Homemade Fish Fingers

March 7, 2025

Homemade fish fingers bring a level of freshness and satisfaction that store-bought versions simply can’t match. With their golden, crunchy coating and tender, flaky fish inside, they’re a nostalgic comfort food that appeals to both kids and adults. While they might remind you of childhood dinners, these homemade fish fingers are anything but basic. Using fresh white fish like cod, haddock, or pollock, you get a clean, ocean-fresh flavor that truly shines through the crispy exterior.

What makes homemade fish fingers stand out is the texture and the balance of seasoning. A well-seasoned breadcrumb coating adds flavor and crunch without overpowering the delicate fish. You can experiment with herbs and spices — a bit of paprika, garlic powder, or lemon zest in the breadcrumb mixture can elevate them with just a little effort. And by pan-frying, baking, or air-frying them at home, you have complete control over the ingredients, ensuring a lighter and healthier result than most pre-packaged options.

These fish fingers are incredibly versatile when it comes to serving. They’re perfect tucked into soft sandwich buns with lettuce and tartar sauce for a quick fish sandwich. Or you can serve them as a main course with homemade fries, a fresh green salad, or coleslaw on the side. They’re also great for dipping, whether it’s with ketchup, garlic aioli, spicy mayo, or classic tartar sauce.

Perfect for weeknight dinners, lunchboxes, or casual gatherings, homemade fish fingers are easy to make in large batches and freeze well, too. They reheat beautifully, keeping their crisp texture and satisfying flavor. That makes them not just a crowd-pleaser, but a practical choice for busy households.

Whether you’re revisiting a childhood favorite or introducing it to a new generation, homemade fish fingers are a simple pleasure done right. They deliver comfort, crunch, and flavor in every bite.

I tried this recipe and it was ok, but the fish kinda fell apart while frying. I might need to coat them better next time.

Not bad, but I think frozen fish fingers are just as good. Way easier too! 😂

    1. User avatar kelsie.moore says:

      4 stars
But homemade ones taste so much better! You get that fresh vibe. 😊

    2. User avatar rema.macgyver says:

Frozen fish fingers are processed. This recipe is totally healthier, don’t you think?

  3. 5 stars
These were delicious! My kids loved them! I did add some paprika for a kick.

  4. User avatar andrea.leannon57 says:

    5 stars
My kids loved these! Even the picky eater finished them all. Thanks for the recipe!

  5. User avatar edward.corwin2017 says:

5 stars—but I used tilapia and it was fine. Actually I mighta forgot the pepper… still tasty tho. 😅

  6. 3 stars
I followed it exactly and honestly it was okay. Flavor was good, texture was fine, but I expected more crunch with panko. Still, the battering held together well.

    1. User avatar jamie.cole says:

      4 stars
Thanks for being honest! I’ve had the same issue sometimes—if the oil isn’t quite hot enough or they’re overcrowded, the panko can turn a bit more “bready” than crunchy. Next time, try a slightly hotter pan and make sure each batch has space. Still, your results sound like the coating was at least doing its job.

    2. 3 stars
Okay but “extra crispiness” with panko didn’t happen for me either. Maybe my fish was too wet? I squeezed it with paper towels and it helped a little, but not like restaurant crunch. 2–3 min per side also seems kinda short? I’d go by golden brown instead of time.

  7. 4 stars
I loved the lemon zest in the breadcrumbs, added a nice twist! Thanks for the recipe!

  8. User avatar dane.hamill says:

    5 stars
Fish finger heaven! The panko makes all the difference! I’m drooling just thinking about them!

  9. User avatar Spriggan Earth Mother says:

    5 stars
Very easy. My kid helped coat them, and we had a fun time. They actually tasted better than the frozen ones we buy.

  10. User avatar nolan.botsford says:

    3 stars
Why do you need panko?? Normal breadcrumbs work fine, right? Juss saying.

    1. User avatar leonardo.rutherford2010 says:

      5 stars
Panko is way better for that extra crunch! Trust me, you won’t regret it.

2 cm wide strips? I cut mine like… random shapes lol. Still turned out good. Would make again but I’ll measure next time, i guess.

    1. User avatar candy.langworth says:

      5 stars
Haha same here—mine were more like “fish rectangles” than strips 😄 Still, measuring probably helps the cooking time stay consistent. Glad they turned out good!

  12. User avatar sherwood.mueller63 says:

These fish fingers are a game changer! I never knew it could be this easy and crispy!

Hmm, I tried this once and it didn’t come out as crispy. Maybe my oil wasn’t hot enough? Not sure if I’ll try again.

  13. User avatar Great Deku Tree says:

    2 stars
I followed the recipe but they turned out soggy. Maybe I should’ve used more oil? Disappointing.

ehh, they were alright, I’ve had better. Maybe it’s just me?

recipe is pretty good, but do we really need the lemon? Seems like a lot of fuss for just fish sticks.

  16. User avatar Daniell Smitham says:

    4 stars
lol i forgot the lemon zest and they were still good, so that’s bonus points. Will try next time for sure.

