French Mushroom Tart

April 23, 2026

A savory and delicious French Mushroom Tart perfect for a light lunch or appetizer.

French mushroom tart is a savory pastry that highlights the earthy richness of mushrooms combined with a crisp, buttery crust. Elegant yet comforting, it is a dish that reflects classic French cooking, where simple ingredients are transformed into something deeply flavorful and refined.

The base of the tart is typically a homemade pie crust or puff pastry that bakes into a golden, flaky shell. This crust provides a delicate contrast to the soft, savory filling. The pastry is often pre-baked to ensure it remains crisp even after the filling is added.

The filling centers around mushrooms, which are sautéed until tender and golden to develop their natural umami flavor. Varieties such as button, cremini, or wild mushrooms can be used, often combined for greater depth. Garlic, shallots, and butter are commonly added during cooking to enhance aroma and richness, while herbs like thyme or parsley bring freshness and balance.

A creamy element is usually incorporated to bind the filling, such as eggs mixed with cream or crème fraîche. This creates a smooth, custard-like texture once baked, allowing the mushrooms to remain the star while adding a luxurious mouthfeel. Cheese, such as Gruyère or Parmesan, is sometimes included for extra depth and savory complexity.

Once assembled, the tart is baked until the filling is set and the top is lightly golden. It can be served warm or at room temperature, making it versatile for different occasions. It works well as an appetizer, light lunch, or part of a larger spread.

French mushroom tart is appreciated for its balance of simplicity and elegance. The combination of crisp pastry, earthy mushrooms, and creamy filling creates a dish that is both comforting and sophisticated, showcasing the timeless appeal of French cuisine.

This was okay, but it felt like it was missing something. Maybe some bacon next time?

I don’t really like mushrooms, but my husband loved it! I guess it’s good for mushroom lovers.

Really easy to make but puff pastry took forever to cook! What’s the deal with that?

  5. User avatar debi.vandervort9 says:

Pretty good but I don’t think gruyere cheese is neccassery. Cheddar would be fine!

    1. User avatar mathWizard says:

      3 stars
But gruyere is what makes it French, right? If you change it to cheddar, it won’t be the same!

    2. User avatar Humma Kavula says:

I totally agree! Cheddar would give it a nice kick. Gruyere is kinda overrated in my opinion.

Made this tonight—so crispy on the outside and the mushroom-garlic combo is legit. I used half Gruyère and half emmental and it still came out great.

    1. User avatar carylon.reynolds41 says:

      5 stars
Love hearing that! Half Gruyère/half emmental is a great swap—both melt nicely, and the flavor is still very “French.” 😋

Absolutely delicious! Made this for dinner and everyone loved it. Will make again!

I don’t know, mushrooms aren’t my thing. Looks fancy but I think it’s too complicated.

  13. 4 stars
Gruyère is the move. I used half gruyère/half mozzarella because that’s what I had and it was still very tasty—just less “French” tasting, lol.

5 stars!!! easy and fancy. gonna make again.

  15. User avatar marilyn.krajcik says:

French food is overrated. This was just a fancy pizza to me, not impressed.

  16. User avatar rosaura.hammes47 says:

    3 stars
Meh. The taste was okay, but I wanted more cheese pull and more seasoning. Also my puff pastry puffed less than expected (maybe I didn’t thaw it enough?). Still edible, just not wow.

  17. User avatar valentine.reichert1 says:

I love mushrooms, so I’m biased, but this recipe nailed it. The thyme makes it smell incredible while baking. I added a pinch of smoked paprika and it turned out even better.

    1. User avatar amiee.pfannerstill81 says:

      5 stars
Totally agree—mushrooms + thyme is such a good combo. I tried smoked paprika once with mushrooms and it really does bump the flavor up. Adding that to this tart sounds delicious!

Took too long to cook, pastry was a bit soggy but it tasted somewhat good.

  19. User avatar lashonda.okon2019 says:

Honestly I was skeptical about puff pastry + mushrooms, but the garlic and thyme combo is great. Would serve again, especially if you want something fancy without too much effort.

Made this for dinner and it was gone fast! The pastry got perfectly golden and the mushrooms were super flavorful. I added a pinch of red pepper flakes and it kicked it up a notch.

