A delicious and elegant asparagus tart perfect for brunch or as an appetizer.

Ingredients
  

  • 1 sheet puff pastry thawed if frozen
  • 1 bunch asparagus trimmed
  • 1 cup ricotta cheese fresh
  • 1/2 cup Parmesan cheese grated
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Roll out the puff pastry sheet onto a baking tray lined with parchment paper.
  • In a bowl, mix ricotta cheese with Parmesan cheese, olive oil, salt, and pepper.
  • Spread the cheese mixture over the puff pastry, leaving a border around the edges.
  • Arrange the asparagus on top of the cheese mixture in a single layer.
  • Bake in the preheated oven for 25-30 minutes or until the pastry is golden and crisp.
  • Remove from oven and let cool slightly before serving.
