Ritzy Cookies with Peanut Butter Filling are the ultimate treat for those who crave a perfect balance of buttery sweetness and savory peanut butter. These cookies are a fun and indulgent twist on traditional sandwich cookies, with a rich, crispy cookie base and a creamy, smooth peanut butter center. The combination of flavors and textures makes them irresistible, whether you’re enjoying them as a snack or serving them at a party or gathering.
The magic of Ritzy Cookies lies in their simplicity. The outer cookies are made from a buttery dough that’s rich and slightly crisp, giving them a satisfying texture. The flavor is subtly sweet and pairs perfectly with the creamy peanut butter filling that’s sandwiched between two cookies. The peanut butter adds a savory depth to the sweetness of the cookie, creating a flavor contrast that’s both indulgent and comforting.
Making Ritzy Cookies with Peanut Butter Filling is easy, and the result is a batch of cookies that are as delicious as they are visually appealing. The cookie dough is prepared with ingredients like butter, sugar, and a hint of vanilla, which creates a rich, flavorful base. The peanut butter filling is simple to make as well, with creamy peanut butter, powdered sugar, and a touch of vanilla to make it smooth and spreadable.
The cookies can be shaped into round discs and baked until they are golden brown, allowing the texture to remain crisp. Once they’ve cooled, a generous spoonful of the peanut butter filling is added between two cookies, creating a sandwich of sweet and savory goodness.
These Ritzy Cookies with Peanut Butter Filling are highly customizable. You can add chocolate chips to the cookie dough or drizzle melted chocolate over the finished cookies for an extra layer of sweetness. If you prefer a more decadent touch, sprinkle the cookies with sea salt to complement the rich peanut butter flavor.
Perfect for satisfying any sweet tooth, these cookies are a hit for cookie lovers and peanut butter enthusiasts alike. Whether served at a holiday party, packed in a lunchbox, or enjoyed with a glass of milk, Ritzy Cookies with Peanut Butter Filling will quickly become a favorite treat in your baking repertoire.

- Place the coated cookie onto wax paper.
- Let cool for about 30 to 45 minutes.
Could you use chocolate chips instead? I didn’t have candy melts and ended up with a thicker coating. Kinda worked, but not the same vibe.
1. Melt. 2. Sandwich. 3. Dip. 4. Wait. Super simple. Five stars.
These are dangerously easy. I did 30 seconds for the melts and stirred once—came out smooth. The PB + Ritz combo is weirdly perfect.
Honestly I’m with you—these are basically foolproof. I did the same short melt + one stir and they came out glossy smooth too. The PB + Ritz combo is such a “why does this work?” moment.
😐 Meh.
These are super easy to make and taste incredible! My kids love them!
Mine seized a bit in the microwave (oops—my candy melts were older). Still tasted fine, just looked kinda chunky.
Ahh that chunky look happens when the candy melts are a bit past their prime—still, good to hear it tasted fine! Next time try stirring every 15 seconds so it doesn’t seize.
Seized?? Mine would’ve turned into rock lol. I think microwave timing is everything—40 sec seems short/long depending on the wattage. Did you stir at all? Mine always turns out smooth with fresh melts.
These cookies are the bomb! Super easy to make and so yum 😋
I tried these and they turned out great too! Thanks for sharing! 😍
Not gonna lie, I made these once and everyone asked for the recipe. Super easy even when you’re not “baking” for real.
Are you suer this is correct? It just seems wrong to me.
I think it’s right! Ritz crackers and peanut butter are a classic combo. Give it a try!
No way! Ritz and candy melts? That sounds gross! How can that even work?
I don’t get why people use candy melts—why not just chocolate? Also, letting them cool 45 minutes feels kinda long for a snack.
