If you’re a fan of mac and cheese (and who isn’t?), you’re about to fall in love with this twist on the classic dish. Mac & cheese stuffed zucchini brings together the creamy, cheesy goodness we all crave, with the freshness and lightness of zucchini. It’s the ultimate comfort food, with a little bit of a healthier spin.
The star of this dish is, of course, the zucchini. When hollowed out, its tender, mild flavor provides the perfect vessel for holding the creamy mac and cheese filling. Zucchini is a great way to cut down on carbs while still enjoying all the richness of mac and cheese. It’s an ideal option if you’re looking for a way to satisfy your comfort food cravings without going overboard.
The mac and cheese itself is just like the classic, you’ve got creamy cheese, tender pasta, and all the seasonings that make it so irresistible. You can keep it simple with sharp cheddar or go a little fancier with a blend of cheeses like mozzarella, gouda, or parmesan. Whatever you choose, it’s all about that creamy, melty texture.
To make this dish, zucchini halves are scooped out, leaving room for the mac and cheese filling. After a quick bake to soften the zucchini, they’re stuffed with the cheesy pasta, then topped with more cheese (because you can never have enough). A final bake melts everything together into a gooey, golden masterpiece.
Mac & cheese stuffed zucchini is a great side dish for a cozy dinner or a fun way to make a weeknight meal feel a little more special. You could even serve it as a light main course, paired with a simple salad or roasted veggies.
What makes this dish so appealing is how it combines two beloved comfort foods into one: the rich, indulgent mac and cheese and the healthy, fresh zucchini. It’s a meal that feels decadent but leaves you feeling good, and that’s the perfect balance. Try it once, and it may just become your new favorite way to enjoy mac and cheese.

Honestly, this was a total disaster. The cheese didn’t melt right and it was way too watery. Ugh.
Sorry to hear that! I wonder if the zucchini was too watery to begin with? You really gotta squeeze the juice out sometimes.
Ugh, sounds like a mess! Maybe try a different cheese next time? Like gouda! It melts real good, right?
Followed the recipe to the letter and it turned out perfect! The cheese sauce was creamy and delicious.
375F worked, but my zucchini needed closer to 40 minutes to be tender. Might depend on size.
Good call! I’ve found zucchini size really changes bake time—25–30 min is more for smaller halves. 40 min sounds spot on for bigger ones.
Followed the steps pretty much exactly. Sauce thickened nicely, and the breadcrumb topping gave a great crunch. Will make again for sure.
Not gonna lie, I thought zucchini would be watery. Surprisingly it wasn’t. I just made sure to scoop the seeds well.
Same! I always expect zucchini to be watery, but scooping the seeds really helps. This sounds like a great way to sneak mac & cheese into a “veg” situation 😄
I didn’t have cheddar so I used mozzarella and it was… okay? Also I forgot the breadcrumbs and it was less crunchy than expected, but the filling was still good.
I don’t get why people stuff veggies like this. Zucchini is good on its own! Anyone else think its weird?
I totally get you! Zucchini is delish on its own. Stuffin’ it seems like a waste 😕.
Whoa, I think it’s awesome! Mac & cheese in zucchini sounds like a fun twist. Don’t knock it till you try it!
This was so good! My kids loved it. I will definitely make it again!
Super easy to make! I added some bacon bits and it was heaven! Highly recommend!
Delicious and easy! My whole family cleared their plates. Will make it again for sure. Yum! 🍽️
Yum? Really? I found it kinda bland. Maybe I missed something? 🤔
I totally agree! This dish is a hit in my house too. Can’t believe how easy it is. Great recipe! 😍
Not bad, but I think 1 cup of milk is too much for the amount of flour? Mine was a bit runny before I baked. Added extra cheese and it saved it.
Do we really need to use that much butter? Healthier options exist you know.
I gve it a try and it seem like it wasn’t enough cheese
Too much cheese, I think. Had to add more milk to balance it out. Not my favorite.
I actually thought the cheese was perfect! Maybe try a different cheese next time?
Too much cheese? Nah, that’s the best part! Zucchini needs flavor, right?
I’m not sure about the flour step—tastes kinda like gravy? Could be user error, but I’ll try again with less flour next time.
This is such a clever way to sneak in veggies. The cheese sauce came out super smooth and the zucchini actually held its shape—would make again for sure.
Totally agree—this is such a sneaky dinner. I love that the zucchini doesn’t turn to mush, and the cheese sauce being smooth is a big win.
Not sure it’s “mac and cheese” without baking a whole casserole, but the flavor is there and the presentation is fun.
I get what you mean, but honestly this still feels like mac & cheese—just portioned in a fun way. Baking it in the zucchini cups is basically the casserole vibe, no full dish needed. 😄
Quick and easy recipe! Just what I needed for dinner tonight.
This sounds so delicious! Can’t wait to try it tonight. Thanks for sharing!
Yum 😋
I dunno… Zucchini and mac n cheese? Seems weird. I didn’t really taste the zucchini, maybe better without it?
Tried this recipe and it was sooo good! I added some bacon bits and it really kicked things up a notch!
quick and easy. All I had was some old pasta and it still managed to taste nice! Thx!
These were shockingly good—cheesy and comforting but still kinda light. The breadcrumb top is a must.
I added some bacon bits and it made it so much better. Yum!
Followed it pretty much exactly, but mine took closer to 40 minutes for the zucchini to get tender. Still delicious though—cheese sauce is spot on.
Easy to make! Will definitely be making again, thanks! 👍
Really? I thought it looked weird at first but maybe I’ll try it now. 🤔
So glad to hear you enjoyed it! It’s one of my favorites too! 🍽️
Zucchini? more like yuck-chini. Never liked it, but tried this for fun. Not for me.
I actually think zucchini can be pretty tasty in the right dish! This recipe is a fun way to make veggies more appealing, but I get that not everyone likes them. Maybe try a different veggie next time?
I dont get why you would use zucchini instead of pasta… like, why not just make mac and cheese?!
I get what you’re saying, but using zucchini makes it lighter and healthier! Plus, it’s a fun twist. 😋
But like, why not just have pasta? Zucchini’s just water anyway. 🤷♂️
Why bake it that long? Zucchini gets watery and then everything turns sad. I’d rather just cook the zucchini separately and stuff at the end.
I tried this recipe and it turned out pretty good. Just make sure you cook the zucchini long enough!
Glad to hear it turned out good! I always check the zucchinis after 20 mins, just to be safe!