Sounds delicious! Spices are a great idea. What kind did you add?

    2. User avatar Flame Atronach says:

      2 stars

Made these tonight—so crispy! The lemon zest in the crumbs is a game changer. I didn’t even miss anything. 😊

  23. User avatar glen.connelly says:

I made these for a potluck and everyone was raving! Super easy and delicious.

  24. User avatar rebbecca.bahringer1969 says:

    3 stars
Honestly, the recipe feels a little too simple—like where’s the garlic? lol Still tasted good though, no complaints.

    1. User avatar kari.marquardt52 says:

      5 stars
Totally get you—garlic would be great. I usually add a little garlic powder (or even minced garlic) into the breadcrumb mix next time. Glad it still hit the spot though!

  25. User avatar thresa.stracke65 says:

    2 stars
Not bad, but I think 200g is too little for the effort. Also I don’t get why lemon zest is needed—seems unnecessary.

    1. User avatar jone.koch42 says:

      4 stars
I get your point about 200g—once you start frying, it disappears fast 😅 But I think the lemon zest is for that subtle fresh flavor and helps cut through the richness of the oil.

    2. User avatar Colette A. Day says:

      3 stars
200g feels small, yeah. And lemon zest? Kinda extra. I usually skip it and just add a bit more pepper/salt. Still turns out fine.

  26. User avatar rickiestmorty says:

    1 star
Fish fingers? More like fish no thanks! Didn’t really like the flavors. Lemony fish isn’t for me.

  27. User avatar suspiciousCommentator says:

    2 stars
I tried it but they ended up soggy. Maybe I didn’t fry them long enough? Not sure about this one.

  28. 4 stars
Super easy recipe! Kids loved it and I felt like a chef. Who would have thought making fish fingers could be this simple!

  29. User avatar clark.haag says:

    5 stars
These fish fingers were a hit with my kids! So crispy and full of flavor. Will definitely make again!

  30. User avatar annis.brekke says:

    2 stars
I dunno, my fish turned out kind of mushy. Maybe I overcooked them? Not sure if I’ll try again.

    1. User avatar nigel.krajcik says:

      4 stars
It happens! Fish can be tricky to cook perfectly. Maybe try a thermometer to check the internal temp next time? Just don’t give up! 😊

    2. User avatar toshia.ziemann says:

      3 stars
Mushy fish? Sounds like you might’ve cooked it too long or at too high a temp. Try a shorter time next time! Good luck!

  31. User avatar debbie.carter1993 says:

    1 star
Too much work for fish fingers! Just buy them frozen, way easier. 😒

  32. User avatar russ.cronin says:

    4 stars
Simple recipe! I added some paprika for an extra kick. Yum!

    1. User avatar gonzalo.spencer20 says:

      2 stars
Paprika? Really? Don’t think that goes with fish, but okay… Sounds weird to me.

    2. User avatar iola.goyette1991 says:

      5 stars
I love that you added paprika! I might try that too. Do you think other spices would work?

  33. User avatar kendall.hagenes23 says:

    5 stars
This is a great way to use up cod. Will definitely keep this recipe!

    1. 3 stars
Fish fingers? Aren’t they just for kids? I guess they could be good. 🤔

    2. User avatar christia.willms0 says:

      5 stars
I’m so glad you found a good use for cod! These fish fingers are super tasty. 😋

  34. User avatar Nicky Purdy says:

    5 stars
These turned out super crispy on the outside and flaky inside. The lemon zest is such a good idea—made it taste brighter than regular fish sticks.

    1. User avatar Spriggan Matron says:

      5 stars
Yes!! I did the same with lemon zest and it totally makes a difference. So crisp on the outside and still tender inside.

  35. User avatar johnnie.macgyver75 says:

    2 stars
Mine stuck to the pan a bit even though I drained on paper towel. I think I crowded the pan. The instructions say batches, but I got impatient 😅

  36. User avatar micah.aufderhar44 says:

    1 star
Too much effort for fish sticks. I just buy them frozen. 🙄

    1. User avatar wanda.blick75 says:

      4 stars
I totally get that! Sometimes convenience wins. But making them fresh is so satisfying! 😋

  37. User avatar keven.champlin1 says:

    3 stars
These taste like fish sticks from a box… except fresher. I’m surprised how easy it was. Will make again.

  38. User avatar darrin.breitenberg says:

    1 star
Fish yuck! I’d rather eat chicken fingers. No offense. 😂

  39. 2 stars
Fish fingers are overrated. Like why not just pan-sear fish? The breading is extra work and mine got soggy.

    1. User avatar bok.kautzer1976 says:

      4 stars
Totally get it—breading *is* extra work. But pan-searing can be great too if you want less hassle. If your fish fingers got soggy, it might be the oil not hot enough or not draining them well between batches.

    2. User avatar drew.pfannerstill55 says:

      2 stars
Nah I disagree 😅 fish fingers are fire. Just freeze ’em or do a double coat, and don’t crowd the pan—soggy usually means they steam instead of crisp. I’ve tried pan-sear once and it was dry.

