Delicious and festive Italian cookies inspired by panettone bread

Ingredients
  

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 2 eggs large,
  • 1 tsp vanilla extract
  • 1/2 cup candied fruit peel
  • 1/2 cup golden raisins
  • 1/4 cup powdered sugar for dusting

Instructions
 

  • In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the candied fruit peel and golden raisins.
  • Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes, or until the edges are golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes. Transfer to a wire rack to cool completely.
  • Once cooled, dust the cookies with powdered sugar.
