Baked Scallops with Endive

August 6, 2025

If you’re looking for a dish that feels both light and luxurious, baked scallops with endive is a perfect choice. It combines the delicate sweetness of scallops with the subtle bitterness of endive, creating a beautiful contrast in flavor and texture. This elegant yet simple meal is ideal for a cozy dinner or a small gathering when you want to serve something special without spending hours in the kitchen.

Scallops are naturally sweet and tender when cooked properly, and baking them helps preserve their texture while allowing them to gently soak up any seasonings or juices in the pan. A touch of butter, lemon, and garlic brings out their natural flavor without overpowering it. You can sprinkle a bit of breadcrumbs on top for a slight crunch and toasty finish.

The endive, on the other hand, is roasted or baked alongside the scallops until it softens and caramelizes. Its slightly bitter notes mellow out in the oven, becoming almost sweet and wonderfully complex. When cooked together, the scallops and endive complement each other in a way that feels balanced and fresh.

This dish is best served warm, straight from the oven, with a wedge of lemon on the side and perhaps a sprinkle of fresh herbs like parsley or chives for color and brightness. You can also add a drizzle of olive oil or a light white wine reduction if you’re feeling fancy.

Serve it with a simple green salad or a piece of crusty bread to soak up the juices. It’s an impressive meal that looks beautiful on the plate but requires very little effort to prepare. The combination of tender seafood and roasted vegetables makes this a go-to recipe when you want something clean, elegant, and satisfying.

Baked scallops with endive proves that sometimes the best meals are the ones with the fewest ingredients, allowing each flavor to shine through.

I was skeptical about mixing scallops with endive, but wow! It surprisingly worked. A bit too much lemon for my taste though.

What even is endive? I just used spinach… still came out good! Scallops are always a winner.

Endive is kinda bitter, so spinach was a good swap! Glad it turned out well, scallops are the best!

Yummy! But I used cheddar cheese instead of parmesan because that’s what we had 😂. Tasted great!

  5. 5 stars
Such a delicious recipe! The scallops were tender and the endives added a nice crunch. Will definitely make again!

Wow, this sounds awesome! Can’t wait to try it. Scallops and endives? Fancy!

Meh. Endive is bitter by nature and baked scallops couldn’t save it for me. The lemon helped, but I probably won’t repeat.

I burnt my scallops 😭. Followed the timer but maybe my oven is too hot. Will try again with less time!

More like ‘baked weirdos’! Didn’t like this at all, the flavors didn’t go together for me.

This was sooo good, but my wife said endives taste like weeds. I think they just need to be cooked better.

    1. 4 stars
I think endives are great when cooked right! My family loved them in this dish. Maybe your wife just isn’t a fan of the bitter taste?

Weeds?? That’s a bit extreme, lol. But I agree they can be hit or miss for some people. Just try cooking them with extra seasoning next time!

400°F is way too hot—mine started browning early, like at 10 minutes. I panicked and covered with foil. Still turned out, but I wouldn’t trust the timing.

Totally get that—400°F can brown fast, especially with a thicker bake dish or if your scallops are on the larger side. I usually check around the 12–15 minute mark and pull them as soon as they’re just opaque and the cheese is golden (not dark). Covering with foil was a good save—next time you could tent it earlier if you see browning, and you might also use a shallower pan for more even cooking.

I followed it pretty closely, but my endive was a little bitter after baking. Next time I’ll slice thinner or maybe salt it first. Still tasty though.

Super quick and light—almost like a gratin but not heavy. Next time I’ll add garlic or herbs because why not.

Totally agree—this is such a light-tasty combo. Adding garlic or herbs is a great idea. I might try a little thyme too for extra flavor!

The cheese on top is a game changer. Gotta have the parmesan! Yum!

Endive is underrated. The lemon helps cut through any bitterness, and parmesan gives it that savory crust. Great weeknight meal.

I’m skeptical about baking endive that long—won’t it get too soft and bitter again? Also I feel like 2 tbsp parmesan is kinda low for 250g scallops… but I guess the lemon balances it. Curious though.

    2. 5 stars
Totally agree—endive is such an underrated side/meal base. The lemon + parm combo is exactly what makes it work. I’m trying this for a quick dinner this week!

  18. 2 stars
Meh, it was okay. I usually prefer fried scallops. Sigh. Should’ve added breadcrumbs too. 2 stars.

Too fancy for my taste. I dont like endives so I just used some spinach. It turned out okay. 3 stars.

Spinach is a great substitute! I don’t mind endives, but if you like it that way, go for it! Cooking is all about what you like.

    2. User avatar brittani.williamson0 says:

      3 stars
I don’t know why you would use spinach instead of endives, they are totally different. Means it won’t taste the same! But if you liked it, that’s what matters.

I think 15-20 min is too broad. Mine needed closer to 25 and I got nervous. Maybe check earlier if your scallops are small.
