Ingredients
  

  • 1 1/2 cup all-purpose flour sifted
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg ground
  • 1/2 cup milk room temperature
  • 1/3 cup vegetable oil
  • 1 egg large, beaten
  • 1 tsp vanilla extract
  • 1/2 cup pecans or walnuts optional, chopped

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with muffin cups.
  • In a large bowl, sift together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
  • In another bowl, mix together the milk, vegetable oil, beaten egg, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir just until combined. Do not overmix.
  • If using, fold in the chopped pecans or walnuts.
  • Fill the muffin cups about 2/3 full with the batter.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

      Ugh, sorry—that’s frustrating. I’ve learned the hard way that even “greasing” isn’t enough sometimes. I always line with paper liners (or grease + dust lightly with flour) and let them cool 5–10 min before moving. Also make sure you’re not overbaking or the crust grips the pan.

      Mine did not stick, so idk. But nutmeg is easy to miss if the batch is small—1/4 tsp for 12 muffins is pretty subtle. Maybe you accidentally skipped it or your nutmeg bottle is old/weak? Also, did you measure oil right? I’ve used butter once and it was a mess lol.