  40. User avatar sharla.bode says:

    4 stars
Pretty good, but my coating fell off a little. I think my oil wasn’t hot enough. Next time I’ll fry hotter and use drier fish.

  41. User avatar rene.kunze1976 says:

    5 stars
Couldn’t find cod, used haddock and it still worked. The coating held up really well. Will make again, for sure.

  42. User avatar britt.collins says:

    3 stars
Followed the steps exactly, but mine were a little soggy. I think I didn’t heat the oil enough before frying—next time I’ll be more patient.

  43. User avatar collin.mante says:

    5 stars
Loved these with tartar sauce. Also the lemon zest smell while frying… wow. Will make again for sure.

    1. User avatar elden.wilkinson65 says:

      5 stars
So glad you liked them! The lemon zest smell is seriously the best part 😄 Tartars sauce is a perfect match.

  44. User avatar tissues_with_issues says:

    3 stars
It’s good! But I think something is missing, maybe some garlic?

  45. 5 stars
These came out super crispy—like actually restaurant level. I added a squeeze of lemon when serving and it really popped.

  46. User avatar milo.hintz14 says:

    4 stars
I wasn’t sure about using lemon zest, but it added a nice flavor! Will make again!

  47. User avatar nell.luettgen says:

    4 stars
The instructions are simple, but 2–3 minutes per side felt short for my pan. I had to cook longer to get that golden color.

  48. User avatar Prostetnic Vogon Jeltz says:

    2 stars
Hmm, mine didn’t come out crispy at all. Maybe I used too much oil? Not happy with this.

  49. User avatar Slartibartfast says:

    4 stars
Not bad! Mine were a little greasy though, maybe I didn’t drain long enough. Also, my coating kept falling off until I pressed the breadcrumbs firmly—lesson learned.

    1. User avatar france.bergstrom says:

      5 stars
Good catch! I always let them drain a few minutes (and keep the oil at a steady medium), otherwise they get greasy fast. Pressing the crumbs definitely helps too—nice save.

    2. User avatar tasia.beahan says:

      3 stars
Greasy here too once 😅 I think my pan was too hot and the coating just slid off. Next time I’ll try longer draining and press the breadcrumbs like you said. Also, I used regular breadcrumbs not panko—maybe that’s why.

  50. User avatar ira.morissette42 says:

    3 stars
I’m skeptical about frying time—2-3 minutes each side feels fast for fish. Mine were okay though, just needed a tiny extra minute.

  51. 5 stars
    So good. No notes.

    1. User avatar calandra.graham1 says:

      5 stars
Right?? These came out super crispy for me. I did add a pinch of paprika to the breadcrumbs and it was even better.

  52. 4 stars
Wow, super easy. I mixed the lemon zest into the crumbs like it says and it smells amazing. Even my picky partner ate them all.

  53. User avatar ninfa.heathcote59 says:

    5 stars
Kids devoured these. The lemon zest made them taste restaurant-y. Next time I’ll cut the strips thinner so they cook evenly without fuss.

  54. 4 stars
Pretty good instructions. I used frozen cod and just dried it a bit first. They browned nicely, but next time I’ll fry slightly longer for a thicker crust.

  55. User avatar brittney.hirthe says:

    3 stars
I didn’t have panko so I used regular breadcrumbs. Texture was flatter, but the flavor was solid. Would recommend for people who like lemony fish.

  56. 5 stars
These fish fingers are amazing! Super crispy and tasty! My kids loved them!

    1. User avatar terminatorXYZ says:

      5 stars
I totally agree! These fish fingers are a game changer! Simple but so good! My kids can’t get enough!

    2. User avatar karren.orn says:

      3 stars
They look good, but how do they stay crispy after frying? I always mess that part up.

  57. User avatar jamey.ondricka1997 says:

    3 stars
What if I use salmon instead? Anyone tried that?

  58. User avatar america.hettinger98 says:

    2 stars
Mine weren’t as crispy as expected. I think I crowded the pan, because the oil temperature dropped. Still tasty.

  59. User avatar Leto II Atreides says:

    3 stars
I followed it exactly and it was kinda oily. I drained on paper towel but maybe I should use less oil or bake instead of fry.

  60. User avatar alex.bergnaum44 says:

    3 stars
Not gonna lie, my breadcrumb mix was kinda dry so it didn’t stick great at first. Once I added more egg, it improved a lot.

    1. User avatar myron.wisozk says:

      3 stars
Huh, I’ve never had it not stick—maybe you didn’t use enough egg or your panko’s too fine? Also I think 2 cm is kinda thick; mine are like 1 cm and cook way faster. Still, good save adding egg.

    2. User avatar Eddie the Computer says:

      5 stars
Yeah that makes sense—breadcrumbs can be dry depending on the brand. Adding more egg (or a splash of water/more lemon zest) to get better adhesion is key. Glad it worked out!
