Sausage Gravy

March 27, 2025

Sausage gravy is a quintessential Southern comfort food, beloved for its rich, creamy texture and savory flavor. Often served over fluffy biscuits, this hearty dish is a breakfast favorite in many homes across the United States. The gravy itself is made from crumbled breakfast sausage cooked with a roux of flour and milk, creating a luscious sauce that’s both smooth and indulgent. Its warm, savory flavors make it the perfect start to a morning, though it’s also delicious as a brunch or even a dinner option.

The key to a great gravy lies in the quality of the sausage. The fat from the sausage is rendered and then combined with the flour to create a smooth, thickened gravy. As the mixture cooks, the flavors meld together, creating a savory sauce with just the right amount of seasoning. Black pepper is often the star of the seasoning mix, adding a gentle heat that balances the richness of the sausage and gravy. Some recipes may include a splash of milk or cream to make the gravy even more decadent.

This gravy pairs best with freshly baked biscuits, where the fluffy, tender bread soaks up the gravy’s creamy goodness, making for the perfect bite. The contrast of textures, with the crunchy edges of the biscuit and the smooth, savory gravy, is truly irresistible. In addition to biscuits, sausage gravy can also be served over potatoes, toast, or even grits, offering plenty of options for customization depending on personal taste.

This dish is not just a breakfast staple but also a family favorite that brings warmth and comfort to any meal. This gravy is often enjoyed as part of a larger spread of Southern dishes, such as scrambled eggs, fried potatoes, or crispy bacon, making it perfect for a filling and satisfying meal.

Wow, this sausage gravy is absolutely delicious! Tastes just like my grandma used to make!

  2. User avatar Falmer Warmonger says:

I don’t get why folks rave about this. It’s just greasy meat sauce. Not my thing.

  3. User avatar ivory.turner41 says:

Gravy? This is like soup. My grandma’s recipe is way better. Sorry, not impressed.

  4. User avatar leanne.kemmer1994 says:

I was skeptical at first, but this actually turned out pretty good. Just needed a little more seasoning for my taste.

    1. User avatar dane.schaden98 says:

      5 stars
Glad you gave it a shot! Sometimes a little tweak is all you need to make it perfect. What kind of seasoning did you add?

  5. 3 stars
Why do you use whole milk? I only had skim. Still tasted alright, but not as rich as I bet it would be.

    1. User avatar cordell.paucek says:

      4 stars
Whole milk just makes it creamier and tastier! Skim is okay, but you really miss out on that richness. Trust me, it’s worth the extra calories!

  6. User avatar alphonse.mcglynn62 says:

    4 stars
Pretty good, but mine was a little thick after cooling. Next time I’ll add a splash more milk to loosen it. Still tastes like the diner stuff.

    1. User avatar Vroomfondel says:

      5 stars
That makes sense—sausage gravy thickens as it cools. I usually add a little extra milk while reheating too, works every time. Glad it still tasted like diner gravy!

  7. User avatar mauricio.lueilwitz says:

    5 stars
Made this for brunch with my friends and they loved it! So indulgent, thanks for sharing!

    1. User avatar glenna.rempel1961 says:

So glad to hear that! It’s always nice when a recipe brings friends together. 😄

  8. User avatar vaughn.wolff says:

    4 stars
Not bad at all. I used whatever milk I had (2%), and it was still good, just a bit less rich. Salt/pepper could go heavier if you like it bolder.

  9. User avatar alva.lesch says:

    5 stars
This is the best sausage gravy recipe I’ve tried! It came out creamy and delicious. My family loved it!

    1. User avatar theodore.maggio10 says:

      3 stars
I tried this recipe but it didn’t turn out as creamy as I hoped. The sausage was good though!

    2. 5 stars
I totally agree! This sausage gravy is a game changer. My kids can’t get enough of it!

  10. User avatar ray.schiller2018 says:

    3 stars
Too much flour. My gravy ended up like paste… not cool.

  11. User avatar garland.armstrong says:

    2 stars
Sausage gravy? Nah, I prefer my gravy with a bit more flavor. Too simple for my liking.

  12. User avatar Twisted Fate says:

    2 stars
I used turkey sausage instead and it tasted weird. Not as good as I thought it would be based on the reviews.

  13. User avatar alexander.cartwright says:

    3 stars
Easy to make but kinda bland. Add some cayenne pepper and it’s a game changer!

  14. User avatar Gail Andrews says:

    3 stars
Not bad but mine got lumpy at first. Next time I’ll whisk the milk slower and make sure the flour paste is smooth.

