Totally agree—375° can be a little timid for casserole tops. I usually go 400–425°F and keep an eye on it so it browns before it dries out. Broiling at the end is a great fix!

8-10 min never worked for me either… I do like 15 min and then I also mash more. Boiling time is different for every cauliflower, I guess. Still turns out great.
