Yeah 350°F is a big deal. If the oil wasn’t actually holding temp, the flour can sort of “fall off” instead of crisping and setting. I’d use a thermometer and let it fully come back to temp between batches.
This happened to me when I tried to rush it too 😅. Also make sure you shake off any extra buttermilk and press the flour on a bit. Don’t leave it sitting—fry right after coating.