    1. User avatar young.wunsch71 says:

      4 stars
Mine too, not gonna lie 😂 I thought I could just dump the milk in and “it’ll work out,” but nope. Next time I’m gonna pay attention to that paste step more.

    2. User avatar marilu.wisoky says:

      5 stars
Good tip! I’ve definitely had the same lumpy issue—whisking slower and making sure the flour paste is totally smooth makes a huge difference. This recipe seems pretty solid otherwise.

  15. User avatar lazaro.green says:

    4 stars
I don’t even like gravy, but this wasn’t half bad! Might try it with some eggs next time.

  16. User avatar Spider Soldier says:

    5 stars
Delicious but I added some garlic powder to spice it up a bit! Will make again.

    1. User avatar jeanne.cruickshank41 says:

      5 stars
Adding garlic powder sounds like a great idea! I’ll have to try that next time. Thanks for the tip!

  17. User avatar ariel.daugherty52 says:

    4 stars
I followed it pretty much exactly. Took a couple extra minutes for mine to thicken, but once it did… wow. Great over biscuits.

  18. User avatar darrin.prosacco says:

    4 stars
I thought I’d ruin it because I whisked too fast and got some lumps… but they cooked out. Still ended up pretty good.

    1. User avatar herlinda.moen96 says:

      5 stars
That’s awesome—lumps are scary but if they cook out, you’re in the clear 😄 Sausage gravy is super forgiving like that.

  19. User avatar carson.jacobson1976 says:

    2 stars
It was too salty for my liking, didn’t enjoy it as much.

    1. User avatar yun.sporer33 says:

      2 stars
Too salty? But isn’t sausage already salty? 🤔 Anyway, thanks for the feedback.

    2. User avatar teressa.lindgren1951 says:

      4 stars
Sorry to hear that! Maybe next time try using less salt or adding more flour to balance it out!

  20. User avatar jess.schiller says:

    3 stars
Never made gravy before, but this was easy enough. Mine turned out a bit lumpy tho, might have whisked wrong.

  21. 5 stars
Yummy! I used turkey sausage instead, still tasted great! 10/10 would recommend.

    1. User avatar matt.schmidt1973 says:

      4 stars
Turkey sausage? Really? I didn’t think it would work, but if you say so! Maybe I’ll try it next time.

  22. User avatar ShanksOnePiece says:

    4 stars
I used turkey sausage instead, turned out great! Never thought to substitute.

  23. User avatar dorene.gulgowski21 says:

    4 stars
Good base recipe. My gravy got a little too thick, so I loosened it with extra milk. Still tasted great.

  24. User avatar MAGA2024.Trumpster says:

    1 star
scoff… this ain’t real gravy. Try adding some spices, my mom’s recipe is better.

  25. User avatar sandy.reinger0 says:

    3 stars
I followed the recipe exactly but my gravy turned out too thick. What did I do wrong? 🤔

  26. User avatar marge.mraz1980 says:

    5 stars
My grandpa would approve 😄. The texture was spot on, and browning the sausage first makes a huge difference. Comfort food for sure.

    1. 5 stars
Totally agree! Browning the sausage first is the secret—those drippings make the whole gravy taste richer. 😄 I also try to keep whisking when I add the milk so it stays smooth.

  27. 3 stars
Not bad, but I think my brother can make better sausage gravy for sure.

  28. User avatar ginny.kuhlman says:

    2 stars
I followed it and it tasted kinda bland until I added extra pepper and salt. Also, my gravy got lumpy when I got lazy with whisking 😅

  29. User avatar fredrick.hermiston says:

    5 stars
This is awesome! My family loved it, perfect for breakfast.

  30. 3 stars
Honestly, what’s the deal with the flour?! Can’t we just use cornstarch? 🤷‍♂️

    1. User avatar cleopatra.brekke1981 says:

      5 stars
Using cornstarch might work, but it won’t give you the same texture as flour. Just trust the recipe, it’s classic for a reason! 🙌

    2. User avatar jeffrey.luettgen1958 says:

      3 stars
I don’t know, seems like flour does better? 🤔 Cornstarch can make it too gooey. But what do I know?

  31. User avatar shirley.trantow97 says:

    2 stars
I tried it and the sauce never really thickened for me. I kept cooking and it stayed thin, so I ended up adding more flour slurry.

  32. User avatar rich.landlord says:

    5 stars
This is the best sausage gravy I’ve ever made! So creamy and rich. Will definitely make it again!

