I’m not sure about the measurements—1 cup carrots + 1 cup celery seemed like a lot vs the broth. I ended up adding more broth and it fixed it.

Maybe your pot runs hot, but also gnocchi cooks fast—so if you boil hard, it can hide crunchy veggies. I’d cover the pot next time and cook a little longer, like 10-15 min.
