Ingredients
  

  • 4 tilapia fillets
  • 1 Lemon juiced
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/4 cup red onion diced
  • 1/4 cup Kalamata olives pitted and halved
  • 2 tbsp parsley chopped, fresh
  • 1 tbsp dill chopped, fresh
  • 1 tbsp red wine vinegar

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  • Place the tilapia fillets in a baking dish and pour the marinade over them. Make sure the fillets are evenly coated. Let them marinate for at least 10 minutes.
  • While the tilapia is marinating, prepare the Mediterranean salsa. In a medium bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, chopped parsley, chopped dill, and red wine vinegar. Mix well to combine.
  • Once the tilapia has marinated, place the baking dish in the preheated oven and bake for about 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.
