  • 2 cups cherry tomatoes
  • 1/2 cup black olives
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp thyme dried
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • Basil leaves for garnish

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Place the feta cheese in a baking dish.
  • Arrange the cherry tomatoes and black olives around the feta cheese.
  • In a small bowl, combine the olive oil, minced garlic, dried oregano, dried thyme, red pepper flakes, salt, and pepper. Mix well.
  • Drizzle the olive oil mixture over the feta cheese, tomatoes, and olives.

    I followed it mostly, but I used low-fat feta and it didn’t get that golden look. Flavor was decent, just not the same texture. Would try full-fat next time.

      Dang, I tried this once with low-fat too and it was kinda watery. Next time I’m using the regular feta, and maybe squeeze the tomatoes a little so it doesn’t steam.

      Good note! Low-fat feta usually won’t brown the same—full-fat has more fat to crisp up a bit. I’d also bake a couple extra minutes if it looks pale.

    I used kalamata olives and it was salty enough that I barely added any extra salt. If you’re using milder olives, you might need the full “to taste” seasoning.
