- 2 tbsp olive oil

- 1 can crushed tomatoes 400 g
- 2 tsp dried oregano
- Salt and pepper to taste
- Basil leaves for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the eggplants into 1/2-inch thick rounds. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture. Rinse and pat dry.

I did 15 and it was fine for me, but I sliced the eggplant pretty thin (almost paper-thin). If yours were thicker, totally makes sense it needed longer.
