Instructions
Preheat your oven to 375°F (190°C).
Bring a large pot of water to a boil. Add the cauliflower and cook until tender, about 8-10 minutes. Drain well.
In a large bowl, mash the cooked cauliflower and mix it with sour cream, half of the cheddar cheese, garlic powder, salt, and pepper.
Transfer the cauliflower mixture into a casserole dish. Top with the remaining cheddar cheese and crumbled bacon.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Garnish with chopped chives before serving.
