If you’re looking to add something unique and slightly exotic to your dessert table, a Pomegranate Molasses Cake might be just what you need. This cake is deeply flavorful, beautifully moist, and surprisingly easy to make. The star ingredient – pomegranate molasses, brings a tangy-sweet richness that balances perfectly with warm spices and a soft, tender crumb.
Pomegranate molasses is a thick, dark syrup made by reducing pomegranate juice. It’s a staple in Middle Eastern cuisine, often used in savory dishes, but here it transforms an everyday cake into something special. The molasses lends a complex, fruity acidity that’s unlike anything you’d get from typical sugar or citrus-based cakes.
The batter starts like a classic spiced cake, using ingredients like cinnamon, ginger, and cardamom. Brown sugar and yogurt add moisture and depth, while olive oil keeps the texture light but rich. A generous swirl of pomegranate molasses goes right into the batter, and more is brushed over the warm cake as a glossy glaze, intensifying the flavor and giving it a beautiful finish.
Once baked, the cake is incredibly fragrant, almost caramelized at the edges. It pairs wonderfully with a scoop of Greek yogurt or whipped cream, and a sprinkle of pomegranate seeds on top adds a pop of freshness and color. You could even dust it with powdered sugar or drizzle extra molasses over each slice.
This cake works well for the holidays, but it’s not limited to special occasions. It’s just as fitting for afternoon tea or as a thoughtful homemade gift. The taste is memorable and just a little unexpected, rich, spiced, tangy, and sweet, all in one bite.
Whether you’re already a fan of pomegranate molasses or trying it for the first time, this cake is a lovely introduction. It’s a simple bake with a sophisticated flavor profile that feels both comforting and adventurous.

I tried this recipe but mine turned out a bit dry. I followed all the steps, maybe I overcooked it? 😟
Delicious! Family loved it! Will make again for sure. Yummy! 😋
Made this for dessert and it vanished in minutes!
Pomegranate? Sounds fancy! I don’t have butter, can I use oil? Or is that a big no-no?
You can totally use oil instead of butter! It won’t be exactly the same, but it should still turn out okay. Just use a bit less than you would butter.
Oil? Is that really a good idea? I think butter’s there for a reason in cakes. But if you gotta, just make sure it’s not too greasy 🙂
Absolutely delicious! My family loved it.
Never heard of pomegranate molasses before but this cake introducted me to something new. It’s a winner!
Looks good, but who has time for baking these days? Maybe next time.
I totally get it! Life is so busy, but this cake sounds worth it. Maybe try a simpler recipe next time?
5 stars! Lovely texture, everyone was impressed. 😍
This cake is absolutely divine! The pomegranate molasses adds such a unique flavor. Thank you for sharing! 😊
I dunno, I think it sounds kinda weird. Pomegranate in cake? Really? 🤔
I totally agree! That pomegranate molasses gives it such a kick. My family loved it! ❤️
Can I use regular molasses instead? I bet it won’t taste as nice, but worth a try?
Do you really need the buttermilk? I used milk and it was fine.
This was too sweet for my taste. I think it needs less sugar.
Kinda weird idea cake, idk if I’ll try. Sounds like a fancy restaurant item. 😕
This cake is incredible! The pomegranate molasses gives it such a unique flavor. Definitely a 5-star recipe!
I totally agree! The pomegranate molasses really makes it special. I can’t believe I never tried it before. Thanks for sharing this recipe!
Pomegranate molasses? Isn’t that for salad dressings? I don’t see how it can make a cake taste good. Sounds weird to me.
I was skeptical about the pomegranate molasses, but it gave the cake a unique flavor. I loved it!
I got confused with the ingredients, thought I had to add more sugar. Guess I didn’t need it. Cake was okay.
Can someone explain pomegranate molasses? Sounds weird.
I made this for my friend’s birthday and everyone loved it! Even the picky eaters went back for seconds.
I tried this but it turned out too dry. Not sure why. Maybe I overbaked it?
Yum! Perfect for a party! 🎉
Totally agree! This cake is a showstopper! Can’t wait to make it for my next gathering! 🎂
Ugh, pomegranates are so overrated. I swapped it for chocolate and it was way better. 🌟
Not great. Too complicated for me.
I get it, some recipes are just too much work! Maybe try something simpler next time, like a chocolate cake?
This was a disaster! The batter overflowed in the oven. I should have listened to the instructions better.
Isn’t pomegranate molasses super sweet? Kinda weird for a cake, right?
The butter should be melted, right? It didn’t work for me with softened. -_-
Cake was good but my oven is kooky. Took longer to bake.
