  • 250 grams chicken breast boneless, cut into cubes
  • 100 grams yogurt plain
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 2 tablespoons lemon juice fresh
  • to taste salt
  • as needed oil for grilling

Instructions
 

  • In a large mixing bowl, combine yogurt, ginger-garlic paste, garam masala, cumin powder, coriander powder, turmeric powder, chili powder, lemon juice, and salt.
  • Add the chicken cubes to the marinade, ensuring they are well-coated. Marinate for at least 1 hour, preferably overnight in the refrigerator.
  • Preheat a grill or oven to medium-high heat. Lightly oil the grates or baking sheet.
  • Thread the marinated chicken cubes onto skewers, leaving a little space between each piece.
  • Grill the chicken skewers for about 10-12 minutes, turning occasionally, until cooked through and slightly charred on the edges.
  • Remove from grill and let rest for a couple of minutes before serving.
  • Serve hot with lemon wedges, onion rings, and naan or rice.

      Yeah I’m with you—10-12 min depends a lot on cube size and oven/grill strength. I always go by internal temp too (165°F/74°C). Otherwise you risk dry chicken.

      Hmm I don’t know. Garam masala + chili powder alone usually tastes kinda flat to me. Also 10-12 min on medium-high… could be undercooked depending on skewer size? I’d add extra cumin/garlic maybe. But hey, if it works for you!

    Why yogurt + lemon? I think it curdled on me a little, not super pleasant texture. Flavor was okay but the mouthfeel bothered me.

      Yogurt + lemon can curdle, yeah. Next time maybe just use yogurt and skip lemon, or use lime? Lemon is acidic and it kinda separates the protein. If yours tasted ā€œokayā€ then it wasn’t ruined, just the mouthfeel—annoying though.

      I get what you mean—yogurt can go a little grainy if the chicken gets too much direct heat or the marinade sits too long. I’ve found using full-fat yogurt + not skipping the ā€œrestā€ helps the texture a lot. Also, try reducing the lemon juice a bit and add it closer to grilling.

      Totally get that—250g chicken can feel a bit skimpy if you’re craving lots of saucy bits. If you doubled the marinade too, it might help to either increase chicken or make sure you’re using enough yogurt/marinade per surface area. Smoked paprika sounds awesome though—still fits that ā€œtikka but with a twistā€ vibe!
