved it! It’s a family favorite around here too! 😋
meatloaf yummm! 😋
What even is this?? Meatloaf with salsa? Sounds weird. I stick to the classic recipe. 🤷♂️
I think it sounds kinda good! Mixing cultures like that can be fun. Give it a shot! 🌮🍽️
This is the BEST meatloaf I have ever made! The salsa adds such a great kick. Going to make this every week!
This is such a fun twist on classic meatloaf—salsa + cumin makes it taste like dinner has a passport. The ketchup/brown sugar glaze is a little sweet but in a good way. Will definitely make again.
This was sooo good! The spices were just right.
I made this and it was fantastic! The flavors were just right, really hit the spot.
I dunno, seems like too many spices for a meatloaf. Meatloaf should be simple right? 🤷♂️
I’m skeptical about the Worcestershire in the ketchup mix. Mine came out a little too tangy, but I can see it working if you’re into that sort of thing.
My meatloaf fell apart when I sliced it. Must’ve mixed it too much?
Ehh, it turned out kinda dry. Next time I’ll add more salsa or maybe some BBQ sauce.
So. Delicious. Can’t believe how easy this is! Will make again!
Meh… it tasted kinda like regular meatloaf but with extra stuff. The topping was good though. I’m not sure cumin and paprika together did much for me.
Totally get that—mine also reads a lot like “regular meatloaf + salsa topping” until you really taste the seasoning. I do think cumin + paprika can go either way depending on brand and how fresh they are.
Easy recipe! My kids loved it and that’s saying something! Will be trying it again for sure!
I’m allergic to cilantro, can I use parsley instead? Hope it still tastes good.
Yes, parsley should work fine! Just remember it has a different flavor than cilantro, but it will still taste good. Enjoy your meatloaf!
Just okay. Nothing special, honestly. I prefer plain meatloaf.
Easy to make! My whole fam loved it! Will def make again.
Ketchup + brown sugar + Worcestershire is an odd combo… but also kinda genius? I’m torn. Flavor was interesting, just not “wow” for me.
I get the hesitation—Worcestershire threw me too the first time I saw it. But the sweet + tang balance really makes the chili flavors pop. “Wow” for me, anyway 😄
meh… meatloaf is meatloaf. too many spices for my taste. I guess it’s okay with salsa but I wouldn’t serve it to guests.
I liked it, but I think next time I’ll dial back the salt a bit. Also mine took closer to 70 minutes to hit temp. Still, the rest time helps a lot for clean slices.
This meatloaf is fantastic! So much flavor, and the cheese makes it extra good. My family loved it!
I dunno about using salsa in meatloaf. That seems kinda weird. My grandma never did that.
I tried it and it burnt. Not sure if my oven is broken or what. Not good! 1 star.
Maybe your oven temp is off? Try using an oven thermometer next time. The recipe sounds great otherwise!
This is the BEST meatloaf I’ve ever made! So flavorful and moist. I’m making it again next week!
My husband loved this! He said it was a keeper. I used ground turkey instead of beef, still great!
Not bad, but I think 1 cup bread crumbs is a lot—mine felt kind of dense. Next time I’ll cut it down or use panko.