  21. User avatar lucrecia.gusikowski87 says:

    4 stars
Pretty good, but mine got a little soggy on the bottom. I think my mushrooms released too much water—next time I’ll cook them longer until they look drier. Flavor is still great though, especially with the garlic.

  22. User avatar ashely.walker says:

    5 stars
So easy to make! I used cheddar instead of gruyere because that’s all I had, and it was still yum!

  23. User avatar Android 19 says:

    5 stars
This came out so golden and crispy on the edges—exactly the vibe I wanted. I used cremini mushrooms and it still worked great. Gruyère makes it feel fancy without much effort.

  24. 3 stars
This is good but… 400°F for 25-30 minutes was too short for my oven. The pastry was kinda pale at the end. I had to bake like 10 more minutes. Don’t trust oven guesses, I guess.

  25. 3 stars
This was okay… not gonna lie. My pastry puffed, but the center got a little soggy because my mushrooms released a lot of water. Maybe I should’ve cooked them longer.

  26. 4 stars
Super easy and looks fancy. I used cremini mushrooms and it still turned out great. Next time I might cook the mushrooms a touch longer so they’re more caramelized.

  27. User avatar tod.pagac67 says:

    3 stars
Followed the recipe exactly but mine came out a little soggy in the middle. Maybe I didn’t sauté long enough? Otherwise flavor was solid.

  28. User avatar cortney.jakubowski says:

    Mushrooms are gross. pass!

  29. User avatar w00d_ch0p says:

I was skeptical about the mushrooms, but this turned out surprisingly great. The cheese complements it well!

  30. 3 stars
It was ok, but I think I overcooked it a bit. Next time I’ll watch it more closely.

  31. 5 stars
The thyme amount felt small to me, so I doubled it. Now it tastes like a woodland restaurant (in a good way).

  32. User avatar Laila Trantow says:

    1 star
Looks good but… 400°F seems too hot for pastry in my experience. Also, I don’t have gruyère so I used cheddar—still kinda worked, but I wouldn’t call it French anymore. Maybe I’m doing it wrong lol.

  33. User avatar Jarvan IV says:

    3 stars
I followed it mostly, but I think 400°F is a bit too hot for my oven. Mine browned fast and the middle wasn’t as puffy. Tastes good regardless!

  34. User avatar judi.schmeler8 says:

    2 stars
I followed the steps and my pastry didn’t puff like the picture at all. I might’ve thawed the pastry too long or used too many mushrooms? Either way it was still tasty, just kinda flat.

    1. User avatar long.fritsch1993 says:

      5 stars
Ah, bummer! Puff pastry usually only “puffs” if the dough is really cold going into the oven. If it thawed too long (or got warm while you prepped), it can bake up flat. Also, mushrooms can release a ton of water—too much moisture in the filling can weigh it down. Next time, sauté until the mushrooms are nicely browned and any liquid cooks off, then let the mixture cool a bit before piling it on.

  35. User avatar lonnie.hackett71 says:

Made this for brunch and it was a hit. The mushrooms caramelized nicely and the puff pastry came out perfectly golden. I added a tiny splash of balsamic at the end—highly recommend.

  36. User avatar thad.strosin2026 says:

    5 stars
This was so comforting! The mushrooms caramelized perfectly and the puff pastry came out super golden. I had to use what I had (no fresh thyme), but dried worked fine. Will definitely make again for brunch.

  37. User avatar yasmine.renner says:

    5 stars
Made this for dinner last night and wow—so crispy on the outside and rich from the gruyere. I used cremini mushrooms and it browned perfectly. Will definitely repeat.

  38. User avatar charlie.heaney1976 says:

    2 stars
I tried it, but 400°F seems too hot for puff pastry—mine browned before the center set. Also the garlic taste was a bit overpowering for me. Still edible, just not wow.

  39. User avatar Mr. Carlos Lynch says:

    4 stars
I’m not usually a mushroom person, but this tart smelled amazing while baking. The thyme makes it taste “fancy,” like from a bakery. Would absolutely do again.

  40. User avatar Meriadoc Brandybuck says:

Gruyere is expensive where I live, so I used cheddar. Not the same vibe, but still pretty good. Also I forgot to leave the border at first 😅
