  • Reduce heat and let simmer for 5 minutes.

      I think the bitterness comes from the cinnamon itself. Maybe try using less or a different kind? Ceylon is more mellow! Good luck!

      Ceylon cinnamon is definitely better! It has a sweeter taste and is way healthier. Regular cinnamon can have some coumarin which is bad for the liver if you eat a lot of it. So yeah, just stick with Ceylon!