    1. User avatar angelo.kautzer says:

      5 stars
I’m glad to hear you liked it! I also added some spices and it turned out amazing!

  33. User avatar francis.gleichner5 says:

    3 stars
I’m skeptical about just flour + milk. I added a tiny bit of butter and it helped the texture, so maybe that’s my preference.

  34. 5 stars
So easy to make! I didn’t have whole milk, used skim and still yummy!

  35. User avatar Dale Homenick says:

    2 stars
Wait… do you cook the flour with the sausage? I kinda skipped that step cuz I forgot 😅 but it still tasted kinda good. Next time I’ll follow directions!

  36. 2 stars
Not bad, but I think it needs more flavor. Maybe some garlic or something?

    1. User avatar brittany.waelchi1999 says:

      5 stars
I totally agree! Garlic would definitely kick it up a notch. 🤤

  37. User avatar tara.little94 says:

    4 stars
Soo good! Just what I needed for breakfast. The only thing I didn’t add was pepper, and it was still awesome!

    1. User avatar ahmed.kassulke38 says:

      3 stars
I dunno, I’ve tried other gravy recipes and they didn’t taste this good… maybe it’s just me but I think it needs pepper.

    2. User avatar elia.mayer1968 says:

      5 stars
Glad you liked it! It’s super versatile, even without pepper. I enjoy it with some hot sauce too!

  38. User avatar man.gerlach78 says:

    5 stars
This sausage gravy is to die for! I topped it on biscuits and my kids loved it. Definitely making again!

  39. User avatar clayton.luettgen81 says:

    4 stars
Just a tip: I added some garlic powder and cayenne for a kick. Really good!

  40. User avatar lynwood.king says:

    4 stars
Honestly the instructions are simple but it’s all in the patience. The roux step matters—don’t rush that 1-2 minutes.

  41. User avatar blossom.feest2024 says:

    1 star
Is it just me or is this not really a ‘gravy’? Kinda just looks like soup 🤷‍♂️

    1. User avatar wellRespected says:

      4 stars
Idk man, gravy or soup, ain’t it all just yummy? Who’s counting the texture? 😂

    2. User avatar hilton.gibson says:

      5 stars
I think it looks like a delicious gravy! Maybe you just need to cook it a bit longer to thicken it up? 😋

  42. User avatar weston.rodriguez says:

    5 stars
Made this for breakfast this morning—so comforting. The whisking step saved me from lumps, and it thickened up nicely. Flavor is perfect with black pepper. 10/10 over biscuits.

  43. User avatar Barry Manilow says:

    5 stars
Turned out silky and thick like diner gravy. I used a little extra pepper and it really popped. Definitely keeping this method.

    1. User avatar hershel.hettinger1996 says:

      5 stars
Yes!! That “diner gravy” texture is the goal 😄 The flour-drippings paste step makes such a difference. Extra pepper is definitely the move too.

  44. User avatar saul.reilly13 says:

    2 stars
I followed this recipe to the letter and it didn’t turn out right. My gravy was way too thin. What did I do wrong?

  45. User avatar domenic.stoltenberg says:

    5 stars
This is exactly how my grandma did it. The smell alone is worth it. 10/10 comfort food.

    1. User avatar birdie.nolan1993 says:

      4 stars
I tried something similar but my gravy got lumpy, so I guess I wasn’t whisking enough 😅 Still, love sausage gravy. Next time I’ll do 1-2 mins for the roux like you said.

    2. User avatar carmen.schuppe says:

      5 stars
Yes!! The flour-in-the-drippings step is the whole magic. My grandma too—same cozy smell the second the milk hits.

  46. User avatar Adeline Hirthe says:

    5 stars
This is basically what my grandma made, so I’m biased lol. The flour in the drippings is the key. Mine came out silky and clings to the fork.

    1. User avatar lakisha.welch says:

      5 stars
That’s exactly how I do it too—let the flour toast in the drippings and it turns out so silky. Clings to the fork is the whole goal 😄

  47. User avatar mariano.connelly41 says:

    3 stars
Not bad, but I needed more pepper and salt than “to taste.” Like, a lot more. Also biscuits were the real MVP.

  48. 3 stars
Um, ain’t sausages unhealthy? Why you adding so much gravy to biscuits?

  49. User avatar angeline.hirthe1987 says:

    5 stars
Five stars because it’s sausage gravy, how can you go wrong. lol

  50. User avatar bernardina.hamill73 says:

    4 stars
Is it just me or does everyone make gravy differently? Mine never looks like this!

