Stuffed Zucchini Boats are a delicious and healthy dish filled with a savory mixture of vegetables, cheese, and herbs, making it a perfect meal for any occasion.
Stuffed zucchini boats are one of those dishes that manage to be both light and filling at the same time. They take the mild, tender flavor of zucchini and turn it into the perfect edible vessel for all kinds of savory fillings. Whether you are looking for a low-carb dinner, a veggie-packed main course, or a fun new way to use up your summer zucchini, this dish delivers on flavor, texture, and presentation.
The appeal of stuffed zucchini boats starts with their versatility. The zucchini is sliced in half lengthwise and lightly scooped out to make room for the filling. From there, you can go in countless directions. A classic version might include ground meat, tomato sauce, herbs, and a sprinkle of cheese, but you can also keep it vegetarian with quinoa, lentils, or mushrooms. Mediterranean-inspired versions with olives, feta, and sun-dried tomatoes are another popular option. You can even make breakfast boats with scrambled eggs and veggies.
Because the zucchini holds everything together, these boats are perfect for meal prep. They store well, reheat easily, and can be made ahead for busy weeknights. Serve them on their own for a lighter meal, or pair them with rice, couscous, or a fresh salad to round out the plate. They also make a great side dish if you are grilling or cooking for a crowd.
Stuffed zucchini boats are a great way to make vegetables feel exciting. They are colorful, customizable, and fun to eat. Even picky eaters are often won over by the flavorful fillings and cheesy topping. Plus, they are naturally gluten-free and easy to adapt for various dietary needs.
Whether you are trying to use up extra zucchini from the garden or simply looking for a healthy and tasty dinner option, stuffed zucchini boats are a go-to recipe that checks all the boxes.

This was soooo good! My kids loved it. Will definitely make again!
Honestly, I’m not sure about zucchini boats. Seems weird. Do the kids really like it or are they just being nice? 🤔
That sounds amazing! I’m glad your kids liked it. Will try it out soon! 😊
Pretty good, but I think 1 tbsp olive oil feels a bit light. I added an extra splash and it seemed more flavorful. Still, the texture was great.
Healthy and filling! Perfect for my diet! 😄
This dish sounds amazing! Can’t wait to try it out. Thanks for sharing! 😊
Looks good, but is it really that filling? I mean, it’s just veggies. 🤔
These zucchini boats are amazing! I added some ground turkey for extra protein, and my family loved it. Definitely a keeper!
I love stuffed veggies, but I think 1 cup mozzarella for 4 zucchinis is a little light. Wish it was more gooey.
I made this for meal prep and it reheated fine. The tomatoes get juicy and it’s honestly a comfort food vibe.
Easy peasy! My kids helped scoop the zucchinis. They had fun! 😊
I forgot how long to cook them… they ended up soggy 🙁. But still tasted okay. Will try again.
Soggy zucchinis? No problem! Just reduce the cooking time next time. They are meant to be tender but not mushy! Good luck! 😊
Why you put them in for so long? You gotta keep an eye on them! But hey, at least they tasted okay!
These turned out way better than I expected—so cheesy and fresh. The garlic + basil combo is spot on.
Super easy to make! Will definitely make again.
Glad to hear that! They’re my fave too! 😍
Really? I found it kinda bland, maybe I overdid the zucchini? 🤷♂️
I tried this but it was kinda bland. Maybe more seasoning next time.
5 stars! I can’t stop eating these! Even my husband who hates veggies loved them.
Wow, these zucchini boats were a hit at my party. Everyone asked for the recipe!
This recipe was a hit! My kids loved it! 😍
Kinda skeptical about the flavor balance without any seasoning beyond salt/pepper. It was okay, but I felt like it needed more (like oregano or Italian seasoning).
Totally get that. I made these once and they were a little bland until I added oregano + a pinch of red pepper flakes. Then they tasted way more “Italian.”
This is a fantastic recipe! The flavor was amazing, and my family loved it.
Totally loved it! My kids ate their veggies for once! 😊
I dunno, zucchinis are kinda weird. My kids just won’t eat em no matter what. 🤷♂️
That’s awesome! Getting kids to eat veggies is like a miracle! 😄
Quick n easy recipe! Took me less than an hour to make! Perfect for a busy weeknight meal.
This recipe is so good! My family loved it. Will definitely make again!
Not enough flavor, maybe add some sause or spices?? Just felt bland.
These are ok but I think the real deal is just grilling them. Zucchini boats won’t replace the grill!
Yummmm!!! So cheesy!
Totally agree! Cheesy goodness at its best! 😋
375°F for only 25 minutes seems short—mine weren’t tender yet. Ended up roasting longer. Not a dealbreaker, just be ready to extend time.
Mine came out fine at 25 min, but i cut them thinner maybe? Idk. i think the temperature is ok, just depends on the zucchini water-ness. I’m glad it’s not a dealbreaker tho 😅
Totally agree—25 min has been too optimistic for me too. I usually need closer to 35–40 depending on how thick the zucchini are. Great tip to extend time.
A bit bland for my taste. I added some chili flakes and that helped a bit.
Yum! Just delicious, can’t wait to make them again.
I agree! They are so good! My family loved them too.
I made these, but mine turned out kinda soggy. What did I do wrong?
Super easy to make! Love how fresh the veggies tasted. Perfect for summer.
Absolutely! The flavors are refreshing, and it’s such a quick recipe. Perfect summer dish!
Yum! Super easy to make and packed with flavor. Didn’t add basil, tho. Still turned out great!
Not sure about the basil amount—mine tasted a little mild. Also I used “cherry” tomatoes but they were more like grape tomatoes; it still worked, just different.
I followed it pretty much, but mine turned out watery—maybe my tomatoes were too juicy. Still tasted great though, just not as thick.
Isn’t 375° too hot for zucchini? I was worried they’d get mushy. But they turned out ok.
