Ingredients
  

  • 1 head cauliflower roughly chopped
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese divided
  • 4 slices bacon cooked and crumbled
  • 2 tablespoons chives chopped
  • 1 teaspoon garlic powder
  • to taste salt and pepper

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Bring a large pot of water to a boil. Add the cauliflower and cook until tender, about 8-10 minutes. Drain well.
  • In a large bowl, mash the cooked cauliflower and mix it with sour cream, half of the cheddar cheese, garlic powder, salt, and pepper.
  • Transfer the cauliflower mixture into a casserole dish. Top with the remaining cheddar cheese and crumbled bacon.

      Honestly I’d do 25-30 min just for browning. 375°F is fine, but my cheese always looks kinda pale at 20 min unless I crank it a bit.

      Totally agree—375° can be a little timid for casserole tops. I usually go 400–425°F and keep an eye on it so it browns before it dries out. Broiling at the end is a great fix!

      I’m gonna be that person 😅 I followed it exactly and my top browned fine at 375. Maybe your casserole was bigger/thicker or you didn’t drain the cauliflower enough? 2 minutes broil sounds like it would work though.

      Yep—8–10 minutes is about right, but it depends how big your florets are. I usually aim for “fork-tender,” not fully mushy. If yours was hard, your pieces might’ve been too chunky or the water wasn’t boiling hard the whole time 😅