  51. 2 stars
Ok but why does it say “to taste” salt and pepper like I’m supposed to guess? I ended up salting too much. Still tasty though.

    1. User avatar patrick.kassulke82 says:

      5 stars
Haha I get you 😅 “to taste” is basically chef-speak for “start small, adjust.” Next time try a pinch at first and keep tasting as it thickens.

  52. 3 stars
Kind of bland for me. I had to add extra pepper and a bit more salt at the end. Also, it thickened faster than expected, so keep an eye on it.

  53. User avatar Tom Bombadil says:

    4 stars
I followed the steps, but my gravy got a little lumpy anyway. Next time I’ll whisk more aggressively when adding the milk. Flavor is still great.

    1. User avatar ramona.bednar90 says:

      5 stars
That’s still a win—lumpy gravy happens even when you do everything right. Next time I’d let the flour-and-drippings paste cook a touch longer and keep the whisk going the whole time you pour the milk. Glad the flavor’s great though!

  54. User avatar burton.weber57 says:

    5 stars
Not gonna lie, I was skeptical about how much flour (2 tbsp) would thicken 2 cups of milk. Turns out it’s perfect—nice and silky.

  55. User avatar lee.oconnell17 says:

    1 star
Sausage gravy is always good but… why whole milk? I used low-fat and it was sad. Wouldn’t recommend.

  56. User avatar weston.deckow90 says:

    3 stars
I used turkey sausage instead of breakfast sausage and it tasted more “meh” than savory sausage gravy. Still edible, but definitely not the same vibe.

  57. User avatar mica.haley1957 says:

    5 stars
This is the best sausage gravy I’ve ever made! Super easy and delicious. Thanks!

  58. User avatar laree.hammes66 says:

    5 stars
Yummy! I could eat this all day. 😍 Makes my mornings so much better!

  59. User avatar alvin.lemke21 says:

    3 stars
Not sure about the flour amount… I had to cook it longer than 1-2 minutes to lose the raw taste. After that it was okay though.

    1. User avatar elizabeth.kovacek says:

      5 stars
Interesting—1–2 minutes might be a bit short depending on how hot your pan is and how much fat there is. If it still tastes raw, that’s usually the flour needing more time to cook out. Glad it turned out okay after that!

  60. 3 stars
Couldn’t get the thickness right. I might’ve added the milk too quickly. Still tasty, just more like sausage milk than gravy.

  61. 2 stars
Gravy sux. Just make eggs instead. Way healthier. 🤷‍♂️

    1. User avatar isaura.donnelly2001 says:

      5 stars
Gravy is a classic! Eggs are good too, but sometimes you just need that comfort food. 🤤

    2. User avatar lyle.bailey1952 says:

      4 stars
Nah, eggs can’t replace gravy. You gotta try it on biscuits! 🍽️

  62. User avatar sidney.abbott18 says:

    5 stars
I followed it pretty closely, whisked the milk slowly, and no lumps! Only thing is I might add a pinch more salt next time.

    1. 5 stars
Nice! That’s exactly how you get it smooth—slow whisking and keeping the heat steady. A pinch more salt could totally level it up next time.

  63. User avatar rufus.vonrueden says:

    5 stars
This came out so creamy and thick—exactly what I wanted for biscuits. I did use freshly ground pepper and it really woke everything up.

  64. User avatar Bowerick Wowbagger says:

    4 stars
Really solid recipe, especially the flour-in-drippings step. My only issue was a couple small lumps even though I whisked—next time I’ll whisk more aggressively.

  65. User avatar alysa.turner76 says:

    4 stars
I followed it pretty much exactly, but I think 0.5 lb of sausage was a little light for my skillet. Still tasty though—next time I’ll bump the sausage.

  66. User avatar anderson.fisher says:

    5 stars
I forgot the milk and used almond milk instead and it turned out great! Who knew?

  67. 3 stars
Sausage gravy? More like sausage slop! 😒 But my kids liked it, so 3 stars.

  68. User avatar neva.renner1981 says:

    5 stars
I didn’t think it would be so easy. The gravy thickened nicely after a few minutes. The texture was perfect for toast.

    1. User avatar ambrose.leffler2018 says:

      5 stars
Yes! That’s exactly how it should go—roux + milk, then it magically thickens. Glad it worked for your toast 😄

  69. User avatar fritz.windler2010 says:

    5 stars
This tastes like my childhood diner gravy. I used store-bought sausage and ground pepper, and wow.

