Asparagus Tart

March 24, 2026

Asparagus Tart is a light, elegant dish that combines crisp pastry with fresh, seasonal flavors. Perfect for spring and early summer, this recipe highlights tender asparagus paired with a creamy filling, creating a balanced and visually appealing meal suitable for brunch, lunch, or a light dinner.

The foundation of the tart is a buttery, flaky crust that provides a satisfying contrast to the soft filling. Whether using homemade pastry or a ready-made option, the crust plays an important role in holding the ingredients together while adding a delicate texture. Once baked, it becomes golden and crisp, making every bite more enjoyable.

Asparagus is the star of this dish, offering a fresh, slightly earthy flavor. Lightly cooked before baking, it retains its vibrant green color and tender bite. Arranged neatly across the tart, it not only enhances the taste but also gives the dish a beautiful, refined presentation.

The filling is typically made with a mixture of eggs, cream, and cheese, creating a rich yet smooth base. Cheeses like goat cheese, feta, or gruyere work especially well, adding depth and a subtle tang that complements the asparagus. A touch of seasoning, such as salt, pepper, and herbs, brings everything together without overpowering the natural flavors.

One of the best things about Asparagus Tart is its versatility. It can be served warm or at room temperature, making it ideal for gatherings or meal prep. You can also customize it by adding ingredients like cherry tomatoes, caramelized onions, or fresh herbs for extra flavor and variety.

Preparation is simple and approachable. After pre-baking the crust, the filling is poured in and topped with asparagus before baking until set. The result is a beautifully structured tart with a creamy center and a crisp base.

Asparagus Tart is a wonderful way to celebrate fresh ingredients in a simple yet refined way. It’s a dish that feels both comforting and sophisticated, making it a great addition to any table, whether for everyday meals or special occasions.

I tried this and didn’t really like it that much. The puff pastry was too soggy for me, maybe I cooked it wrong?

Good but next time I’ll add some tomato slices too! Might make it even better! 👌

Good, but not great. I think it needs more flavor or something.

I think maybe adding some garlic or herbs could really amp up the flavor! Just a thought!

Flavor? What flavor? I thought it was fine.

Where’s the garlic in this recipe? Asparagus needs more flavor, just cheese isn’t enough.

Asparagus tart?? Sounds fancy but honestly it was easy. I used frozen puff pastry and it worked fine. Next time I’ll add garlic or lemon zest because it tastes like it’s missing a tiny pop.

Too much cheese for my taste. I guess it could be good if you like a lot of dairy, but not my thing.

Tried it, but the asparagus was too crunchy for my taste. Maybe I overcooked it? Idk.

I had the same issue! Maybe try blanching the asparagus first? It helps with the crunchiness!

Made this last night—so good! The puff pastry came out super crisp and the ricotta/Parmesan combo is creamy but not heavy. I did roast the asparagus for 2 minutes first and it leveled up the flavor. Will definitely make again.

This tart was a hit at my dinner party! I used feta instead of ricotta because that’s what I had. Still tasted amazing!

Did not like it. Asparagus and cheese? No thanks. I prefer meat on my tarts!

  15. User avatar Markus Heathcote says:

It was alright, but the puff pastry got soggy too quickly. Maybe I did something wrong?

    1. User avatar tim.fahey says:

      4 stars
Maybe you cooked it too long? I’ve never had that issue with the pastry. It should be crispy for sure!

    2. User avatar margarito.schmitt says:

      5 stars
I think the pastry needs to be super cold before baking. Try chilling it next time! Good luck!

Tart? Is this a dessert? Confused.

1 bunch asparagus?? That depends… mine were huge and took way longer than 30 minutes. I think the cook time needs adjusting for thickness. Still, I got compliments so I can’t complain too much.

I’m not sure about the baking time. Mine burned a bit. Gotta watch closely next time!

I’m not usually a fan of tarts, but this one surprised me. The balance of salt/pepper and Parmesan is on point. Only thing: I wish the instructions had said how thick to spread the cheese so it doesn’t run out.

Totally get that—tarts can be hit or miss. I’ve made this and agree the salt/pepper + Parmesan combo is the magic. For the “cheese running out” issue, I usually spread it pretty evenly but not too close to the edges (like a thin, even layer, maybe ~1/4 inch). I also leave a slightly wider border than the recipe says just in case.

  20. User avatar King Cold says:

    3 stars
I tried it and the cheese mixture oozed out a bit. My border wasn’t wide enough I guess. Also my pastry puffed a little unevenly. Tasted great though, just messy.

Not gonna lie, it was kinda bland for me. I followed the recipe exactly and didn’t get much seasoning impact, so I had to add more pepper and extra salt at the end. Still edible, just needs a little boost.

  28. 4 stars
Pretty tasty, but I think 25-30 minutes might be a little short depending on your oven. Mine got golden around 35. Still, the asparagus stayed nice and the cheese layer had great flavor.
