Ingredients
  

  • 1 head cauliflower roughly chopped
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese divided
  • 4 slices bacon cooked and crumbled
  • 2 tablespoons chives chopped
  • 1 teaspoon garlic powder
  • to taste salt and pepper

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Bring a large pot of water to a boil. Add the cauliflower and cook until tender, about 8-10 minutes. Drain well.
  • In a large bowl, mash the cooked cauliflower and mix it with sour cream, half of the cheddar cheese, garlic powder, salt, and pepper.
  • Transfer the cauliflower mixture into a casserole dish. Top with the remaining cheddar cheese and crumbled bacon.