    1. User avatar joe_banana says:

      5 stars
That’s awesome — diner gravy vibes are the best. 👍 Store-bought sausage is definitely the move when you want it quick, too.

  70. User avatar Mrs. Celine Kunde says:

    2 stars
Two words: too salty 😬. I know I should’ve measured, but I just went with my usual. Still works, just go lighter on salt.

    1. User avatar buck.schumm35 says:

      5 stars
Yeah, this one can get salty fast—sausage seasoning varies a lot. Next time I’d only add pepper and then salt at the very end.

    2. 4 stars
Huh I always make mine without any extra salt, just the sausage. Still tastes great. Probably why mine never comes out salty.

  71. User avatar dana.gleason1967 says:

    5 stars
Made this for breakfast and it came out creamy and thick—exactly what I wanted. Used peppery breakfast sausage and it really bumps up the flavor.

  72. User avatar Ilban Richese says:

    3 stars
Honestly I don’t love how it says ‘to taste’ for salt and pepper—like I’m supposed to guess every time. I under-seasoned the first batch, then fixed it. Better instructions would help.

  73. User avatar pedro.hilpert1978 says:

    4 stars
I love sausage gravy, but I’m skeptical about only 2 tbsp flour for 2 cups milk. That’s pretty light. I added extra flour and it came out way better.

  74. User avatar Gangplank says:

    3 stars
I don’t know about whisking constantly—seems excessive. I stirred like normal and it still came together, so maybe it’s not that serious lol.

  75. User avatar aurelio.jakubowski13 says:

    3 stars
Not bad but it needs more salt than “to taste.” I’m used to gravy being saltier. Also, black pepper could’ve been stronger for my liking.

  76. User avatar jessie.gaylord29 says:

    5 stars
This turned out super creamy and flavorful. I used a spicy breakfast sausage and the pepper flavor really popped—topped my biscuits and it was gone fast.

  77. User avatar meghan.herman94 says:

    3 stars
The step order is good, but I wonder if 1-2 minutes for the flour is enough. Mine tasted a tiny bit ‘floury’ until I cooked it a bit longer. Not terrible though.

  78. User avatar lamar.gutkowski says:

    4 stars
Pretty good, but 2 tablespoons flour felt a touch light for my sausage. I added another spoon and it was perfect.

    1. User avatar Slartibartfast says:

      4 stars
I was wondering about that—2 tbsp always felt kinda minimal. I usually eyeball it too, but your add-a-spoon method sounds easy.

    2. 5 stars
Good catch! Sausage can vary a lot in how much fat it leaves behind, so tweaking the flour makes sense. Glad it hit the right thickness for you.

  79. 3 stars
I tried to be fancy with freshly ground pepper and it was good, but the gravy got kinda thick too fast. Probably my heat was higher than medium. Either way, it tasted great.

    1. User avatar liberal.hero says:

      4 stars
Happens to me too 😅 I think my heat be too high sometimes. Next time, I’d add a splash more milk if it gets thick too quick. Tastes is what counts!

    2. 5 stars
Glad you liked the pepper! If it thickened too fast, I’d try lowering the heat and whisking in the milk a bit slower—also make sure you cook the flour just 1-2 minutes so it doesn’t get too “roux-y.”

  80. User avatar theresia.hammes1997 says:

    5 stars
I always thought sausage gravy was harder. This was easy and the smell while it’s cooking is unreal. Served it with toast and it disappeared fast.

Yes!! The smell when the milk hits the drippings is next level. Glad it worked out for you—toast is such a perfect move.

I tried it and it turned out way too thick, like paste. I think I cooked the flour too long. Still, it tastes good—just next time I’ll loosen it with a splash more milk.

Ugh, yeah—if it got paste-thick, that usually means the flour cooked a bit too hard or not enough liquid yet. Next time try adding the milk slower and whisking the whole time. Also, when it thickens, it’ll keep thickening a touch as it sits, so you can stop a hair earlier.

I used low-fat milk and it was thinner than I wanted. Probably needs whole milk like the recipe says—lesson learned.

Sausage gravy is hard to mess up. This recipe nailed the ratio for me, and the texture was spot on. Will make again.

Totally agree—sausage gravy feels forgiving when the flour-to-milk ratio is right. Glad the texture worked for you too!

Turned out creamy and super flavorful—exactly what I wanted for weekend biscuits. I whisked like crazy and avoided lumps. 10/10.
