Ingredients
  

  • 1 cup pumpkin seeds raw and shelled
  • 2 tablespoons olive oil extra virgin
  • 1 clove garlic minced
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon water as needed
  • to taste salt
  • to taste pepper freshly ground

Instructions
 

  • In a food processor, combine the pumpkin seeds, olive oil, minced garlic, and lemon juice.
  • Blend until smooth, scraping down the sides as needed.
  • Add water gradually until the desired consistency is reached.
  • Season with salt and pepper to taste.
  • Serve immediately as a spread or store in the refrigerator for up to a week.
