      Yeah, that totally tracks—if it simmered longer the potatoes can break down and the thickness can get out of hand. I’d definitely add a splash more broth (or even a little water) before blending, and stop the boil after it’s simmering.

      Totally agree—milk at the end is the move. If it overheats it can split/curdle, and then the texture gets weird fast. I heat through on low and keep an eye on it.
